MINTY HOT CHOCOLATE

Flavor this homemade hot cocoa with peppermint extract, and serve it with a peppermint stick.

Ingredients

4 cups low-fat milk (2-percent)
3/4 cup sugar
1/2 cup unsweetened cocoa powder (not Dutch process)
4 ounces semisweet chocolate, finely chopped
1/2 teaspoon pure vanilla extract
1/8 to 1/4 teaspoon pure peppermint extract
Whipped cream and peppermint sticks, for serving

Steps:

Heat the milk, sugar, cocoa powder, chocolate and vanilla in a medium saucepan over medium heat, whisking occasionally until the sugar dissolves, the chocolate melts and the mixture is hot and steaming. Stir in the peppermint extract, adding the full amount for a stronger mint flavor. Divide between 4 mugs and serve with a spoonful of whipped cream and a peppermint stick.

1 quart milk (skim, 2 percent or whole) or half-and-half
6 ounces bittersweet or semisweet chocolate, chopped
9 ounces peppermint schnapps

Steps:

Heat 1 cup of the milk in a medium saucepan over low heat. Add chocolate, stirring constantly, until melted. When the chocolate has melted, increase heat to medium and add the remainder of the milk while whisking rapidly. Do not allow to boil. Add 1 ounce peppermint schnapps to each (of 6) mugs. Pour the hot chocolate mixture into the mugs and top with whipped cream (if desired). Add mini candy canes (or peppermint sticks) to each mug before serving, if desired.
