2 cups water
1 cup lentils
2 cubes chicken bouillon
1 teaspoon extra virgin olive oil
1 large onion, chopped
1 cup walnuts
salt and pepper to taste

Steps:

  • Place water, lentils, and bouillon cubes in a pot. Cover pot and cook about 30 minutes or until tender. Drain well.
  • Heat oil in skillet, saute onion until it becomes translucent.
  • In an electric food processor, grind lentils, onions and walnuts until your desired consistency for the pate is reached. Season to taste with salt and pepper. Chill before serving.

1-2 tablespoons Bartenura Olive Oil
2 medium onions, finely chopped
1 (8-oz.) box fresh mushrooms, sliced (about 3 and 1/4 cups)
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
3-4 tablespoons walnuts
3-4 hard-boiled eggs
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground Gefen Pepper

Steps:

  • Spray a large nonstick frying pan with nonstick cooking spray. Add olive oil and heat over medium flame.
  • Add the onions and sauté until golden, about 6-8 minutes. If the onions begin to stick, add a little water.
  • Add the mushrooms and garlic and cook for 6-8 minutes, stirring occasionally, until nicely browned. Remove the pan from the flame and cool slightly.
  • In a food processor fitted with the S blade, process walnuts until finely ground, about 10-12 seconds. Add the onion/mushroom mixture, eggs, salt, and pepper. Process with several quick pulses, until just combined.
  • Transfer to a container, cover, and refrigerate until ready to serve.
  • Scoop into individual Bibb lettuce leaves or radicchio lettuce cups, or on salad greens.

This is my grandma She She's mock chopped liver. It's incredibly simple and very tasty. My whole family enjoys it. I like this version a lot more than the mock chopped liver made with garbanzo beans and/or green beans (even though that version is healthier). Makes a terrific appetizer.

4 hard-boiled eggs
1 large onion, chopped
1 cup ground walnuts
1 teaspoon olive oil
1 dash paprika

Steps:

  • Sautee chopped onion in olive oil on low heat until onion is clear in color. Let cool.
  • Add eggs, nuts, and onion to cuisine art and puree.
  • Sprinkle paprika over top.
  • Serve with crackers, carrots, celery, or chips.
  • Enjoy!

  • Heat up the oil in a skillet over medium heat until hot enough to fry. Sauté the chopped onion for several minutes until it softens and caramelizes.
  • In a food processor, combine sautéed onion, toasted walnuts, peeled hard boiled eggs, and peas.
  • Pulse, then process until the puree resembles chopped liver. Add salt and pepper to taste, and process again to blend.
  • Chop up the remaining egg. Garnish the vegetarian chopped liver with the last chopped egg and parsley. Serve with crackers for spreading, or matzo during Passover (if you are celebrating Sephardic style - peas are considered kitniyot). Enjoy!

  • In a large skillet or sauté pan, heat 3 tbsp oil over medium-high heat. Add the onions, and sauté until dark brown. Stir them every couple of minutes to keep from burning (and scrape the pan with a flat spatula as you do so). You want them to get really dark and caramelized. This should take at least 20 minutes, maybe more. Remove from pan and let cool on a plate or bowl.
  • Using the same pan, and without cleaning it, add 3 more tbsp oil and keep on medium-high heat. Add the sliced mushrooms. Sauté until they soften and release their juices, then continue to cook until very browned, about 5 more minutes. Remove from pan and let cool.
  • Add the onions, the mushrooms, and all the remaining ingredients to a food processor (or blender). Pulse a few times, then scrape down the side of the bowl. Run the processor some more, scraping the mixture down again, and keep repeating this until it's all well-blended and the walnuts are pulverized into the mix (if you see walnut pieces, keep going). Don't overdo it, though, or it'll turn into a paste.
  • You can serve immediately (with matzo, of course), but it's actually even better when it has a chance to sit (refrigerated) for a few hours or overnight. Leftovers will keep, covered, in the fridge for about a week.
