- Mix together until completely combined.
- To put the dessert together, place 1/2 cup of the berry mixture together in a small serving bowl.
- Top with 2 tablespoons of the Honey Maple Mascarpone mixture.
- Sprinkle with raw sliced almonds.

- Add the milk, water, eggs, butter and vanilla extract, and process until smooth.
- Set aside for 30 minutes.
- FOR THE FRUIT:.
- While batter rests, hull and halve the strawberries.
- Toss with blackberries and raspberries, sugar and Grand Marnier, if using, in a medium bowl; set aside.
- FOR THE FILLING:.
- Whisk the cheeses with the sugar, orange zest and juice, and the vanilla extract.
- TO MAKE THE CREPES:.
- Heat a 6" nonstick skillet or crepe pan over medium heat until a drop of water bounces and sizzles briefly on its surface before evaporating.
- Quickly pour in about 2 tablespoons of crepe batter and swirl it to coat the skillet evenly.
- Cook until the batter sets, about 30 seconds.
- Flip the crepe and cook the other side until just barely golden.
- Repeat with remaining batter, stacking the crepes as they cook.

- In a bowl, mix together the eggs, milk, sugar, and vanilla. Stir in the flour and mix until well-combined.
- Using a non-stick pan that is approximately 6-7 inches in diameter, heat pan on medium heat. When pan is heated, add a small pat of butter. Use a heat resistant brush to spread butter evenly around the pan.

You can also lower the heat.
- Cook the crêpe for approximately 2 minutes and then using a fork, gently turn the crêpe over and cook it on the other side for another 2 minutes or so until golden on both sides. You can turn it back to the other side again if needed. Remove the crêpe from the pan and put onto some wax paper to cool. Repeat with remaining batter.
