Superb chicken dish - light and tangy. Saw nothing like it in zaar. comes from healthy eating chicken book. Also looks like a resturant dish.

4 chicken breast fillets
3/4 cup of fresh mint, chopped
1/2 cup white vinegar
1 tablespoon caster sugar
1 cup orange juice
1 teaspoon cornflour
1 teaspoon water
1 teaspoon butter

Steps:

  • Using a meat mallet, flatten chicken breast to an even thickness.
  • Spread mint over 1 side of chicken breast , roll up tightly and secure with toothpicks.
  • Place chicken into baking dish, cover and cook in a moderate oven for 25 minutes or until cooked. Remove toothpicks and keep warm.
  • Orange Sauce:.
  • Combine vinegar and sugar in a small pan, stir constantly over heat with out boiling until sugar dissolves. Boil, uncovered without stirring until it turns golden brown.
  • Strain juice and add to sauce, simmer uncovered until sauce is reduced by 1/2. Add blended cornflour and water, stirring over heat until sauce thickens.
  • Whisk in butter just prior to serving.
  • Slice chicken and arrange on plate, pour over orange sauce.

2 skinless, boneless chicken breast halves - cut into bite-size pieces
1 clove garlic, crushed
½ cup all-purpose flour
½ cup margarine
¼ cup fresh lemon juice
½ cup chopped fresh mint leaves

Steps:

  • In a medium bowl, mix together the chicken pieces and garlic. Toss with the flour just to coat, and shake off excess.
  • Heat the margarine in a large skillet over medium-high heat. Add the chicken pieces; cook and stir until browned. Add the mint leaves and lemon juice, cover and steam for about 5 minutes, just until the chicken is cooked through. Do not over cook the chicken or it will be tough.

8 chicken legs
1 tablespoon olive oil
1/2 teaspoon basil
1/2 teaspoon tarragon
1/2 teaspoon parsley
1 teaspoon grated orange peel
1/4 cup orange juice
3 tablespoons honey
1 tablespoon vinegar, plus
1 teaspoon vinegar
1 teaspoon cornstarch
1/4 cup chopped of fresh mint (or 2 tsp dried mint)

Steps:

  • In a large ziplock bag, coat chicken legs with oil, basil, tarragon, and parsley. Shake well to coat chicken.
  • Preheat grill to 400 (or medium-low heat). Cook chicken for 15 to 20 minutes or until cooked through. (note that if the chicken was frozen, there will be some blood left in the meat even if it is completely cooked). Turn the chicken legs several times to make sure it cooks evenly.
  • In a small sauce pan combine orange peel, orange juice, honey, and 1 tbsp vinegar. Bring to boiling, whisking constantly (note that that spraying a tablespoon with cooking spray will make the honey slide off easier).
  • Meanwhile, combine cornstarch and 1 tsp vinegar in a small bowl.
  • Once orange mixture is boiling, add cornstarch mixture, and continue to stir until mixture thickens.
  • Remove from heat and stir in mint.
  • Serve chicken with mint-orange dipping sauce on the side.

Bobby Flay's Pan-Roasted Chicken With Mint Sauce image

Bobby Flay served a version of this chicken at Bolo, the elegant little jewel box of a restaurant he had on 22nd Street until 2007, when the building that housed it was sold. It came pan-roasted beneath a blanket of what Flay called Spanish spices, with a vibrant green mint sauce rich with chiles, honey, salt and mustard. The dish was one of the restaurant's best sellers. I ate it about 3,000 times there before getting the recipe and adapting it for those of us who cook at home. Of course you can make the exact same dish with chicken thighs if you want. But some will prefer the breast meat. Some always have.

4 bone-in, skin-on chicken breasts
Kosher salt to taste
2 tablespoons Spanish paprika
2 teaspoons ground cumin
2 teaspoons ground mustard
2 teaspoons ground fennel seed
1 teaspoon freshly ground black pepper
3 tablespoons extra-virgin olive oil
1 cup fresh mint leaves
½ cup fresh parsley leaves
4 cloves garlic, peeled and roughlychopped
1 serrano chile, seeds removed androughly chopped
1 tablespoon honey
1 tablespoon Dijon mustard
½ cup extra-virgin olive oil
Kosher salt and freshly groundblack pepper.

Steps:

  • Preheat oven to 425. Rinse the chicken well, then dry it with paper towel. Season the chicken aggressively with salt. Combine the remaining dry ingredients in a small bowl, and rub the mixture all over the skin of the chicken breasts.
  • Heat the oil in a large, oven-safe sauté pan or skillet set over medium heat. When it is shimmering, put the breasts into the pan skin side down, and cook, unattended, until the skin is golden brown, approximately 6 to 8 minutes. Using tongs, turn the chicken breasts over, and place the pan in the oven. Roast until the chicken is golden brown all over and the meat cooked entirely through, approximately 12 to 15 minutes. Remove the chicken to a warmed platter, and allow to rest.
  • Meanwhile, put the mint, parsley, garlic and serrano into a food processor, and pulse into a paste. Add the honey and mustard, and pulse again, until combined. With the motor running, slowly add the olive oil until the mixture has become emulsified. Transfer the mixture to a bowl, and if necessary, whisk in a few tablespoons of water to thin the sauce. Season with salt and pepper to taste.
  • Spoon some of the sauce over each chicken breast, and serve, with the remaining sauce on the side. Roasted potatoes with some thinly sliced lemons makes a fine accompaniment, along with sautéed greens.

1 cup ice water
1 egg
¼ teaspoon baking soda
¼ teaspoon salt
2 cups all-purpose flour, divided
4 skinless, boneless chicken breasts, cut into cubes
vegetable oil for frying
4 tablespoons cornstarch
3 tablespoons water
1 cup white sugar
½ cup ketchup
½ cup white vinegar
½ cup water
½ cup orange marmalade
½ cup chopped fresh pineapple
2 tablespoons pineapple juice
2 teaspoons soy sauce
1 ½ teaspoons minced fresh ginger root
1 teaspoon minced garlic
¼ teaspoon red pepper flakes

Steps:

  • Beat ice water and egg together in a bowl using a whisk or a fork. Add baking soda and salt and mix to combine. Add 1 cup flour to water mixture; mix until blended but lumpy.
  • Place remaining 1 cup flour in a separate bowl. Cover each piece of chicken in flour, then move to egg mixture and cover, letting excess batter drip off.
  • Heat vegetable oil in a wok or large, deep frying pan over medium heat until a drop of water crackles when placed into oil.
  • Place chicken into the hot oil and fry, flipping if needed, until no longer pink in the center and golden brown, 3 to 4 minutes. Set aside and keep warm.
  • Combine cornstarch and 3 tablespoons water in a small bowl.
  • Combine sugar, ketchup, vinegar, 1/2 cup water, orange marmalade, pineapple, pineapple juice, soy sauce, ginger, garlic, and red pepper flakes in a medium saucepan. Bring to a boil; add cornstarch mixture. Reduce heat and let simmer, stirring frequently, until desired thickness is reached.
  • Pour sauce over chicken and serve.
