CUCUMBER & MINT TEA SANDWICHES RECIPE
Two cooling ingredients (cucumber and mint) add flavor to one refreshing afternoon tea sandwich. Here's an easy cucumber mint tea sandwich recipe.

Steps:
- Gather the ingredients.
- For every two slices of bread, spread both slices evenly and thinly with butter.
- Cover one side of the sandwich with sliced cucumber in one to two layers.
- Add a thin layer of fresh mint.
- Season with lemon juice , salt and/or pepper.
- Put the slices together, cut off the crusts and slice the sandwich diagonally two times to create four triangle finger sandwiches.
- Serve and enjoy!

LEMON-HERB DRESSING WITH MINT AND TARRAGON
This is from Southern Living to go with Shrimp and Pasta Salad. Quite delicious as a sauce for grilled chicken. At the bottom of the directions are two other options offered by Southern Living as well. Personally the basil option is my favorite.

- Whisk together all ingredients until blended.

MINT TARRAGON TEA
This is one of the many recipes I came up with on my own while experimenting with my various tea herbs. I bet you didn't realize tarragon would go nicely in a tea? It's flavor seems perfectly suited to blend with mint. So, if you have some tarragon up in your pantry now you have another use for it! This tea is best chilled, but it's good hot too. Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

- Dried mint. Dried mint can be found in the spice aisle of well-stocked supermarkets. While the fresh leaves offer superior flavor, you can still use the dried version in many recipes like pesto, chutney, casseroles, and curries.
