1 egg
1 cup cooked rice (or as much as you want to have. must be already cooked)
1 tablespoon soy sauce
1 tablespoon sesame oil (optional)
1 teaspoon sesame seeds (optional)
2 teaspoons olive oil

Steps:

  • pour a bit of olive oil onto pan, just enough so that the egg doesn't stick to the pan.
  • crack an egg onto the pan, and wait for it to cook just a little bit. (make sure you break the yolk).
  • just kind of scramble them and make sure there are little bits of egg. NOTE: this is not scrambled eggs.
  • when the egg is cooked, move it into a bowl. add rice to the bowl and sort of mix it just so that the egg and rice are no longer separated.
  • add soy sauce and sesame oil. the sesame oil will help the egg and rice mix well. adding sesame seeds is optional, but it gives it a good taste.
  • make sure the soy sauce is well mixed in with the rice.
  • enjoy! :).

Light, fragrant and pillowy Chinese egg fried rice made with veggies, eggs, rice and pantry staples.

3 cups cooked rice ((or 1 cup uncooked rice))
1 to 1½ tablespoon organic soya sauce ((adjust to taste) (or tamari))
1½ teaspoon rice vinegar ((optional, adjust to taste))
1 tablespoon chopped garlic ((2 cloves))
¼ teaspoon crushed black pepper
¼ teaspoon salt ((Or as required))
2 tablespoons oil ((Peanut or any other))
3 to 4 stalks spring onions (chopped, (green and whites separated))
3 eggs (or 2 large )
1 to 1½ tablespoons schezwan sauce (or 1 teaspoon any hot sauce (optional))
½ cup carrot ((chopped, 1 small carrot))
½ cup bell peppers ((julienned or diced))
½ cup cabbage (shredded (or peas or sweet corn))

Steps:

  • Wash rice and soak for 30 mins. Meanwhile bring 5 to 6 cups water to a rolling boil in a large pot. Drain the water from the soaked rice and add it to the boiling water. If you want you can add half teaspoon salt and cook.
  • When the rice is cooked al dente (meaning the rice has a bite to it and not fully cooked), drain it to a colander. Do not over cook the rice. Cool completely.
  • Chop the veggies and garlic. Break the eggs to a bowl and beat until fluffy.
  • To be cooked on high flame. Heat a pan with oil, add chopped garlic. Fry for 30 seconds. Add spring onion whites and fry for a minute.
  • Add chopped veggies and fry for about 2 minutes. Do not make them mushy, they should be crunchy and half cooked. Slide the veggies to one side of the pan.
  • Reduce the flame to medium. Pour eggs and scramble them. Cook till they are soft, fluffy almost cooked but not overcooked.
  • Increase the heat and pour the soya sauce, vinegar and any hot sauce if you prefer. The soya hits the hot pan and emits some steam. This imparts a nice Chinese flavor.
  • Add cooled rice, ground black pepper and spring onion greens. If you want you may add some toasted sesame oil and it's optional.
  • Fry on the highest flame for about 2 minutes. Adjust salt and spice as needed.
  • Garnish egg fried rice with some spring onions and serve.

2 tablespoons vegetable oil
2 cups sliced shiitake mushrooms (about 6 ounces)
1 small bunch scallions, chopped
1 cup frozen shelled edamame, thawed (about 6 ounces)
1 8-ounce can sliced water chestnuts, drained and rinsed
1 cup bean sprouts
1 cup snow peas, trimmed and halved (about 3 ounces)
1/4 cup low-sodium teriyaki sauce
1 tablespoon Sriracha, plus more for serving
3 cups cooked brown rice
4 large eggs

Steps:

  • Put the broccoli in a large microwave-safe dish; add 2 tablespoons water, cover with plastic wrap and microwave until bright green, about 2 minutes. Drain and set aside.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Add the mushrooms in a single layer and cook, undisturbed, until browned around the edges, about 4 minutes. Stir in the broccoli. Cook, stirring occasionally, until the broccoli is warmed through, about 2 minutes. Add the scallions, edamame, water chestnuts, bean sprouts, snow peas, teriyaki sauce and Sriracha. Continue to cook, stirring, until warmed through, about 4 minutes.
  • Divide the rice and vegetables among bowls. Wipe the skillet clean and heat the remaining 1 tablespoon vegetable oil over medium-high heat. Crack in the eggs and cook until the whites are set, about 2 minutes. Add a fried egg to each rice bowl; top with more Sriracha.

The recipe title says it all. I remember eating this all the time as a kid. I think my mother concocted it for me one day when she was busy. Apparently other Korean kids have eaten this, too. I was hooked at the time! I now realize that it isn't healthy at all, but that doesn't stop me from occassionally indulging when there is absolutely nothing else to eat in the house! Adjust the measured ingredients to your preference. The measurements were just guesstimates. I used white glutinous rice, but I'm sure any kind of white rice will do. The glutinous rice, however, does soak up that butter/oil, so it gets soggy if you don't eat it right away.

2 tablespoons toasted sesame seeds

Steps:

  • Mix all of the ingredients (except for the lightly fried egg) together in a bowl. Top with the fried egg (strips or whole).
  • Enjoy!
  • *The "lightly fried egg" is just cracked over a skillet in a little bit of oil. (Is that stir-frying? In case you can't tell, I'm really a novice cook!) Or you could whisk an egg and pour it over a griddle/skillet, as if you were going to make an omelette. Then you slice the egg in little strips.

2 cups uncooked Calrose rice
2 cups water
2 tbsp avocado oil
2 cloves garlic minced
1 cup onion diced
1/2 cup carrot diced
1/2 cups frozen peas
2 tablespoon unsalted butter
1/2 tablespoon toasted sesame oil
1/4 cup + 2 tablespoons soy sauce
1/4 cup teriyaki sauce
2 eggs (scrambled)
pinch of salt and pepper to taste
2 Green onion for garnish (chopped)

Steps:

  • Start off by cooking 2 cups of Calrose white rice with 2 cups of water in a rice cooker. Once it's cooked, take it out and let it cool completely. You want to make sure that the rice is fully cooled or else your fried rice will be mushy.
  • In the meantime, add 2 tablespoons of avocado oil into a large 14-inch wok. Bring the heat to high. Then add 2 minced garlic cloves, 1 cup of diced onion, and 1/2 cup diced carrot. Stir for about 2-3 minutes until the onion becomes translucent. I recommend using a wooden spoon here.
  • Then add 1/2 cup frozen peas and stir for 1-2 minutes.
  • Now add 2 tablespoons unsalted butter, 1/2 tablespoon toasted sesame oil, 1/4 cup + 2 tablespoons soy sauce, and 1/4 cup teriyaki sauce. Quickly stir the sauce into the vegetables.
  • Once the sauce is simmering, add your cooled white rice. Stir the rice over high heat until it is well coated in the sauce.
  • Now whisk up 2 large eggs with a pinch of salt and pepper. Then push the fried rice to the sides of the wok to expose the center and add the scrambled eggs in the middle.
  • Stir only in the crockpot get just until the eggs are scrambled and cooked. Then mix the eggs with the rest of the fried rice and garnish with 2 chopped green onions. Serve warm with yum yum sauce.
