ALWAYS JUICY BAKED HAM
A never-fail recipe that is a family favorite. Frequent basting during the cooking time is key to a delicious result. We can't help taking several tester bites while waiting for dinner to be ready. Makes great leftovers for sandwiches. A Maritime tradition with home-baked beans and bakery fresh bread. Also fantastic with potato scallop and buttered green beans.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Whisk beer, brown sugar, and Dijon mustard together in a bowl.
- Place ham cut side up in a large roasting pan; pour beer mixture over ham.
- Bake in the preheated oven until ham begins to brown, about 15 minutes, basting 4 to 5 times.
- Reduce oven temperature to 350 degrees F (175 degrees C). Cover roasting pan with lid or aluminum foil.
- Continue to bake until ham is heated through, about 90 minutes more, basting frequently.
- Remove lid and bake until ham is well browned, about 15 minutes more. Allow ham to rest for 10 to 15 minutes before carving.

BAKED HAM WITH BROWN SUGAR-HONEY GLAZE

- Adjust the oven racks to accommodate a large roasting pan. Fit the pan with a shallow roasting rack. Preheat the oven to 350 degrees F.
- Unwrap the ham and rinse it under cold water. Place it on the rack in the roasting pan. Cover with foil and bake 1 hour 40 minutes. Meanwhile, combine the brown sugar and honey in a saucepan and cook over medium heat until the mixture is smooth and the sugar has dissolved.
- Pour the brown sugar glaze over the ham and continue roasting1 hour 40 minutes more, basting at least twice with the drippings in the roaster. (To adjust the total roasting time for a smaller or larger ham, calculate 20 minutes per pound.) Check for doneness by inserting a meat thermometer into a meaty spot (not into fat or touching the bone)-it should register 160 degrees F.
- Let the ham stand 15 minutes before slicing to allow the juices to set. (You can make the ham up to 2 hours ahead; tent with foil and serve at room temperature.)
MISSISSIPPI BAKED HAM
My partner's family is from Mississippi, and this is their recipe for Easter ham. I don't like ham at all, but I thought this was ok. Any ham-lover would adore this recipe, I think. Posted here mostly for safe-keeping, as I'll be making it every year.

- Preheat oven to 325°F.
- Rinse and dry ham. Score skin of ham with a knife in a criss-crossing 1-inch diamond pattern all around. Stuff one clove in every gap where the crosses intersect.
- In a baking pan, whisk together the cola and reserved pinapple syrup. Place ham cut side down in the pan. Glaze with the cola/syrup mixture. Pat brown sugar all over the ham, then cover with foil.
- Bake, covered, for 15-20 minutes per pound or until internal temperature reaches 135-145°F (cooking these big chunks of meat always takes me longer than the packaging says- a probe thermometer really helps here). Baste every 20 minutes or so. Halfway through the cooking time, remove foil and stick the pineapple slices onto the ham with toothpicks. Put a maraschino cherry in each pineapple slice hole, also with a toothpick. Continue baking, uncovered, and don't forget to baste.
- For a more caramelized glaze on the ham, just before it has finished cooking increase the oven temperature to 450°F Check it frequently and baste constantly to make sure it does not burn.
- Remove from oven and let sit for at least 30 minutes before slicing.

- Remove the ham from the refrigerator 1-2 hours before it needs to go into the oven. This will allow the meat to come a bit closer to room temperature before it goes into the oven.
- Place the ham on a large cutting board and score the ham with cuts, 1/2" deep in a diamond pattern. If that sounds confusing, look down at the ham and start in a straight line from one end to the other making a 1/2" deep cut all the way across and over the top of the ham. Then repeat this cut, about an inch apart, slicing the ham from one side to the other. Then turn the ham 90 degrees and repeat, straight cuts, all the way across the ham. It should resemble a checkerboard when you are finished. This process allows the glaze to penetrate deeper into the ham. It is well-worth the effort and it only takes a few minutes.
- Preheat the oven to 325 degrees. Line a large roasting pan or a heavy rimmed baking sheet with foil and place the ham cut side down in the pan. Roast 45-50 minutes. While the ham begins roasting, combine the sugar, vinegar and mustard in a small cup or bowl. Set aside next to the stove.
- Remove the ham from the oven and baste generously with the glaze, using about 1/4 of the glaze. Continue to roast the ham until it is deep brown and glazed, brushing the ham with more glaze every 10 minutes or so.
