A vibrant, nutrient-packed smoothie made with detoxifying beetroot and fresh fruit. Subtly sweet, perfectly tart, and ready with just 1 blender, 3 ingredients, and 5 minutes.

1/3 cup peeled + chopped raw beet ((organic when possible))
1 ⅓ cup frozen strawberries ((if fresh, add ice // organic when possible))
1/4 ripe frozen banana ((optional // peeled + sliced))
2/3 cup fresh apple juice
Fresh mint or shredded coconut ((for garnish // optional))

Steps:

  • Add beet, strawberries, banana (optional for sweetness) and apple juice to a blender and blend on high until creamy and smooth, scraping down sides as needed.
  • Taste and adjust flavor as needed, adding more banana for sweetness, apple juice to thin, or strawberries for a more intense fruit flavor.
  • Divide between two serving glasses and enjoy. Optional: Garnish with banana slices, fresh mint, and/or shredded coconut. Best when fresh, though leftovers will keep covered in the refrigerator for up to 2 days. Freeze leftovers in ice cube trays or popsicle molds for an afternoon pick-me-up.

  • Add all ingredients to a blender and blend on high until creamy and smooth.
  • Serve and enjoy immediately!

1/2 cup freshly squeezed orange juice
1 cup mixed frozen berries or blueberries
2 tablespoons granola
1/3 cup diced beet, either raw or roasted (50 grams)
1/4 cup plain low-fat yogurt or low-fat coconut milk
1 teaspoon honey or agave syrup
2 or 3 ice cubes
sliced orange for garnish (optional)

Steps:

  • Place all of the ingredients in a blender and blend for 1 full minute. Pour into a glass, garnish with an orange slice and enjoy

2 cups mixed frozen red berries such as strawberries and raspberries
1 small red beet, peeled and thinly sliced
1 tablespoon fresh lemon juice
1 tablespoon honey
2 teaspoons unrefined extra-virgin coconut oil

Steps:

  • Put the berries, 1/2 cup cold water, beet, lemon juice, honey and coconut oil into a blender. Blend on high until smooth, turning off the blender and pushing down on the ingredients with a spatula or wooden spoon as needed to help the blending process. Add 1 to 2 tablespoons more water if needed to adjust consistency.

  • Roast the beets. Preheat oven to 375°F. Place candy beets on a square of aluminum foil. Drizzle with a little canola oil, then wrap the foil tightly around the beets. Cook beets in the oven until an inserted knife meets little resistance (25 – 35 minutes). Remove from the oven and set aside to cool.
  • Prepare the beets. Once the beets are cool enough to handle, rub the skin off using a paper towel. You can also use a spoon to gently scrape off any skin. Discard skins. Rough chop the two beets and measure out a heaping 1/3 cup. Save any leftovers for another use.
  • Assemble the smoothie. To a blender add Greek yogurt, honey, orange juice, almonds, berries, chopped beets and ice. Blend until smooth (at least 1 minute).
  • Pour smoothie into a glass and garnish with slice of fresh orange. You can prepare this smoothie a few hours in advance, but it is best enjoyed immediately.
