MOCHA BREAD (YEAST BREAD)
I was inspired one day in culinary school after one of our bread baking sessions and came up with this bread. I have tweaked it a little bit to improve it. It is good served with a sweet cinnamon butter.

Steps:
- Heat the coffee and water to 110 - 130 deg F.
- Melt the chocolate chips and butter together.
- In the bowl of a standing mixer, mix 4 c flour, salt, brown sugar, yeast and cocoa powder.
- On low speed, slowly add the water and coffee.
- Mix until incorporated, scraping the sides of the bowl as necessary.
- Add the chocolate/butter mixture and the egg.
- Increase the speed of your mixer to medium, add the remaining flour a couple of tablespoons at a time, until the dough forms a ball and scrapes the sides of the bowl pretty well clean.
- Knead in the mixer for 5 - 7 minutes, until the dough is smooth and elastic.
- Remove the dough from the bowl, knead briefly on a very lightly floured counter.
- Form the dough into a ball, place it back in the bowl, cover it with a lint free towel and let it rise until doubled in size - 45 minutes to an hour.
- Punch the dough down, shape into two round loaves. Cover and let rise again, until double, about 30 - 45 minutes.
- Preheat the oven to 350.
- Mix the 2 tbsp milk and the 2 tbsp melted butter in a small bowl. Brush over the tops of your loaves.
- Bake for 35 - 40 minutes.
MOCHA LOAF

- Beat egg yolks in a bowl. Reserve eggs whites.
- Heat milk, egg yolks, 1/4 cup sugar, gelatin, instant coffee, and salt over medium heat, stirring constantly, until gelatin dissolves, about 5 minutes. Remove from heat and stir in vanilla extract. Chill until gelatin mixture is thickened to the consistency of unbeaten egg whites, about 1 hour.
- Beat egg whites in a glass or metal bowl until foamy. Gradually add 1/4 cup sugar, continuing to beat until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds. Fold gelatin mixture into egg whites.
- Beat heavy cream in another until stiff peaks form. Fold egg white-gelatin mixture into whipped cream until evenly blended.
- Line a loaf pan with waxed paper.
- Spread about 1/4 the cream mixture into prepared loaf pan. Layer about 7 wafers over cream mixture. Repeat layers, ending with the cream mixture. Cover and refrigerate until set, about 3 hours.

MOCHA NUT BREAD

- In a large bowl, combine the flour, sugar, cocoa, coffee granules, baking soda and salt. In another bowl, beat eggs, sour cream and butter until smooth. Stir into dry ingredients just until moistened. Fold in chocolate chips and pecans. , Pour into a greased 9x5-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

MOCHA MINI BREAD LOAVES
This is adapted from Camilla Saulsbury's muffin recipe. It's fairly nutritious and soo good. These loaves/muffins freeze well too. I occasionally add some frozen berries to these too.

- Preheat oven to 350 degrees.
- Combine dry ingredients in a large bowl.
- In a separate bowl, whisk egg, oil, vanilla, applesauce, and gently add to dry ingredients.
- Add hot coffee and boiling water, mix until just blended, and let stand for about 10 minutes.
- Add chocolate chips.
- Divide batter among 4 greased mini loaf pans with parchment paper covering the bottems.
- Bake for 18-20 minutes.
MOCHA CREAM BREAD
This is such a yummy sweet bread. You can use the dough cycle in your bread machine, or you can knead it by hand.

Steps:
- Place all ingredients, except for the semi-sweet chocolate chips, into the bread machine in the proper order for your machine.
- Use dough cycle.
- At end of dough cycle, remove dough, and place on lightly-floured board. Cover and let rest for 10 minutes to relax the gluten.
- Roll out dough into a rectangle, sprinkle with miniature chocolate chips, and roll up into a loaf. Place dough into greased loaf pan, cover and let rise for 45 minutes. Slash loaf with a razor or a lame.
- Bake in preheated 375 degree F (190 degrees C) oven for 25-30 minutes. Remove loaf onto a cake rack and let cool.

- Preheat oven to 350°F and line a 9 x 5-inch loaf pan with parchment paper, letting excess extend over sides of pan. Spray parchment paper lightly with nonstick spray.
