Mochiko Chicken image

A chicken dish that has been marinated for 24 hours, then deep fried. Add any spices you like!

5 pounds boneless skinless chicken breasts, cut into strips
1 cup white rice flour
⅓ cup cornstarch
1 cup soy sauce
1 ½ tablespoons salt
½ cup white sugar
1 cup chopped green onions
6 cloves garlic, minced
1 teaspoon cayenne pepper
5 eggs
oil for frying

Steps:

  • In a large bowl combine the flour, cornstarch, soy sauce, salt, sugar, green onions, garlic, cayenne pepper and eggs. Mix well. Add the chicken and marinate for 24 hours, refrigerated.
  • Remove from refrigerator, deep fry and serve.

This is Hawaii's version of popcorn chicken! Marinate chicken overnight in a mochiko flour batter, then deep fry till crisp and golden.

2 pounds boneless, skinless chicken thighs
1/4 cup mochiko flour
1/4 cup cornstarch
1/4 cup sugar
1/4 cup soy sauce
2 eggs
1 teaspoon salt
6 cloves garlic, minced
1/4 cup green onions, chopped (optional)

Steps:

  • Chop the chicken into 1-inch, bite-size pieces.
  • Mix all the other ingredients (mochiko flour, cornstarch, sugar, soy sauce, eggs, salt, garlic, and green onions) together in a bowl.
  • Add the chicken to the bowl and marinate overnight (or at least 8 hours) in fridge.
  • Fill a small pot 1" high with vegetable oil. Deep fry on medium-high heat until the chicken is crisp and golden brown. This takes about 6 minutes. Eat with rice ^_^

Mochiko flour can be found in the Asian aisle in most supermarkets. I prefer the Koda Farms Blue Star brand that comes in a white box. Mochiko chicken is a favorite here in the Islands and can be found at many restaurants and lunchwagons. Great for potlucks. Preparation time does not include marinating time.

Steps:

  • Cut chicken into bite-size pieces.
  • In a medium bowl, sift together mochiko flour, cornstarch, sugar, and salt. Mix well.
  • In a small bowl, combine eggs, shoyu, and garlic.
  • Whisk into dry ingredients.
  • Add chicken to mixture.
  • Fold in green onions, and sesame seeds if desired.
  • Marinate at least 4 hours; overnight is best.
  • Deep-fry until golden brown.

This mochiko chicken is my daughter's favorite thing in the whole wide world. If you have never eaten mochiko chicken then you don't know what you been missing. This is a staple in many potlucks, tailgating and family gatherings. Mochiko is a Japanese sweet flour that makes a light batter. I make this for my family of 8 once a month. I have to triple the recipe and there is never leftovers.

¼ cup white sugar
¼ cup mochiko (sweet rice flour)
¼ cup cornstarch
½ teaspoon salt
2 eggs
½ cup sliced green onions
5 tablespoons soy sauce (such as Aloha™ Shoyu)
2 tablespoons sesame seeds
4 cloves garlic, minced, or more to taste
3 pounds skinless, boneless chicken thighs, cut into strips
2 cups vegetable oil for frying

Steps:

  • Mix sugar, mochiko, cornstarch, and salt together in a bowl.
  • Whisk eggs, green onions, soy sauce, sesame seeds, and garlic together in a bowl. Whisk into the flour mixture to form a smooth batter.
  • Stir chicken strips gently into the batter. Marinate in the refrigerator, 4 hours to overnight.
  • Fill a deep saucepan with 1 1/2 inch oil; heat over medium heat. Fry chicken strips in batches in the hot oil, turning occasionally, until golden brown and no longer pink in the center, about 7 minutes.

AIR FRYER MOCHIKO CHICKEN

Make easy Hawaiian mochiko chicken without the deep frying with this air fryer adapted recipe! Bonus: it's also naturally gluten free.

2 lbs boneless, skinless chicken thighs
1/4 cup soy sauce
1/4 cup sugar
3 cloves garlic (minced)
1 tsp ginger (grated)
1 egg
1/4 cup green onion (chopped)
2 tbsp cornstarch
3/4 cup mochiko
1/4 cup cornstarch
1 tsp kosher salt
canola or vegetable oil spray

Steps:

  • Cut chicken thighs roughly into 1.5-2 inch cubes
  • Whisk all marinade ingredients together
  • Pour marinade over chicken, coating all sides well, and marinate for at least 2 hours. Marinating overnight is HIGHLY recommended.
  • When ready to air fry, whisk mochiko, salt, and cornstarch together.
  • Shake off excess marinade from chicken and lightly coat in the breading mixture. The breading may become wet and sticky; that's okay.
  • Preheat air fryer to 390 degrees F.
  • Place breaded chicken into basket. (You may need to air fry in two batches, depending on how large your air fryer is).
  • Spray with canola oil, particularly targeting any areas of breading that are still dry.
  • Air fry at 390 degrees F for 10-12 minutes (depending on how thick your chicken pieces are), shaking and spraying again with oil halfway through.
  • Mochiko chicken can be served hot or at room temperature as part of a musubi. Leftovers will keep in the fridge.

1/4 cup cornstarch
1/4 cup sugar
5 tablespoons soy sauce
2 eggs
1/4 cup finely chopped green onions, reserve some for garnish
2 pounds boneless, skinless chicken thighs
Oil, for frying
1 tablespoon toasted sesame seeds, optional

Steps:

  • Create the marinade by combining mochiko, cornstarch, sugar, soy sauce, eggs and green onions in a medium bowl. Make sure everything is blended. Cut chicken into bite-size pieces like nuggets, getting them as close to uniform in size as possible so they'll cook evenly when deep-frying.
  • Add chicken to the marinade and use your hands to massage the chicken pieces and make sure they're all coated by the marinade. Cover and refrigerate for at least 6 hours or up to overnight.
  • Bring oil to 350 degrees F in a deep-fryer or Dutch oven.
  • Fry chicken in batches until crispy, about 10 minutes. Sprinkle sesame seeds over the top, if using, and serve.

  • In a large sealable container, combine all the ingredients and mix well. It will be on the thicker side, but will thin out as the chicken marinates. Set aside
  • Cut chicken thighs into two or three equal pieces. The goal is to cut the pieces into even thickness so they cook evenly. Dry chicken with paper towels to remove excess moisture.
  • Add chicken to the mix and stir to coat well. Cover the container and let the chicken marinate overnight for a thinner crust or 2-3 hours for a thicker crust.
  • Remove chicken from refrigerator and stir until all chicken pieces are coated well. Some of the cornstarch mixture may have settled to the bottom, creating a thick paste, but just mix it back up. Note: The mixture will be thinner if marinating overnight as the chicken juices will mix with the marinade. Just make sure you coat each piece with the mix before frying. If doing a quick 45 minute marinade, the crust will be thicker, but can make the crust salty. If doing a quick marinade, use a low sodium soy sauce.
