6 potatoes, thinly sliced and divided
2 onions, thinly sliced and divided
1½ pounds ground beef, divided
2- 14½ ounce cans crushed tomatoes, divided
salt and pepper for taste

Steps:

  • Place a layer of potatoes in the bottom of a lightly greased 13″ x 9″ baking pan.
  • id="instruction-step-2″>2. Top with a layer of onions.
  • id="instruction-step-3″>3. Add a layer of beef, a layer of tomatoes, salt and pepper.
  • id="instruction-step-4″>4. Continue to layer until all ingredients have been used.
  • id="instruction-step-5″>5. Bake 350°F for one hour.

You can prepare soup, make dips and even season meats with this handy mix from June Mullins of Livonia, Missouri. "My grandchildren really enjoy it as a coating on oven-roasted potatoes," she says. "It's an inexpensive substitute for the envelopes you get at the store."

3/4 cup dried minced onion
1/3 cup beef bouillon granules
1/4 cup onion powder
1/4 teaspoon sugar
1/4 teaspoon celery seed
FOR ONION SOUP:
4 cups water
FOR ROASTED POTATOES
6 medium potatoes (about 2 pounds), cut into 1/2-inch cubes
1/3 cup olive oil
FOR ONION DIP:
2 cups sour cream
Assorted raw vegetables, chips or crackers

Steps:

  • Combine the first 5 ingredients. Store in an airtight container in a cool, dry place for up to 1 year. Yield: 4 batches (20 tablespoons total)., To prepare onion soup: In a saucepan, combine water and 5 tablespoons onion soup mix. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat; simmer, uncovered, for 10 minutes, stirring occasionally. Yield: 3 servings., To prepare roasted potatoes: In a bowl, toss potatoes and oil. Sprinkle with 5 tablespoons onion soup mix; toss to coat. Transfer to an ungreased 15x10x1-in. baking pan. Bake, uncovered, at 450° for 35-40 minutes or until tender, stirring occasionally. Yield: 6 servings. , To prepare onion dip: In a bowl, combine sour cream and 5 tablespoons onion soup mix; mix well. Refrigerate for at least 2 hours. Serve with vegetables, chips or crackers.

9 cups sifted all-purpose flour
1/3 cup double acting baking powder
1 cup nonfat milk, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons nonfat milk
4 teaspoons salt
1 3/4 cup vegetable shortening
OR
1 1/2 cup lard

Steps:

  • Stir baking powder, dry milk, and salt into the flour. Mix well. Cut fat into flour mixture until all particles of fat are thoroughly coated and mixture resembles coarse cornmeal. Use anywhere calling for biscuit mix.

Here is an all-purpose baking mix that I make up for easy baking. I got this several years ago from my mother in law, and it is fantastic! My husband does not like the taste of Bisquik or other store bought biscuit mixes, but he loves this one, and we save money making our own. It only takes a few minutes to make it up, and then you have it ready to go whenever you need it! Use it in in place of anything that calls for biscuit mix or use it in your own recipe, by using 1 1/2 cups of mix for each cup of flour called for in your recipe. The mix already has baking powder,salt, fat, and milk.

9 cups all-purpose flour
1/3 cup double-acting baking powder
1 cup powdered milk
2 tablespoons powdered milk
4 teaspoons salt
1 3/4 cups shortening

Steps:

  • Stir baking powder, dry milk, and salt into the flour.
  • Using an electric mixer, mix shortening into the flour mixture until all the particles of shortening are thouroughly coated and the mixture resembles coarse cornmeal.
  • Store in an airtight container in a cool dry place. No need to refrigerate.
