I have been making these butter tarts for years and my family just loves them. The recipe is adapted from an old recipe from my grandmother.

48 (2 inch) unbaked tart shells
2 cups brown sugar
⅔ cup butter, softened
2 eggs
3 tablespoons heavy cream
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place tart shells on a baking tray.
  • Beat brown sugar and butter together in a bowl until creamy; beat in eggs, cream, and vanilla extract until combined. Fill tart shells 2/3 full with butter mixture.
  • Bake in the preheated oven until pastry is lightly golden, about 18 minutes; remove to cool on a wire rack.

1/2 cup margarine, softened
4 ounces cream cheese, softened
1 cup flour
3/4 cup grated cheddar cheese
1 egg
1/2 cup milk
1 finely chopped green onion
1 pinch salt
1 pinch pepper
1 pinch onion powder

Steps:

  • Beat margarine and cream cheese together, work in flour to form a ball.
  • Divide the dough into 24 equal pieces.
  • Press into mini tart tins.
  • Divide cheese evenly among tarts.
  • Beat egg until frothy, add milk, green onion and spices.
  • Spoon into tarts and bake @ 350
  • Variations: substitute the cheddar cheese for feta and the green onion for finely chopped black olives.
  • Greek style tarts.

  • Using an electric mixer with a whisk attachment, mix the cream cheese until smooth. Add the Cheddar, garlic and curry powder and blend well. Chop up the large pieces in the chutney and add to the cheese mixture along with onions, cayenne pepper and Worcestershire sauce. Mix well. Season to taste with salt. Set aside.
  • On a lightly floured surface roll out one piece of puff pastry into a 12-inch square. Cut into 2-inch squares. Press into mini-muffin tins and prick with a fork. Repeat with second pastry sheet. Spoon 1 teaspoon filling into center of each square. (You are likely to have a few squares of pastry left over.) Freeze tarts in the tins.
  • To bake the tarts, preheat the oven to 400 degrees. Bake frozen tarts 15 minutes until pastry is golden. Serve hot.
