2 cups water
2 tea bags
1 cinnamon stick
6 cardamom pods, crushed
1 whole clove
1/4 teaspoon ground ginger
2-1/2 cups milk
1/3 cup sugar
Sweetened whipped cream, ground cinnamon and cinnamon sticks, optional

Steps:

  • In a small saucepan, combine the first six ingredients. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. , Stir in milk. Return to a boil; boil for 1 minute, then strain. Stir in sugar until dissolved. Pour into mugs. Top each with whipped cream, cinnamon and a cinnamon stick if desired.

6 mint leaves
1/2 teaspoon grated ginger
1/2 cup water
2 teaspoons tea leaves
1/2 cup milk (use non dairy for vegan tea)
sugar (to taste)

Steps:

  • Combine 6-7 fresh mint leaves, 1/2 teaspoon grated ginger in 1/2 cup water
  • Bring to a boil and then simmer for 3-7 minutes as per preference.
  • Add 2 teaspoons tea leaves and simmer for 2 more minutes.
  • Add 1/2 cup milk and simmer for a minute
  • Strain, add sugar to taste and mix well.
  • Serve mint tea immediately.

A delicious and easy dairy-free chai recipe made with whole spices. It's spicy, comforting, naturally sweetened, and made in just 1 pot with 8 ingredients!

1 whole cinnamon stick
6-8 green cardamom pods
1 tsp whole black peppercorns
3-4 whole cloves
2 ½ cups water
2 Tbsp grated ginger ((for less intense ginger flavor, slice instead of grating))
3 Tbsp loose leaf black tea ((or ~3-4 black tea bags // use decaf as needed))
2 cups dairy-free milk
Sweetener such as stevia, organic cane sugar, or maple syrup to taste

Steps:

  • Add cinnamon stick, cardamom pods, peppercorns, and cloves to the bowl of a mortar (or cutting board) and use pestle (or heavy pan) to slightly crush the spices. You aren't pulverizing into a powder, just slightly crushing into small pieces (see photo).
  • To a medium saucepan add crushed spices, water, and grated (or sliced) ginger and bring to a boil over high heat. (Note: For a less gingery chai, reduce amount of ginger and slice rather than grating). Then reduce heat slightly to medium/medium-low and maintain a simmer for 15 minutes or until it reduces by about one-third.
  • Add tea (loose leaf or bags) and dairy-free milk of choice (we love light canned coconut) and lower heat to low. Cover and continue cooking for 5 minutes to allow the flavors to meld. Then turn off heat and let steep for 5 minutes more (covered) or longer for deeper flavor.
  • Add sweetener of choice to taste (we prefer stevia or maple syrup, but sugar is more traditional). Strain through a fine mesh strainer before serving.
  • Keep strained, cooled leftovers covered in the fridge up to 3-4 days. Reheat on the stovetop or in a milk frother. Not freezer friendly.

2 cups boiling water
1 tablespoon ground cardamom
1 teaspoon whole cloves
1 teaspoon ground ginger
1/2 teaspoon whole black peppercorn
1/2 teaspoon white peppercorns (whole)
1/2 teaspoon dried lemon grass
1/4 teaspoon vanilla
of fresh mint, for garnish (optional)
ice (to fill 2 glasses)

Steps:

  • Brew mint tea: Pour 2 cups boiling water over the 2 mint tea bags and steep for 4 minutes.
  • Combine brewed mint tea, cardamom, cloves, ginger, peppercorns, lemon grass, vanilla.
  • Fill 2 glasses to the top with ice. Strain tea into the glasses.
  • Garnish with mint, if desired.

  • In a deep saucepan, heat the water, black tea leaves (if using tea bags, do not add them right now), shredded fresh mint leaves, cut lemongrass, whole cardamom (open the cardamom pods and put the seeds and shells in) and grated or cut fresh ginger.
  • Bring the herbs and spices infused tea to a rolling boil. If you're using tea bags, add them at this stage. Let the black tea brew on a medium flame for 1-2 minutes and then add milk of your choice.
  • Once this choi/chai preparation comes to a complete boil (keep an eye at this stage so the tea doesn't boil over,) turn off the flame. The tea will have a rich brown color.
