BERRY ICED TEA WITH GINGER AND MINT



Berry Iced Tea with Ginger and Mint image

This refreshing berry iced tea is quick and easy to make. Berry tea is infused with ginger and lemon juice then served with berries and crushed mint over ice.

4 cups (1 liter) water
2 tablespoon sugar ((optional) or honey or other sweetener)
1 inch piece of ginger ((peeled and cut into five slices))
3 tablespoons of loose berry tea ((or 3 tea bags; I used We Are Tea Super Berry))
Juice of 1 lemon
10 raspberries
10 blueberries
5 strawberries (halved)
15 mint leaves
½ a lemon (thinly sliced)
ice cubes

Steps:

  • Bring the water to a boil, add the sugar and ginger and stir until the sugar dissolves.
  • Remove from the heat, add the tea and allow to steep for 5 minutes.
  • Strain out the leaves and ginger over a bowl and allow the liquid to cool and stir in the lemon juice.
  • Taste for sweetness. If you'd like it sweeter, dissolve a little sugar in hot water and add to the tea. If you'd like it more tart, add a little more lemon juice.
  • Add the ice to a large jug or into glasses, along with the fruit and mint leaves lightly crushed to release their flavour. Pour in the cooled tea and serve chilled.

8 cloves
4 black peppercorns
2 cinnamon sticks
1 1-inch piece fresh ginger, sliced
2 cups whole milk
4 bags black tea (such as Darjeeling)
8 teaspoons sugar or more, to taste

Steps:

  • Place the cardamom, cloves, and peppercorns in a resealable plastic bag and crush with a heavy skillet.
  • Place the crushed spices in a medium saucepan, along with the cinnamon sticks, ginger, milk, and 2 cups of water.
  • Bring mixture to a boil then remove from heat.
  • Add the tea bags, cover, and let steep for 10 minutes.

1/2 cup whole fresh mint leaves
1/2 cup sugar
6 cups boiling water
1/2 cup fresh lemon juice
6 sprigs of fresh mint (optional)

Steps:

  • Place tea bags, ginger, mint& sugar in saucepan.
  • Pour in boiling water, cover, and let stand 10 minutes.
  • Strain tea into large pitcher and stir in lemon.
  • Refrigerate until cold.
  • Pour into ice filled glasses and garnish with mint.
