FLAMING FILET MIGNON WITH CHIVE BUTTER



Flaming Filet Mignon with Chive Butter image

1 stick butter, softened
Coarse salt and freshly ground black pepper
1 bunch chives, left whole
4 (8-ounce) filet mignon steaks
1 tablespoon olive oil
Salt and freshly ground black pepper
2 ounces brandy

Steps:

  • Place butter into a mixing bowl, season with salt and pepper and stir until blended and soft. Take a 12-inch piece of plastic wrap and lay it on the counter. Spoon the butter out onto the center of the plastic wrap and place the chives in the center on top of the butter. Pull the edge over the butter mixture, and tightly pinch the ends, then holding the plastic wrap tightly at each end, pull the mixture towards you. This should create a tight sausage shape. (or imagine rolling a sushi roll) Chives will be in the center surrounded by butter. Tie a knot on both ends of the butter roll and place into the freezer until you are ready to place it on top of your cooked filet.
  • Season the filets with a little salt and pepper. Heat a skillet over medium-high until the pan is hot then drizzle with olive oil.. Place the filets into the pan and cook to medium-rare, about 5 to 7 minutes per side. Remove the pan from the heat and pour brandy into the skillet. Carefully tilt skillet towards the flame to flambe. When the flames burn off, remove the filets from the pan. Remove butter from freezer and cut 4 thin coins and place one on each filet. Serve steaks while hot.

Buttered New Potatoes with Parsley, Mint and Chives image

Made with the first young Jersey Royal potatoes, or some well-flavoured mainland variety such as Pentland Javelin, these are so good you could eat a plateful all by themselves!

2 lb (900 g) Jersey Royal or mainland new potatoes
1 level tablespoon fresh chopped parsley
2 level tablespoons fresh chopped mint, plus a whole sprig
1 level tablespoon fresh snipped chives
1½ oz (40 g) butter
sea salt and freshly milled black pepper

Steps:

  • Wash, but don't scrape the potatoes as there are a lot of nutrients as well as flavour in the skins. Place the larger ones over the base of the saucepan and pop the smaller ones on top. Pour in enough boiling water to almost cover, add some salt and the sprig of mint. Cover with a tight-fitting lid, and simmer gently for about 20 minutes. Test them with a skewer, and remember they must be tender but still firm: overcooking really does spoil them. Alternatively, the potatoes can be steamed, sprinkling them with salt and tucking the mint in among them. Meanwhile, mix the butter and herbs thoroughly together with some pepper. Then drain the cooked potatoes, add the herb butter, put the lid back on and swirl the pan around to get each one thoroughly coated. Remove the lid and just savour the delicious aroma for a couple of seconds before you dish them out!

1 stick cold unsalted butter, cut into small pieces
4 cups confectioners' sugar, plus more for dusting
1/4 teaspoon pure peppermint extract
1 tablespoon whole milk
Pinch of kosher salt
Gel food coloring, such as AmeriColor in Soft Pink, Avocado, Super Red, and Fuchsia (optional)

Steps:

  • Combine butter and 2 cups sugar in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed until sugar is moistened, then increase speed to medium-high and beat until well combined. Return mixer to low speed, add remaining 2 cups sugar, and mix until well combined, 1 minute. Increase speed to medium-high; beat until light and fluffy, 6 minutes more. Add peppermint extract, milk, and salt; beat until smooth.
  • Lightly dust a clean work surface with confectioners' sugar and turn out "dough" onto it. Divide into 5 pieces; tint as desired with food coloring, leaving one piece white. (Keep covered with plastic wrap while working to prevent drying.)
  • Roll "dough" into 1/2-inch-thick ropes, then cut into pieces slightly over 1/2 inch long with a paring knife or bench scraper. Transfer to a parchment-lined rimmed baking sheet. Let dry, uncovered, at least 12 hours. Mints can be refrigerated in an airtight container up to 2 weeks.

Try these different flavoured butters melted over new potatoes, grilled fish, chicken or steak

100g softened butter
2-3 tbsp chopped fresh mixed herbs ( parsley , chervil, dill, marjoram, basil)
salt and freshly ground black pepper to taste
1 tsp chopped fresh tarragon (remember this is very strong)
1-2 tbsp wholegrain mustard
salt and freshly ground black pepper to taste
1 tbsp cider vinegar
2 tbsp chopped fresh mint
salt and freshly ground black pepper to taste
1 tbsp finely chopped shallots
2 tbsp chopped fresh chives
salt and freshly ground black pepper to taste
3 tbsp chopped fresh parsley
2 tsp finely grated lemon zest
salt to taste
½ tsp crushed, dried chilli flakes
2 tbsp finely chopped pickled dill cucumber or gherkins
3 tbsp chopped fresh dill
salt and freshly ground black pepper to taste

  • Tarragon and wholegrain mustard butter: stir in 1 tsp chopped fresh tarragon (remember this is very strong) and 1-2 tbsp wholegrain mustard, plus salt and freshly ground black pepper to taste.
  • Mint and cider butter: gradually beat in 1 tbsp cider vinegar, then 2 tbsp chopped fresh mint and salt and freshly ground black pepper to taste.
  • Chive and shallot butter: stir in 1 tbsp finely chopped shallots and 2 tbsp chopped fresh chives, plus salt and freshly ground black pepper to taste.
  • Parsley, lemon and chilli butter: stir in 3 tbsp chopped fresh parsley, 2 tsp finely grated lemon zest, salt to taste and ½ tsp crushed, dried chilli flakes.
  • Dill butter: stir in 2 tbsp finely chopped pickled dill cucumber or gherkins and 3 tbsp chopped fresh dill, plus salt and freshly ground black pepper to taste.
  • After mixing, have the flavoured butters handy in the fridge or freezer ready for slicing. Roll them into logs in wet greaseproof paper and chill until firm. Rewrap in cling film and twist each end to seal. Will keep in the fridge for 4-5 days or in the freezer for up to 3 months.

½ cup chives (fresh, finely chopped)

Steps:

  • Gather the ingredients.
  • In a large bowl, mash butter with a potato masher or just squish with hands. You can even cream butter using paddle attachment of a stand mixer-the goal is to get the butter soft enough to be able to incorporate chives.
  • Add chopped chives and continue mashing/squishing/mixing butter until fully mixed.
  • Spread out a large (1-foot or bigger) square of plastic wrap across work surface, then scoop mixed butter onto plastic. You are now going to roll the butter into a cylinder inside the plastic wrap
  • Tie excess plastic wrap at ends of the cylinder into a knot, or just use little pieces of string to tie off the ends. You can even make a string out of a short section of plastic wrap and roll it into a little rope.
  • Chill or freeze until needed.

Grill until husks are slightly charred and corn is tender, turning often, about 10 minutes. Serve immediately with lime-chive butter.
