A delicious four-ingredient condiment that's made with pantry ingredients. Consider it a Japanese tartar sauce and know that you'll want to dollop it on everything, especially Fried Catfish.

- Whisk together all ingredients until thoroughly combined. Serve with poached, sauteed, steamed, roasted, or grilled fish. Aioli can be refrigerated in an airtight container up to 3 days.
MISO MAYONNAISE
Don't limit your use of miso to soup! It makes for a fantastic compound butter. It's terrific cut with mirin and slathered over chicken. And here, stirred into mayonnaise, it becomes a consciousness-expanding condiment.

- Cook your dried noodles by soaking them in boiled water for 5 minutes, or as per your packet instructions.

- Prepare the Miso Aioli Dip first. In a small bowl, combine white miso, mayonnaise, finely chopped shallots, lemon juice, tamari soy sauce and pepper. Set aside while you cook the peppers.

- This recipe works best with day-old quinoa but will work with freshly cooked quinoa as well. If you don’t have cooked quinoa, start with that. Rinse the quinoa well in a fine mesh sieve under cold running water. Place in a saucepan with 1 cup of water and a pinch of salt and bring to the boil. Cook for 12 to 15 minutes. Depending on the brand it might take up to 20 minutes or even longer to cook. I always check after 12 minutes to see if the quinoa is tender. Drain in a sieve and set aside to cool.
