This is a one bowl cake. You can substitute sour milk for buttermilk - mix 1 cup milk with 1 tablespoon vinegar or lemon juice and let stand for 10 minutes. Frost with Coffee Icing.

2 cups all-purpose flour
2 cups white sugar
⅔ cup unsweetened cocoa powder
½ cup vegetable oil
2 eggs
1 cup buttermilk
2 teaspoons baking soda
½ teaspoon salt
1 teaspoon baking powder
1 tablespoon instant coffee powder
1 cup hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9 inch round cake pans.
  • Measure flour, sugar, cocoa, oil, eggs, buttermilk, baking powder, soda, and salt into a mixing bowl. Dissolve instant coffee in hot water, and add to mixing bowl. Beat at medium speed for 2 minutes until smooth; batter will be thin. Pour into prepared pans.
  • Bake for 30 to 35 minutes, or until an inserted wooden pick comes out clean. Cool in pans for 10 minutes, and then turn out onto racks to cool completely.
  • Frost cooled cake with Coffee Icing. After frosting, melt some semisweet chocolate baking squares or chips in a double boiler. Drizzle chocolate around top outside edges letting it run down sides, or over top of cake.

1 1/4 cups water
1/3 cup vegetable oil
2 tablespoons coffee-flavored liqueur or cold brewed coffee
4 eggs
3/4 cup whipping cream
2 tablespoons granulated sugar
1/3 cup coffee-flavored liqueur or cold brewed coffee
1 cup semisweet chocolate chips (6 oz)
2 teaspoons vanilla
1 cup whipping cream
3/4 cup powdered sugar
1/4 cup Dutch processed unsweetened baking cocoa
1/2 teaspoon vanilla

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease and lightly flour bottoms and sides of two 8- or 9-inch round cake pans. In large bowl, beat cake mix, water, oil, 2 tablespoons liqueur and the eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pans.
  • Bake 8-inch pans 34 to 40 minutes, 9-inch pans 31 to 37 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Run knife around sides of pans to loosen cakes; remove from pans to cooling rack. Cool completely, about 1 hour. Refrigerate layers 45 minutes for easier handling.
  • Meanwhile, to make mousse, in 2-quart saucepan, mix 1/4 cup of the whipping cream, the granulated sugar and 1/3 cup liqueur. Cook over medium heat, stirring constantly, until sugar is dissolved and mixture simmers; remove from heat. Stir in chocolate chips with whisk until chips are melted. Stir in 2 teaspoons vanilla. Pour into large bowl; cool to room temperature, about 10 minutes.
  • In chilled medium bowl, beat remaining 1/2 cup whipping cream on high speed just until soft peaks form. Fold whipped cream into chocolate mixture. Cover and refrigerate 30 minutes.
  • In another chilled medium bowl, beat topping ingredients on high speed until soft peaks form.
  • Trim off rounded top of one cake layer. Cut each cake layer horizontally to make 2 layers. (To cut, mark side of cake with toothpicks and cut with long, thin knife.) Place 1 layer, cut side up, on serving plate; spread with one-third of the mousse. Repeat with second and third layers. Top with fourth layer, cut side down. Spread topping over side and top of cake. Cover; refrigerate at least 1 hour before serving. Store covered in refrigerator.

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, cocoa, baking soda and salt; add to creamed mixture alternately with coffee and sour cream, beating well after each addition. , Pour into three greased and floured 9-in. round baking pans. This is just an incredible recipe that will have you swooning, as long as you don't think about the calories! You can make it easier by buying a Madeira cake or any pound-type cake. Or, if you're anal like me about preservatives and other stuff in store-bought things you can make your own. I used recipe number 85, Butter Madeira Cake. Make this up to 2 days ahead or freeze it, for easy party planning!

250 g mascarpone cheese
50 g caster sugar
500 ml double cream
50 g coconut or 50 g chopped almonds
200 g good quality chocolate, chopped
150 ml strong black coffee or 150 ml hot cocoa
4 tablespoons chocolate-flavored liqueur or 4 tablespoons Tia Maria
1 loaf madeira cake

Steps:

  • Beat the mascarpone until slightly softened, then beat in the sugar.
  • Whip 300ml of the cream until it just holds its shape, then fold lightly into the mascarpone.
  • Toast the coconut or almonds in a dry frying pan until tinged brown, then cool.
  • Chop the chocolate and mix with the cooled almonds. Set aside 2 tbsp to use later on for decoration.
  • Mix together the coffee or hot chocolate with the alcohol.
  • Cut the cake into 15 slices.
  • Now, you can choose to make the cake either in a baking dish (easier perhaps if you need to travel with it or slice for serve-yourself-occasions like a potluck) or in a bowl, which will result in a dome shaped bombe.
  • If you are going for a baking dish, use a pan that is roughly 8 x 10 inches.
  • If you go for a pudding basin, it should be about 1.4 litre or 2-1/2 pint capacity and lined with cling film.
  • Either way, start by lining the base with a few pieces of cake.
  • When you've completed a layer, sprinkle over some of the coffee/alcohol mixture, then smooth a few spoonfuls of the mascarpone/whipping cream on top.
  • Add some of the chocolate and almond or coconut mixture and then repeat the layers.
  • Finish with a layer of cake, moistened with any remaining coffee mixture.
  • Cover the top of the desert and chill for at least 4 hours and up to 2 days.
  • Remove the cling film and, if you're using a bowl, invert it onto a serving plate.
  • Whip the remaining cream to soft peaks and spread over the top and sides of the bombe.
  • Scatter over the remaining chocolate/almond mixture.
  • You can freeze this after it's been layered for up to 3 months.
  • Defrost overnight and then continue with the rest of the steps.

3 cups all-purpose flour
2 ⅔ cups granulated sugar
3 tbsp cocoa powder (nice quality)
1 tsp kosher salt
1 tbsp baking soda
1 ½ tsp baking powder
½ cup sour cream
1/2 cup buttermilk
3 eggs (large)
1 1/4 cups coffee (hot, strong)
1/2 cup water
¾ cup veggie oil
1 lb butter (unsalted)
2 lb confectioners sugar
1 tbsp cocoa powder
1 tbsp espresso powder
1 tbsp vanilla
3 tbsp heavy cream
1/2 tsp salt
1/2 cup dark chocolate (chopped)
1/4 cup heavy cream
1/2 cup chocolate covered espresso beans

Steps:

  • Preheat oven to 350F.
  • Butter and flour three 9-inch cake pans. I highly recommend using cake strips for a more even bake.
  • Sift together the dry ingredients (including the sugar) into the bowl of a stand mixer and whisk to combine.
  • Add the wet ingredients into a large bowl and whisk together.
  • Add the wet ingredients to the dry ingredients.
  • Whisk to combine then mix on level 2 for two minutes.
  • Distribute batter evenly to the three pans and bake for about 35-40 minutes at 350F or until a toothpick inserted in the center comes out clean. I recommend rotating the pans halfway through the bake.
  • Allow time to cool for 5 minutes, then invert onto wire racks to cool fully.
  • Sift the confectioners' sugar, salt, cocoa and espresso powder into a bowl.
  • Whip the butter for about 5 minutes using a paddle attachment (in a standing mixer).
  • Beat in the sugar mixture slowly.
  • Add vanilla and drizzle in the cream while beating until desired consistency is reached. If the you want the buttercream to have a stronger espresso taste, add as much as you would like!
  • Warm the cream and pour over the chocolate. Set aside for a few minutes and whisk together. If there's a few bits of unmelted chocolate just microwave it for 10 seconds on half power and whisk again.
  • Pipe buttercream on the first layer, add a swirl of the ganache then a sprinkle of chopped espresso beans.
  • Add the second layer on and repeat the process.
  • Add third layer on and cover cake with buttercream. Smooth using an offset spatula.
  • Drizzle ganache on top of cake, smooth the top and allow to set.
  • Pipe dollops of buttercream on the edge using a large closed star tip.
  • Top each dollop with a chocolate covered espresso bean.

150g bar plain chocolate (at least 70% cocoa solids)
250g butter , softened
225g golden caster sugar
4 large eggs
225g plain flour
2 tsp baking powder
100g ground almonds
3 tbsp cocoa powder
1 tbsp milk
2 tsp vanilla extract
142ml carton double cream
175g plain chocolate (at least 70% cocoa solids), broken into pieces
candied fruits or candied orange strips, to decorate
crème fraîche , to serve

Steps:

  • Preheat the oven to 160C/Gas 3/fan oven 140C. Grease a 1.7 litre/3 pint stainless steel mixing bowl and line the base (approx 9cm/31⁄2in) with a circle of greaseproof paper.
  • Break the chocolate into pieces in a heatproof bowl. Add 25g/1oz of the butter and stand the bowl over a pan of gently simmering water until the chocolate has melted (or melt it in the microwave). Stir until smooth.
  • Put the remaining butter in a separate bowl with the sugar, eggs, flour, baking powder and 85g/3oz of the almonds. Beat together for 2-3 minutes until smooth and creamy. Spoon 350g/12oz of this mixture into another bowl and stir in the cocoa powder and milk. Stir the remaining almonds and the vanilla extract into the remaining plain cake mixture.
  • Spread a little of the vanilla mixture in the base of the bowl. Top with a spoonful of the cocoa mixture, then a little of the chocolate sauce, taking care not to let the chocolate sauce get near the edge of the bowl or it will burn during baking. Continue to alternate the three mixtures in the bowl, placing large spoonfuls in at random and spreading them slightly to mix up the colours. Level the surface, then swirl a skewer or the end of a teaspoon through the mixture, two or three times, to ripple the colours together. Don't overmix or the colours will lose their definition.
  • Bake for 1 hour 30 minutes to 1 hour 40 minutes until the cake is risen and the surface feels firm to the touch. To check that the cake is done, pierce the light part of the cake with a skewer - it should come out clean. Leave to cool in the bowl, then loosen the edges and invert the cake on to a flat serving plate.
  • Make the chocolate cream. Heat the cream in a small heavybased saucepan until hot and beginning to bubble round the edges. Add the chocolate pieces and remove from the heat, stirring gently. Pour into a bowl and leave until the chocolate has melted. Chill for about 30 minutes, stirring occasionally until the mixture just holds its shape when beaten.
  • Using a palette knife, swirl the chocolate cream over the top and sides of the cake. Slice the candied fruits and use to decorate the top of the cake. Keep in a cool place (not the fridge) until ready to serve. This is a luxurious dessert, so serve thin slivers with a dollop of crème fraîche to cut through the richness.

  • In a large bowl, combine the first five ingredients. In another bowl, whisk egg, oil and buttermilk. Add to the dry ingredients and stir well. Slowly add the coffee until combined (batter will be thin)., Pour into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack., For frosting, melt butter in a small saucepan. Add the sugar and milk; bring to a boil. Reduce heat; cook and stir for 2-3 minutes. Remove from the heat. 3 to 4 cups (720-960mL) brewed strong coffee
1 cup (200g) granulated sugar
1 cup (200g) packed brown sugar
2 cups (240g) all-purpose flour
¾ cup (69g) Dutch processed cocoa powder
2 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
4 large eggs
½ cup (120g) vegetable oil
2 teaspoons vanilla extract
1 cup (227g) unsalted butter (softened to room temperature)
4 to 5 cups (480-660g) powdered sugar
¼ to ⅓ cup (60-80mL) strong coffee (cooled)
pinch of salt

Steps:

  • In a small saucepan over medium heat, bring the brewed coffee to a boil and allow to simmer until it reaches 1 and ¼ cup (4 cups will take about 20 to 25 minutes).
  • If you take it down too low, add water to bring level back up to 1 and ¼ cup. Set aside.

3 tablespoons sugar

This chocolate mocha mousse is quick to make, rich in flavour with a light, silky texture. It's one of those treats that's loved by kids and adults alike.

150g plain dark chocolate
2 large egg yolks
150g full-fat crème fraîche
150ml double or whipping cream
1 tsp instant coffee granules

Steps:

  • Break the chocolate into a large heatproof bowl and set it over a pan of gently simmering water. The base of the bowl should not touch the water. Leave until just melted, then remove the pan from the heat, stir, and leave the chocolate to cool slightly.
  • Put the egg yolks and sugar in a medium heatproof bowl. Set the bowl over a pan of gently simmering water, as above. Whisk with an electric hand whisk on low speed for 4 minutes, or use a balloon whisk, which will take a little longer.
  • When the mixture has become paler and thicker, remove the bowl from the heat and continue whisking for a further minute. Set aside to cool slightly, stirring occasionally so the mixture does not stiffen. If it does, stir in 1-2 teaspoons of the crème fraîche to slacken.
  • Pour the cream into a medium mixing bowl and sprinkle over the coffee. Whip the cream to soft peaks and fold in the crème fraîche. Fold the cream mixture into the cooled dark chocolate, then fold in the egg yolk mixture. Make sure everything is well combined.
  • Spoon into glasses and chill for 1 hour. Decorate with chocolate curls. To make chocolate curls, simply pull a vegetable peeler along the flat side of a chocolate bar. It works best if the chocolate is slightly warm. This chocolate mocha mousse recipe features in Mary Berry's Cookery Course.

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking pan. Line with parchment paper, then grease and flour the pan.
  • Place the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 4 to 5 minutes, until light and fluffy, scraping down the bowl. On medium speed, add the vanilla, then beat in the eggs, one at a time, until incorporated and the batter is smooth.
  • Sift the flour, baking soda, and salt together in a medium bowl. In another bowl or a liquid measuring cup, whisk together the hot water, cocoa powder, and espresso powder until smooth. Add the half-and-half and whisk until smooth. With the mixer on low, add the flour and chocolate mixtures alternately in thirds, starting and ending with the flour. With a rubber spatula, scrape down the bowl to be sure the batter is well mixed.
  • Pour the batter into the prepared pan, smooth the top, and bake for 25 to 35 minutes, until a cake tester inserted in the center comes out clean. Cool completely in the pan. Turn out onto a flat platter or board and frost the top with the Mocha Frosting. Cut in squares and serve.
  • Place the chocolate, butter, and espresso powder in a bowl. Heat the cream to simmer and pour it over the chocolate mixture, stirring occasionally, until the chocolate is melted. (If the chocolate isn't melted, microwave the mixture for 15 seconds.) Stir in the Kahlua and vanilla and stir until the mixture is smooth. Cover and refrigerate for 30 minutes only, until cool but not cold.
  • Scrape down the bowl and beat the frosting with a handheld mixer on high speed for 15 to 20 seconds only, until the mixture forms soft peaks. (If you overbeat it, it will curdle!) Spread on the cake immediately with a metal spatula.
