You can add nuts or orange pieces to this. Try it with rum or an orange liquor. Just reduce the amount of milk by the amount of liquid added. Top with whip cream and a cinnamon dusting.

1/2 cup sugar
3 tablespoons unsweetened cocoa powder
3 tablespoons cornstarch
1/2 teaspoon cinnamon
1/2 teaspoon instant coffee granules
2 cups milk
1 tablespoon butter or 1 tablespoon margarine
1 teaspoon vanilla

Steps:

  • Combine sugar, cocoa, cornstarch, cinnamon and coffee in an 8 cup measure cup or bowl.
  • Gradually stir in milk.
  • Microwave on high 5 to 6 minutes or until it starts to boil and thicken slightly (whisk twice).
  • Stir in butter and vanilla.
  • Place plastic wrap on surface of pudding.
  • Refrigerate at least 2 hours.
  • Whisk until smooth.
  • Serve in individual bowls or wine glasses.

2/3 cup sugar
1/4 cup cornstarch
1/8 teaspoon salt
2 1/2 cups milk
4 large egg yolks
2 tablespoons unsalted butter, cut into pieces
1 teaspoon vanilla
1/3 cup cocoa powder, add
2 chai tea teabags
2 teaspoons cinnamon
4 -5 teaspoons espresso powder
2 tablespoons boiling water
1/4 cup mini chocolate chip
1/4 cup raisins
1/3 cup rum

Steps:

  • Place a fine mesh sieve over a medium bowl and set aside.
  • First, whisk together sugar, corn starch, and salt in a saucepan.
  • Add milk gradually making sure to dissolve cornstarch. Add egg yolks and mix to combine.
  • Turn on the element to medium heat and place saucepan on the element. Stirring constantly until the first large bubble forms and sputters, and then reduce heat to low. Continue to stir constantly for one minute and then remove from heat.
  • Immediately pour the mixture through the sieve in the bowl to remove any lumps.
  • Stir in butter and vanilla into the hot pudding.
  • Place a layer of saran wrap over the surface of the pudding-this will prevent a skin from forming.
  • Chill for 3 hours or for 3 days. Before serving whisk until smooth.
  • For chocolate pudding: add cocoa powder with the sugar, corn starch, and salt and then proceed as directed.
  • For Chai Cinnamon Pudding: brew the two tea bags in 3 tbsp boiling water, set aside until cool. Squeeze out the teabags and reserve liquid. Mix the tea into the pudding after step 8 and sprinkle cinnamon on top before serving.
  • For Mocha Chip Pudding: Prepare pudding with chocolate variation. Then dissolve the espresso powder into 2 TBSP boiling water and cool. Mix the cooled espresso into the pudding after step 8 and sprinkle chocolate chips on top before serving.
  • For Rum Raisin Pudding: Combine 1/4 cup raisins and 1/3 cup rum in a small pot and bring to a boil. Remove from element and let cool completely. Remove raisins from rum and set aside. Mix the rum into the pudding after step 8 and sprinkle the raisins on top before serving.

3 tablespoons coffee liqueur (such as Kahlúa); optional
2 cups whole milk
1/2 cup granulated sugar
3 tablespoons unsweetened Dutch-process cocoa powder
2 tablespoons cornstarch
1/4 teaspoon salt
4 ounces bittersweet chocolate, chopped
1 tablespoon unsalted butter
1 1/2 teaspoons pure vanilla extract
1/2 cup cold heavy cream
1 tablespoon confectioners' sugar
Chopped chocolate-covered espresso beans, for topping

Steps:

  • Whisk the egg yolks and 2 tablespoons coffee liqueur in a medium bowl. Whisk the milk, granulated sugar, cocoa powder, cornstarch and salt in a medium saucepan until smooth. Bring to a simmer over medium heat, whisking occasionally, until slightly thickened, about 8 minutes. Remove from the heat and whisk about 1/2 cup of the hot milk mixture into the beaten eggs, then whisk the egg mixture into the remaining milk in the pan. Cook over medium heat, whisking, until thickened, about 5 minutes (the whisk should leave a thick trail when dragged). Remove from the heat. Add the chopped chocolate and whisk until smooth, then whisk in the butter and 1 teaspoon vanilla.
  • Divide the pudding among 4 ramekins or small bowls. Place a piece of plastic wrap directly on the surface of each and refrigerate until set, at least 4 hours or overnight.
  • Whisk the heavy cream with the confectioners' sugar in a medium bowl until soft peaks form. Add the remaining 1 tablespoon coffee liqueur and 1/2 teaspoon vanilla and whisk until combined. Top the pudding with the whipped cream and chocolate-covered espresso beans.

2 tablespoons ground coffee
1 1/2 cups sugar
3/4 cup cocoa powder (preferably Dutch process)
1/2 cup cornstarch
1/8 teaspoon (heaping) kosher salt
2 cups half-and-half
3 ounces bittersweet chocolate
2 tablespoons vanilla extract
2 tablespoons sugar
1 teaspoon cinnamon
10 by 2 1/2 by 1/2-inch brioche sticks, crust removed
4 tablespoons butter, melted
Whipped cream, for garnish

Steps:

  • In a small saucepan, bring 1 cup milk and the ground coffee to a boil. Turn off the heat and let sit for 10 minutes to infuse.
  • In a mixing bowl, whisk together the sugar, cocoa, cornstarch, and salt. In a thin stream, whisk in the remaining milk until smooth. Whisk in the half-and-half until smooth. Whisk in the coffee infused milk, and then pour the mixture through a fine sieve or chinois into a saucepan. Over medium heat, whisking the mixture constantly, bring to a boil and boil gently 2 minutes.
  • Turn off the heat and stir in the bittersweet chocolate and vanilla extract. Pour the mixture into 1-cup ramekins, cups, or mugs. Refrigerate until well chilled. (The recipe can be made through this step up to 2 days in advance.) Serve cold.
  • Cinnamon Toasted Soldiers: Preheat oven to 375 degrees F. Combine the sugar and cinnamon. Toss the brioche sticks in the melted butter, then the cinnamon sugar. Place on a sheet pan and bake for 10 minutes, or until crisp and golden brown.

2 tablespoons instant coffee granules
1/2 cup hot water
1 (18 1/4 ounce) box chocolate cake mix, I use milk chocolate flavor
1 (4 ounce) box instant chocolate pudding mix
3/4 cup sour cream
1/2 cup vegetable oil
3 eggs
1 1/2 cups semi-sweet chocolate chips
3/4 cup whipping cream
1 1/2 cups semi-sweet chocolate chips

Steps:

  • In a mixing bowl, dissolve coffee granules in hot water. Beat in the cake mix, pudding mix, sour cream, oil and eggs. Stir in the chocolate chips. Pour into a greased and floured 10-inch fluted tube pan. Bake at 350 for 1 hour or until a toothpick inserted near the center comes out clean. Cool for 30 minutes. Invert onto serving plate. In a saucepan heat whipping cream to simmering. Remove from heat. Whisk in chocolate chips until smooth. Drizzle over cake.
