CROCKPOT MISSISSIPPI POT ROAST
Delicious tender beef made in a Crock Pot. This Mississippi pot roast will be a new family favorite meal. Serve as a sandwich or on top of cauliflower mash to keep the meal low carb. Be sure to make the homemade ranch dressing mix!

Steps:
- Place chuck roast, butter and pepperoncini juice into the crock pot.
- Sprinkle over with dry ranch dressing mix and au jus gravy mix. Add in pepperoncini peppers.
- Salt and pepper to taste and cook on low heat for about 8 hours or until roast is fork-tender.
- Shred roast with a fork and serve.

- Heat oven to 350°F. Spray 2- to 2 1/2-quart oval casserole or baking dish with cooking spray.
- In 4-quart saucepan, heat water and milk to boiling; remove from heat. Stir in both pouches of potatoes just until moistened. Let stand about 1 minute or until liquid is absorbed. Beat with fork until smooth.
- Set 1/4 cup of the bacon aside for garnish. Gently fold mayonnaise, 1 1/2 cups of the cheese and remaining bacon into the mashed potatoes. Spoon mixture into baking dish. Bake uncovered 25 minutes. Sprinkle top with reserved bacon and remaining 1/2 cup cheese. Bake 5 minutes longer or until cheese is melted. Sprinkle with green onions.

Steps:
- 1. Saute the sliced onions in the bacon grease or shortening until golden brown over a medium heat.
- 2. Slice the potatoes very thin and layer on the smothered onions, careful to season with salt/pepper/garlic powder on each layer of potatoes.
- 3. Stir often while cooking over a medium heat with a lid covering the skillet.
- 4. As the potatoes soften, use the end of the spatula to mash and break the potatoes up. The onions will get browner and caramelize more! Enjoy.

- Place chicken into Crockpot and sprinkle both seasoning packets over the top. Cut butter into 1 tbsp pieces and place on top too.
- Add peppers into slow cooker + juice from the jar as well.
- Close securely with lid and set to low temp. for 7-8 hours ideally, or 4 hours on high.
- If done the meat will shred very easily using 2 forks, if not add more time.
- Remove any bones if you have used a whole bird, stir ingredients together and serve on slider buns or with rice.

- Put the roast in a slow cooker. Sprinkle au jus gravy mix and ranch dressing mix over the roast add the butter, and pepperoncini peppers and a little of the pepper juice if you like. Add fresh cracked pepper and cook on low until tender, about 8 hours. (For Instant Pot Cook at high pressure on manual for 90 minutes. Do not allow warming cycle to kick on. Then use natural release for 15 minutes and switch to quick release.)
- To make the gravy, pour the liquid from the crock pot into a measuring cup. Skim off the fat. Measure two cups of the liquid, adding water if needed. Transfer to a sauce pan reserving 1/2 cup of the liquid.
- Stir the cornstarch into the reserved liquid, then stir into the liquid in the sauce pan. Heat, stirring frequently, until the gravy is thick and bubbly. Taste and season with salt and pepper, if needed. Serve the roast with the gravy.
