BERRY ICED TEA WITH GINGER AND MINT
This refreshing berry iced tea is quick and easy to make. Berry tea is infused with ginger and lemon juice then served with berries and crushed mint over ice.

Steps:
- Bring the water to a boil, add the sugar and ginger and stir until the sugar dissolves.
- Remove from the heat, add the tea and allow to steep for 5 minutes.
- Strain out the leaves and ginger over a bowl and allow the liquid to cool and stir in the lemon juice.
- Taste for sweetness. If you'd like it sweeter, dissolve a little sugar in hot water and add to the tea. If you'd like it more tart, add a little more lemon juice.
- Add the ice to a large jug or into glasses, along with the fruit and mint leaves lightly crushed to release their flavour. Pour in the cooled tea and serve chilled.

- Boil water and let it cool down to at least 170F (75C) before adding in the green tea bags. Brew for 2-3 minutes before removing the tea bags. You can use cold water too*, and let it brew overnight in the fridge (also known as cold brew).
