3 cups milk chocolate chips
1 (1 ounce) square unsweetened chocolate, chopped
1 tablespoon butter
1 (14 ounce) can sweetened condensed milk
1 teaspoon peppermint extract
1 teaspoon vanilla extract

Steps:

  • Butter an 8x8 inch dish.
  • In a medium saucepan over low heat, combine milk chocolate chips, unsweetened chocolate and butter. Heat until melted and smooth, stirring occasionally. Remove from heat and stir in condensed milk, peppermint extract and vanilla extract.
  • Beat with an electric mixer at a low speed for 1 minute, then at a high speed for 1 minute. Chill mixture for 15 minutes, beating by hand every 5 minutes. Beat again with electric mixer two minutes more. Pour into prepared pan and chill until firm. Cut into 1/2 inch squares.

Butter Mints image

These heavenly nuggets are out of this world! Always a huge hit with everyone who tries them!

Number Of Ingredients 5

3 cups sugar
1 cup water
1 cup butter, softened
¼ teaspoon peppermint oil
3 drops green food coloring, or as needed

Steps:

  • Butter a 10x15 inch jellyroll pan, and place in the refrigerator.
  • In a heavy saucepan, combine the sugar, water, and butter. Bring to a boil over high heat. Stir occasionally with a wooden spoon. When the mixture starts to boil, reduce the heat to medium, cover, and cook for 3 minutes to allow the steam to wash the crystals that form on the insides of the pan. Uncover, and heat the mixture to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball.
  • Remove from the heat, and stir in the peppermint oil and food coloring. Be sure to keep your face away from the steam as the odor is very strong. Pour into the chilled pan. Let stand undisturbed for several minutes.
  • Use a rubber spatula to gently fold the edges of the hot candy into the center to soften. Continue folding until the candy is cool enough to pick up with your hands. Butter your fingers, and pack the candy into a ball. Begin stretching and pulling. Continue stretching and pulling until the the candy becomes porous and satiny, about 5 minutes.
  • Pull the candy into a 1/2 inch thick rope, and cut into 1/2 inch pieces using greased scissors. Let the candy cool completely, then store in an airtight tin for at least 24 hours before serving.

1 1/2 teaspoons butter, plus
1 tablespoon butter (DIVIDED)
2 cups semi-sweet chocolate chips
1 (11 1/2 ounce) package milk chocolate chips
1 (14 ounce) can sweetened condensed milk
1 teaspoon peppermint extract
1 teaspoon vanilla extract

Steps:

  • Line an 11-in. x 7-in. x 2-in. pan with foil and grease the foil with 1-1/2 teaspoons butter; set aside.
  • In a heavy saucepan, melt the chocolate chips and remaining butter over LOW heat, stir until smooth.
  • Remove from the heat; stir in the milk and extracts until well blended.
  • Spread into prepared pan.
  • Refrigerate until set.
  • Using the foil, lift fudge out of the pan.
  • Discard the foil; cut fudge int 1-in. squares.
  • If leftovers, store in the refrigerator.

Steps:

  • Line an 8x8 baking dish with foil or parchment paper, leaving overhangs around the edges. Grease the foil with butter.
  • Place a medium saucepan over low heat. Add milk chocolate chips, unsweetened chocolate, and butter. Stir until smooth and melted.
  • Turn off the heat and mix in condensed milk, peppermint extract, and vanilla extract.
  • Transfer the mixture into a bowl and beat with an electric mixer at low speed for 1 minute. Increase speed to high and beat for 1 more minute.
  • Refrigerate the mixture for 15 minutes, taking it out every 5 minutes to whisk it by hand. Beat with an electric mixer for 2 minutes.
  • Pour the mixture and spread evenly into the greased baking dish and refrigerate until firm, about 2 hours.
  • Using the overhangs, lift the fudge out of the pan. Slice it with a sharp knife into 1/2-inch squares. Enjoy!

  • Line an 11-in. x 7-in. x 2-in. pan with foil and grease the foil with 1-1/2 teaspoons bitter; set aside. In a heavy saucepan, heat the chocolate chips and remaining butter over low heat until melted; stir until smooth. Remove from the heat; stir in the milk and extracts until well blended.
