This was an experiment of mine when I ran out of milk. The result was extremely creamy and flavorful scrambled eggs.

1/2 cup spinach
1/8 cup onion (chopped)
butter-flavored cooking spray
3 tablespoons Miracle Whip light
4 large eggs
1/2 cup cheddar cheese (shredded)
paprika
pepper
salt (optional)

Steps:

  • Warm a skillet to medium heat.
  • Coat skillet with butter spray.
  • Add onion - cook until slightly clear. If using frozen spinach, add with onion. When onion is clear and frozen spinach is partially cooked, move on to next step.
  • Whisk eggs and Miracle Whip until bubbly. This makes the eggs fluffier.
  • Pour eggs over onions. If using fresh spinach, add now. Scramble.
  • When eggs start looking creamy instead of clear, add cheese. Scramble.
  • When cheese melts and eggs are cooked to your liking, sprinkle paprika and pepper (and salt, if needed) over the top.
  • Let sit for a minute or two with heat turned off. Serve.

Mom's original recipe with a little kick of wasabi mayonnaise to give this classic a more modern edge.

12 eggs
¼ cup wasabi mayonnaise
6 tablespoons creamy salad dressing, e.g. Miracle Whip ™
2 tablespoons sweet pickle relish
1 tablespoon prepared yellow mustard
garlic salt to taste
ground black pepper to taste
1 pinch paprika, for garnish

Steps:

  • Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool under cold running water, and peel. Cut the eggs in half, and place the yolks in a bowl. Reserve the whites.
  • Mix the wasabi mayonnaise, salad dressing, relish, mustard, garlic salt and pepper into the yolks. Spoon into the awaiting egg white halves. Sprinkle paprika over the top. Refrigerate until serving.

I'm often asked to bring these to potlucks and family get-to-gethers. I always have to make extra, because my kids (even the biggest kid - DH) sneak them before I can get out the door with them. Three of the top U.S. egg producing states are in the midwest. No wonder these little jewels are so popular at those church potlucks in the Midwestern U.S. region.

Number Of Ingredients 10

12 eggs, hard boiled and peeled
1/2 cup mayonnaise (I prefer Miracle Whip)
1 tablespoon plain yellow mustard
1 tablespoon pickle juice (juice from the jar)
1 teaspoon celery seed
1/2-1 teaspoon salt (according to taste)
1/4 teaspoon white pepper (or according to taste)
1 teaspoon sugar (or according to taste)
2 tablespoons minced scallions or 2 tablespoons chives
1 teaspoon paprika

Steps:

  • Cut boiled eggs in half, lengthwise.
  • Remove yolk and place in medium sized bowl.
  • Place egg whites on serving platter.
  • Add mayonnaise (or Miracle Whip), mustard, pickle juice, celery seed, salt, pepper, sugar, and 1 tbsp scallions (or chives) to the bowl with the yolks.
  • Mix until a creamy consistency.
  • Add more mayonnaise, if necessary, for a really creamy texture.
  • Spoon or pipe into the hollowed out yolk portion of the egg white.
  • Sprinkle with paprika, and the remaining 1 tbsp minced scallion (or chives).
  • Chill at least one hour before serving.
