GRILLED SHRIMP SKEWERS WITH CILANTRO-MINT CHUTNEY

- For the shrimp: Whisk together the chile powder, garam marsala, canola oil, lemon juice in a medium bowl and season with salt and pepper. Add the shrimp and toss to coat in the mixture. Let marinate for 15 minutes.
- Prepare a charcoal grill for direct grilling, high heat.
- For the chutney: Combine the cilantro, mint, scallions, chile, 1 tablespoon each honey and canola oil, lime zest, and some salt and pepper in a food processor. Process to make a smooth paste. Taste; add honey, if desired, or more oil to make a sauce that will cling to the shrimp.
- Thread 2 skewers through 3 shrimp so that the shrimp lay flat. Sprinkle with salt and pepper. Grill until golden brown and slightly charred on both sides and just cooked through, about 1 1/2 minutes per side.
- Remove the shrimp to a platter and serve with the cilantro-mint chutney.

- Bring a large pot of water to a boil; add the noodles and cook, stirring, until tender, 4 minutes.
- Drain and rinse under cold water.
- In a medium bowl, combine 2 tablespoons of the oil with the soy sauce, tamari and agave syrup; add the noodles and toss.
- In a skillet, heat 1 tablespoon of the oil.
- Add the shallots and cook over moderate heat, stirring, until golden brown and crisp, 3 minutes.
- Using a slotted spoon, transfer the shallots to paper towels.
- Add the garlic to the skillet and cook over low heat until golden and crisp, 2 minutes; transfer the garlic to the paper towels.
- Light a grill or preheat a grill pan. In a bowl, combine the lime zest and juice with the remaining 1 tablespoon of oil.
- Stir in the shrimp and season with salt; grill the shrimp over high heat, turning once, until glazed and just white throughout, 3 minutes.
- Arrange the noodles on a large platter.
- Sprinkle with the scallions, cilantro, crushed red pepper and the fried shallots and garlic.
- Arrange the shrimp on top and serve with lime wedges alongside.

- Place mint leaves, cilantro, lime juice, garlic, 1/2 tsp. of the salt, and the pepper in a blender. Start blending, then slowly drizzle in the olive oil. Puree until smooth, about 1 minute. Pour half into a large bowl, add the shrimp and marinate for 10 minutes. Reserve the remaining half for the noodles. Meanwhile, bring large pot of water to a boil and add the remaining 1 Tbsp. salt. Break noodles in half and cook until al dente, no more than 4 minutes. Drain and keep warm. Heat large skillet on high and add the canola oil. Drain the shrimp and discard the marinade. Cook the shrimp until pink and slightly firm, 3 to 4 minutes. Stir in the diced tomatoes and cook for 1 minute. Add the hot noodles and reserved marinade and stir until incorporated and steaming hot. Serve immediately or let cool, then refrigerate.

- Whisk vinegar and sugar in medium bowl to blend. Add onion rings and toss to coat. Cover and let stand at least 30 minutes and up to 4 hours. Drain, reserving 2 tablespoons vinegar mixture.
- Cook noodles in large pot of boiling water until tender but still firm to bite, about 2 minutes. Drain. Rinse under cold water. Drain well.
- Whisk lime juice, oil and crushed red pepper in small bowl to blend. Stir in mint and cilantro. Using kitchen shears, cut noodles into 3- to 4-inch-long sections. place handful of noodles in large bowl. Drizzle with reserved 2 tablespoons vinegar mixture and toss to coat. Add remaining noodles, cucumber, green onions, tomatoes and marinated onions. Drizzle lime juice mixture over and toss gently. Season to taste with salt and pepper. Sprinkle with peanuts and serve.
