CHEF JOHN'S FRESH BERRY FOOL
While certainly not light on the calorie counter, this berry fool (from the French 'fouler' meaning 'to mash') is shockingly airy on the palate. It's that contrast between the rich, fluffy cream and the syrupy, tangy fruit that makes this so much greater than the sum of its parts. Fresh berries are a classic, but this would work with peeled, diced, ripe peaches.

MIXED BERRY FOOL (REDUCED CALORIE)
I got this reduced-calorie recipe from Family Circle magazine. According to the magazine, "English cooks made the original fools with pureed gooseberries folded into whipped cream, but mixed berries are also irresistible." The prep time does not include 50 minutes for freezing.

- Put the strawberries in a medium saucepan with the raspberries, blueberries and sugar. Place over low heat and stir gently until the sugar dissolves. Increase the heat to medium-low and bring to a simmer. Simmer for 4-5 minutes or until the liquid has reduced slightly and the berries begin to collapse. Set aside to cool to room temperature, then cover and refrigerate until well chilled.
- Use an electric mixer with a whisk attachment or a balloon whisk to whisk the cream in a medium bowl until very soft peaks form. Drizzle half the berry mixture over the cream and then partially fold through to create a swirled effect.
- Spoon the cream mixture into serving glasses, layering with the remaining berry mixture and finishing with berry mixture. Serve immediately.
