PUFF PASTRY CHICKEN POTPIE

- Preheat oven to 400°. On a lightly floured surface, roll each pastry sheet into a 12x10-in. rectangle. Cut 1 sheet crosswise into six 2-in. strips; cut remaining sheet lengthwise into five 2-in. strips. On a baking sheet, closely weave strips to make a 12x10-in. lattice. Freeze while making filling., Toss chicken with 1/2 teaspoon each salt and pepper. In a large skillet, heat 1 tablespoon butter over medium-high heat; saute chicken until browned, 5-7 minutes. Remove from pan., In same skillet, heat remaining butter over medium-high heat; saute onion until tender, 5-7 minutes. Stir in garlic and herbs; cook 1 minute. Stir in flour until blended; cook and stir 1 minute. Gradually stir in broth and 1 cup cream. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes., Stir in vegetables, lemon juice, chicken and the remaining salt and pepper; return to a boil. Transfer to a greased 2-1/2-qt. oblong baking dish. Top with lattice, trimming to fit., Whisk together egg yolk and remaining cream; brush over pastry. Bake, uncovered, until filling is bubbly and pastry is golden brown, 45-55 minutes. Cover loosely with foil if pastry starts getting too dark. Let stand 15 minutes before serving.

This recipe was given to me by my girl friend Mary, and is DELICIOUS....has a sweet and sour flavor. We ate this chicken with brown rice and a green veggie. The sauce is AWESOME over the rice!!!! YUMMY!!!!

- In 9x13 glass baking dish, mix with a whisk: onion soup mix, cranberry sauce, and catalina dressing.
- Place chicken in the mixture; then flip chicken, so that it is coated.

Chicken breasts with herbed cream cheese, wrapped in puff pastry and baked. A very easy but delicious dish, good for company! This recipe is derived from a dish my mother-in-law makes.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
- Heat vegetable oil in a large skillet over medium heat. Sprinkle chicken breasts with salt and pepper, and place in hot oil; cook for 5 minutes, turning to brown evenly. Remove skillet from heat.
- Roll out pastry shells as thinly as possible so that it is big enough to fit around a chicken breast. Spread 2 ounces of cream cheese on one chicken breast, place in the center of a pastry sheet; fold the pastry around the chicken, and pinch the pastry edges together very tightly to seal. Repeat with remaining ingredients. Place the pastry-wrapped chicken breasts on a greased baking sheet.
- Bake for 12 to 15 minutes, until golden brown.

MISS MARY'S FAMOUS CHICKEN WITH PASTRY

Steps:
- Place chicken, onion, celery and salt in a large pot. Add enough water to completely cover the chicken. Bring to a boil; reduce heat and simmer until chicken is tender and cooked through, about 1 hour.
- Remove chicken from broth and cool enough to handle. Pick chicken off the bones and discard bones.
- Grease a 9 x 13-inch baking dish.
- Remove celery and onion from broth. Measure broth and return 3 cups to the pot.
- In a small bowl, blend 1/4 cup flour with 1/4 cup water to make a smooth paste. Stir into hot broth. Cook 5 to 10 minutes or until broth is thickened. Season with salt and pepper. Pour over chicken.
- For Pastry:.
- In a large bowl, combine 2 cups flour and 1 teaspoon salt.
- Cut in shortening with a pastry blender or two knives until mixture forms coarse crumbs.
- Sprinkle with cold water and mix until dough hold together and will form a ball.
- Roll out on a floured board or pastry cloth to about 1/4 inch thickness.
- Cut into strips and place over the chicken. Bake at 375 degrees F until the pastry is golden brown.
