3 lbs yellow turnips
1/4 cup butter
1 1/2 tablespoons sugar
1 1/2 teaspoons salt
pepper
3 eggs
1 cup soft stale bread crumb
1 1/2 teaspoons lemon juice

Steps:

  • Cook turnip until tender.
  • Drain and mash.
  • Add butter, sugar,salt and pepper.( I don't add as much salt as recipe calls for).
  • Beat with electric beater.
  • Add eggs one at a time and continue beating until light and fluffy.
  • Stir in bread crumbs and lemon juice.
  • Pour into 1-1/2 qt casserole.
  • Bake 375 for 50 minute.

1 large turnip, peeled and cubed
2 tablespoons butter
1 pinch salt and ground black pepper
2 large apples - peeled, cored, and diced
2 tablespoons brown sugar
1 pinch ground cinnamon
¼ cup all-purpose flour
¼ cup brown sugar
2 tablespoons butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch casserole dish.
  • Place turnip into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer to a bowl.
  • Mash turnip, 2 tablespoons butter, salt, and pepper together until smooth.
  • Toss apples with 2 tablespoons brown sugar and cinnamon in a bowl.
  • Spread half the turnip mixture into the prepared casserole dish; top with half the apples. Repeat with remaining turnip mixture and apple mixture.
  • Mix flour, 1/4 cup brown sugar, and 2 tablespoons softened butter by hand in a bowl until mixture is an evenly coarse meal-texture; sprinkle over casserole.
  • Bake in the preheated oven until cooked through and bubbling, about 1 hour.

CLASSIC TURNIP AND APPLE CASSEROLE

I first had this recipe at my husband's aunt's home back in 1979; got the recipe from her and have been making it to serve with turkey dinner ever since. I love the apples and turnip together! If you want to make it ahead of time, you can; just make it up to the layering stage then cover tightly and refrigerate. Put topping on, though, just before it goes into the oven.

1 large yellow turnip (known as a rutabaga, sometimes called a Swede)
1 tablespoon butter
2 tablespoons light cream (you can use milk)
2 apples (I use macintosh)
1/4 cup packed brown sugar
1 pinch ground cinnamon
1/3 cup flour
1/3 cup packed brown sugar
2 tablespoons butter

Steps:

  • Preheat oven to 350F; butter a casserole dish (or spray with Pam) and set aside.
  • Peel and dice turnip (this can be a tough job, as turnips are very dense) and place in a large pot.
  • Cover with cold, lightly salted water and bring to a boil.
  • Boil until turnip is tender (this takes longer than potatoes, usually), then drain and return to the pot.
  • Mash turnip with the 1 tbsp butter and cream; stir in 1/4 cup brown sugar and the cinnamon; set aside.
  • Peel apples, core, and slice.
  • In prepared casserole dish, layer 1/3 of the turnip, then half the sliced apples, then 1/3 of the turnip, then the remaining apples, then the remaining turnip; smooth top.
  • At this point, you could cover the dish tightly and refrigerate for several hours; don't put topping on until you're ready to pop this into the oven.
  • When ready to bake, combine topping ingredients in a small bowl until they are crumbly; sprinkle over top of turnip.
  • Bake in preheated oven for one hour; serve.

4 tablespoons butter, divided
2 large eggs

1/2 cup dry bread crumbs

  • Preheat oven to 375°. Place turnips in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer 10-12 minutes or until tender. Drain. , In a small bowl, combine turnips, 2 tablespoons butter and eggs. Combine flour, brown sugar, baking powder, salt, pepper and nutmeg; add to turnip mixture and mix well. 2 pounds turnips, peeled and thinly sliced
1 cup heavy cream
1 cup chicken broth, homemade or low-sodium canned
1 tablespoon unsalted butter, melted
1/2 teaspoon salt
1 teaspoon freshly ground pepper
3/4 cups fresh bread crumbs, lightly toasted

Steps:

  • Place turnips in a saucepan. Cover with water and simmer gently over medium heat until tender, about 20 minutes. Meanwhile, pour the cream and chicken broth into a small saucepan. Bring to a boil and simmer over medium heat until it thickens slightly, about 5 minutes.
  • Brush a baking dish with the melted butter. Using a slotted spoon, transfer the turnips to the dish. Add the cream mixture. Season with salt and pepper and top with bread crumbs. Bake until golden brown, about 15 to 20 minutes. Serve immediately.

There are many different things that can be added to this, depending on your tastes. Even some kind of cooked meat to make a main dish casserole. Feel free to experiment.

2 lbs turnips, peeled and thinly sliced
6 ounces bacon, fried
2 tablespoons reserved bacon drippings
1 1/2 teaspoons sugar or 1 1/2 teaspoons Splenda sugar substitute
Tabasco sauce, to taste
1 cup chicken broth
1 cup heavy cream
salt and black pepper

Steps:

  • Preheat oven to 350º F.
  • Butter a 1 1/2-quart casserole dish.
  • Place turnips in a large saucepan with water to cover, bacon grease and Splenda.
  • Bring to a boil, reduce heat to moderate, simmer till tender, about 20 minutes; remove from heat.
  • Stir in a dash of Tabasco and crisp, crumbled bacon.
  • Meanwhile, combine broth and heavy cream in a medium-size saucepan, bring to a low boil over moderate heat.
  • Cook till slightly thickened, about 20 minutes.
  • With a slotted spoon, transfer turnips to prepared casserole and pour cream mixture over top.
  • Season with salt and pepper and bake 'til golden brown, about 30 minutes.
  • Serve hot.
