Steps:
- Heat oven to 350°F. Line broiler pan with foil; spray foil with cooking spray.
- In large bowl, mix beef, bread crumbs, 1/3 cup of the ketchup, the parsley, onion, salt, pepper and egg. Shape meat mixture into 32 (1 1/4-inch) meatballs, placing 1 potato nugget in center of each. Place meatballs in pan.
- Bake 25 to 28 minutes or until thoroughly cooked.
- In large serving bowl, mix remaining 2/3 cup ketchup and the brown sugar. Add hot cooked meatballs, tossing to coat completely. Serve immediately.

Steps:
- In a large bowl, combine the ground beef, bread, eggs, cheese, parsley and onion and season with salt and pepper to taste.
- For meatballs: Form mixture into golf size balls and brown in a large skillet over medium heat for 5 to 10 minutes, or until well browned. Add to your favorite spaghetti sauce and simmer until meatballs are completely cooked through, about 15 to 20 minutes.
- For meatloaf: Preheat oven to 350 degrees F (175 degrees C). Add 3 tablespoons ketchup to mixture, mix well, form into a loaf and place in a 9x13 inch baking dish. Bake at 350 degrees F (175 degrees C) for 75 to 90 minutes.
- For burgers: Add 3 to 4 tablespoons steak sauce to mixture, mix well and form into patties. Saute in a large skillet over medium heat for 10 to 15 minutes, or to desired doneness.

OLD FASHIONED MEATLOAF MEATBALLS
Sometimes it is necessary for the mouse to outsmart the cat. My husband will not get near meatloaf due to childhood culinary trauma. I adore meatloaf and with a bit of tweaking to my favorite recipe and shaping them into meatballs, we both are happy. But, he still does not know it is meatloaf. I use leftovers to make meatball subs.

Steps:
- Heat olive oil in a medium nonstick skillet over medium heat; add celery, carrot and onion, and sauté 7 minutes or just until tender.
- Stir together celery mixture, ground beef, 1 tablespoon Worcestershire sauce, breadcrumbs, and next 5 ingredients in a large bowl. Shape into 2" meatballs using an ice cream scoop. Place the meatballs in a foil lined baking dish and bake for 30 minutes at 350 degrees.
- Stir together 1 tablespoon Worcestershire sauce, tomato sauce, brown sugar, chili sauce, 1 tablespoon ketchup and red pepper flakes until blended; pour evenly over meatballs, and bake 10 to 15 more minutes or until no longer pink in center. Let stand 10 minutes before serving.

These meat loaves and meatballs were wonderful to have in the freezer when the boys were living at home, time savers! I still make them once in a while for quick suppers in the freezer.

- Combine first 8 ingredients.
- Add ground beef and mix well.
- Divide meat mixture in half.
- For meatloaf: Shape half the meat mixture into 3 loaves and place in a large high sided baking dish.
- Don't allow the loaves to touch while baking.
- Bake at 350°F for 1 hour.
- Cool, wrap in heavy duty foil, label and freeze.
- To serve, thaw loaves and bake in 350°F oven for 30 minutes or until heated through.
- For meatballs: Shape into meatballs, using cookie scoop if available.
- Place on broiler pan so fat can drain while cooking.
- Bake at 350°F for 30 minutes.
- Divide into meal size portions.
- Freeze in single layer on cookie sheets until individually frozen.
- Then freeze meal size portions in bags.
- Add any of your favourite seasonings, herbs etc., to your taste. (We like Italian seasoning and I usually add some cayenne pepper).

ZUCCHINI MASTER MIX FOR- MEATBALLS, BURGERS, MEATLOAF !
I made up this recipe to save money and time... and make a healthier version of our family favorites! We sometimes make the burgers on the outdoor grill or in a skillet in the kitchen... either way is good. I saved money by using zucchini to "pump up the volume" I saved time by making a few different things from one recipe. I made it healthier by adding the veggies! *** Sometimes we add additions things like peppers and minced mushrooms. It is moist and tasty for all of the recipes made from this Master Recipe!

- In a very large bowl (a roast pan will work too), put in onions and zucchini you prepared. Tilt the bowl by placing a folded towel under the end where the veggies are at. Add the eggs to the zucchini liquid. Beat together well. Add the spices and garlic, beat together and stir in the bread crumbs (the bread crumbs will soak up the liquid and be thick) Mix the veggies in well. (Depending on size and thickness of bread slices, you may need to add more bread). This should be about the same thickness as the meats.
- Add the two meats in and knead with your hands to blend all together well. Let this sit for five minutes.
- BURGERS: Form 14 of the size patties you like. Either cook on the outdoor grill or in a skillet. Make them into burgers on a bun the way you like them, or make Salisbury Steaks of them by making a thick gravy to go over them and serve with mashed potatoes and veggies.
- Place patties on metal baking sheet. Freeze.
- When totally frozen, place the patties into zipper bags with wax paper between the patties. Place back into the freezer until ready to use them.
- MEATLOAF: Form into a loaf shape and bake in a 8x8 or 9x9 inch pan (be sure to leave room all the way around the "loaf" for fat drippings). Place in a 350 degree oven and bake for 45 minutes or until done to your liking. Cool and Freeze until needed. Or if serving right away, During the last 15 minutes of baking, drain the oil from the pan and pour either a large can of tomato soup or a large can of spaghetti sauce over the top of the meatloaf and return it to oven to finish baking. Serve with mashed potatoes and corn.
- *** You can make many recipes using this meat mixture. *** Sometimes when I am in a hurry, I just freeze the raw mixture in zipper bags for future use.
