MOCHA FROSTING

Our Test Kitchen home economists dress up purchased angel food cake with an easy-to-make coffee-flavored frosting.

Number Of Ingredients 7

2 tablespoons instant coffee granules
3 tablespoons boiling water
1 cup butter, softened
2 tablespoons baking cocoa
4 cups confectioners' sugar
1 prepared angel food cake (8 to 10 ounces)
Chocolate sprinkles, optional

Steps:

  • For frosting, in a small bowl, dissolve coffee granules in water; set aside. In a bowl, cream butter until light and fluffy. Beat in cocoa. Gradually beat in confectioners' sugar and coffee granules until smooth., Cut cake into three horizontal layers. Place bottom layer on a serving plate; spread with frosting. Repeat with middle cake layer. Top with remaining cake layer; frost top and sides of cake. Garnish with chocolate sprinkles if desired.

Mocha Frosting is an easy frosting recipe! Make Mocha Buttercream Frosting with cocoa and coffee to frost chocolate cake or chocolate cupcakes or brownies - this recipe is so good.

2 teaspoons instant coffee or instant espresso
2 tablespoons hot water
2 tablespoons (10 g) Dutch Process Cocoa Powder
6 cups (678g) powdered sugar
1 cup (226g) unsalted butter, softened
1 teaspoon vanilla extract
½ teaspoon salt
Milk or heavy whipping cream as needed for desired consistency ((1-3 tablespoons, approximately))

Steps:

  • Add the instant coffee or espresso to the hot water. Stir and let cool completely.
  • Whisk together cocoa and powdered sugar.
  • Cream butter in a very large bowl or bowl of a stand mixer until smooth, then slowly add sugar mixture. Add vanilla and salt. Mixture will be crumbly.
  • Add coffee mixture and mix until smooth, adding milk or cream as needed for desired consistency for piping or frosting.
  • Store in an airtight container for up to 3 days in the refrigerator or freeze for up to a month.

Cooking spray
1 14-ounce can sweetened condensed milk
10 ounces semisweet chocolate chips (about 1 1/2 cups)
6 1/2 ounces milk chocolate chips (about 1 cup)
4 tablespoons unsalted butter
1 tablespoon espresso powder
1/4 teaspoon salt
3 tablespoons dulce de leche
3 tablespoons white chocolate chips

Steps:

  • Line an 8-inch square baking dish with foil, leaving a 2-inch overhang on two sides; lightly coat the foil with cooking spray. Combine the condensed milk, semisweet and milk chocolate chips, butter, espresso powder and salt in a medium saucepan. Place over medium heat and cook, stirring and scraping the bottom of the pan frequently with a rubber spatula, until the chocolate is completely melted, about 5 minutes.
  • Combine the dulce de leche and white chocolate chips in a small microwave-safe bowl. Microwave in 15-second intervals, stirring, until melted, about 30 seconds.
  • Spread the semisweet chocolate mixture in the prepared baking dish. Immediately drizzle the dulce de leche mixture on top. Drag a butter knife through the dulce de leche mixture to make a marbled pattern on top. Let cool completely at room temperature, about 1 hour. Cover with plastic wrap and refrigerate until firm, at least 2 hours or overnight.
  • Lift the fudge out of the baking dish and peel off the foil. Cut into 1-inch squares with a sharp knife.

MOCHA ICING

This is an old recipe I have for Mocha Icing. I hope you like it. The recipe makes enough for one 8 inch layer cake.

⅓ cup unsweetened cocoa powder
⅓ cup strong, hot, brewed coffee
3 cups confectioners' sugar
⅓ cup melted butter
⅛ teaspoon salt
1 teaspoon vanilla extract
¼ cup chopped walnuts

Steps:

  • Combine coffee and cocoa in small bowl of electric mixer. Beat until blended. Add sugar, butter or margarine, salt, and vanilla. Beat until blended. Scrape bowl, and beat icing until it has a spreading consistency.
  • Frost the cake, and sprinkle with chopped walnuts if desired.

1/2 cup unsweetened cocoa powder
1/2 cup heavy whipping cream
1/4 cup coarsely ground coffee beans
1 1/3 cups sugar
1 cup light corn syrup
1/4 cup water
4 ounces unsweetened chocolate, finely chopped
1/4 cup (1/2 stick) unsalted butter, diced
2 teaspoons vanilla extract

Steps:

  • Sift cocoa into medium bowl. Bring cream and ground coffee to boil in heavy small saucepan, stirring to blend. Remove from heat; cover and steep 10 minutes. Strain cream through fine sieve into another bowl, pressing on coffee grounds to release as much cream as possible.
  • Bring sugar, corn syrup, 1/4 cup water, and coffee-flavored cream to boil in medium saucepan, whisking until sugar dissolves. Boil 1 minute, brushing down sides of pan with wet pastry brush. Remove from heat. Whisk in chocolate, butter, and vanilla. Pour 1/4 of chocolate mixture into cocoa to moisten, then add remaining chocolate mixture, whisking until sauce is smooth and shiny. DO AHEAD Can be made 1 week ahead.Cool. Cover and refrigerate. Rewarm sauce over low heat before using.

1 cup heavy whipping cream
2 tablespoons strong coffee (freshly brewed)
1 1/2 teaspoons vanilla extract
5 ounces unsweetened baking chocolate, chopped (5 - 1 oz squares)
1/2 cup butter flavor shortening
2 tablespoons butter flavor shortening
1/2 teaspoon salt

Steps:

  • In a medium saucepan, combine sugar, cream, coffee, and vanilla. Cook over medium heat, stirring occasionally, until mixture boils. Reduce heat to low, and simmer for 5 minutes. Stir in chocolate, shortening, and salt, stirring until chocolate melts and mixture is smooth.
  • Let frosting stand, stirring occasionally, for 1 hour or until cooled to room temperature and thickened. Use immediately.

1 (4 cup) lb powdered sugar
1/2 cup butter or 1/2 cup margarine
1 teaspoon vanilla extract
1/2 cup evaporated milk
instant coffee powder (not crystals)

Steps:

  • Mix the cocoa and sugar in a large bowl.
  • Cream 1 cup of the cocoa/sugar mix with the butter.
  • Blend in the vanilla and half of the milk.
  • Add the remaining cocoa/sugar mix, and the remaining milk, and beat well.
  • Continue beating.
  • Add in instant coffee powder, 1 teaspoon at a time, tasting before next addition.
  • Add coffee powder to taste.
