1 (20 ounce) can asparagus, undrained
1 (10 ounce) box Cheez-It crackers, crushed
2 eggs, hard-boiled and sliced
1 (10 ounce) can cream of mushroom soup
1/2 cup mushroom, chopped

Steps:

  • Preheat oven to 350°F
  • Mix asparagus and juice with cream of mushroom soup and mushrooms. Put half crackers on bottom of a greased baking dish.
  • Pour soup mixture onto crackers, layer with sliced egg. Top with other half of crackers.
  • Cook for 30 minutes or until bubbly.

1/2 cup diced onion
1 garlic clove, minced
2 tablespoons vegetable oil
2 cups shredded sharp cheddar cheese
1/4 cup dry bread crumbs
2 tablespoons minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 to 1/4 teaspoon dried oregano
1/8 teaspoon hot pepper sauce
4 large eggs, beaten
1 pound fresh asparagus, trimmed and cut into 1/2-inch pieces

Steps:

  • In a skillet, saute onion and garlic in oil until tender. Combine cheese, bread crumbs, parsley, salt, pepper, oregano and hot pepper sauce. Stir in the onion mixture and eggs. , Cook asparagus in a small amount of water until crisp-tender, about 3-4 minutes; drain well. , Stir into cheese mixture. Pour into a greased 9-in. square baking pan. Bake at 350° for 30 minutes or until a knife inserted in the center comes out clean. Let stand for 15 minutes. Cut into small squares; serve warm.

1 lb fresh asparagus
1 1/2 tablespoons flour
1/4 teaspoon salt
pepper
3/4 cup skim evaporated milk
1 cup sharp cheddar cheese, grated

Steps:

  • Wash and trim asparagus. Asparagus breaks naturally at the tough part of the stalk.
  • Lay the spears in a 5 quart slow cooker.
  • Stir flour, salt and pepper together in saucepan. Whisk in evaporated skim milk gradually until no lumps remain.
  • Heat and stir until boiling and thickened.
  • Stir in cheese to melt.
  • Pour over asparagus. Cover. Cook on low for 2 to 3 hours.
  • Check for doneness at 2 hours if you like it crisp, let it cook longer if you like it softer.

2 pounds fresh asparagus, trimmed, cut into 1-inch pieces
1/4 cup butter, cubed
1/4 cup all-purpose flour
2 cups whole milk or half-and-half cream
1/2 teaspoon salt
1/4 teaspoon pepper
6 hard-boiled large eggs, sliced
1 cup shredded cheddar cheese
1 cup crushed potato chips

Steps:

  • In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender. Drain well; set aside. , In a large saucepan over medium heat, melt butter. Stir in flour until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Add salt and pepper. , Preheat oven to 350°. In an ungreased 11x7-in. baking dish, layer half of the asparagus. 2 (15 ounce) cans asparagus
4 tablespoons butter
2 cups shredded cheddar cheese
1 pint light cream
6 tablespoons flour
salt
pepper

Steps:

  • Preheat oven to 400 degrees.
  • Drain liquid from canned asparagus into a liquid measuring cup and add enough cream to equal 3 cups of liquid.
  • Place drained asparagus in a casserole dish.
  • Melt butter over medium heat.
  • Whisk in flour and a dash of salt and pepper, allow to cook for 2 minutes.
  • Add cream mixture and cook over medium heat, stirring often, until sauce is thickened and bubbly.
  • Turn heat to low; add cheese and stir until cheese is melted.
  • Pour cheese sauce over the asparagus and heat in the oven for 15-20 minutes.

1 bunch asparagus, woody ends trimmed
3 Tbsp butter, melted
1 Tbsp grated Parmesan cheese
3/4 c shredded mozzarella cheese
Italian seasoning
1/2 tsp house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)

Steps:

  • 1. Line a baking sheet with some tinfoil. Place the asparagus on the baking sheet and drizzle with the melted butter.
  • 2. Sprinkle the house seasoning and Parmesan cheese over the top.
  • 3. Place in a 400 degree oven for 15 minutes.
  • 4. Remove and top with the mozzarella cheese and a little sprinkling of Italian seasoning over the top.
  • 5. Return to the oven for an additional 5-7 minutes to melt the cheese and let it begin to brown.
