Mini Banana Nut Bread image

"This recipe won several blue ribbons at our county and Nebraska State Fairs," writes Anna Marie Moore from Aurora, Nebraska. "It's especially wonderful with black walnuts." TIP: Since this bread freezes so well, why not double the recipe and keep a loaf on hand for guests or a quick gift?

Number Of Ingredients 9

3 tablespoons shortening
1/3 cup sugar
1 large egg
1/4 teaspoon vanilla extract
2/3 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup mashed ripe banana (about 1 large)
3 tablespoons chopped walnuts

Steps:

  • In a small bowl, cream shortening and sugar. Beat in egg and vanilla. Combine the flour, baking soda and salt; add to creamed mixture alternately with banana. Fold in walnuts. , Transfer to a 5-3/4x3x2-in. loaf pan coated with cooking spray. Bake at 325° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Number Of Ingredients 10

2 cups whole wheat flour
1 cup unbleached all purpose flour
1/4 cup (packed) dark brown sugar
1 teaspoon baking soda
1 teaspoon salt
1/4 cup (1/2 stick) chilled unsalted butter, cut into 1/2-inch pieces
1 cup walnuts, toasted, chopped
1 cup chilled buttermilk
1 large egg
2 tablespoons mild-flavored (light) molasses

Steps:

  • Preheat oven to 375°F. Lightly flour large baking sheet. Whisk first 5 ingredients in large bowl to blend well. Add butter and rub in with fingertips until mixture resembles coarse meal. Mix in toasted, chopped walnuts. Whisk buttermilk, egg and molasses in small bowl to blend. Gradually add buttermilk mixture to flour mixture, stirring until medium-firm dough forms. Turn dough out onto lightly floured surface. Knead until dough comes together, about 6 turns. Flatten dough into disk. Cut into 6 wedges. Shape each wedge into ball. Place on prepared sheet, spacing evenly apart. Flatten each to 3-inch round. Using sharp knife, cut shallow X in top of each round.
  • Bake breads until golden and tester inserted into center comes out clean, about 30 minutes. Transfer to rack. Serve warm or at room temperature.

Serve this dried cranberry-studded soda bread spread with soft butter or a bit of cream cheese. If you don't have dried cranberries, dried currants, cherries or raisins could also be substituted.

1/2 cup unbleached all-purpose flour
1 cup whole wheat pastry flour
1 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 cup dried cranberries
1/2 cup toasted walnut pieces
1 cup nonfat plain yogurt
1/3 cup water

Steps:

  • Preheat oven to 375°F.
  • Whisk together flours, baking soda, salt and walnuts in a large bowl; set aside.
  • Combine yogurt and water in a small bowl and stir to combine.
  • Add yogurt mixture and cranberries to bowl with flour mixture and stir until a ball of dough forms.
  • Turn dough out onto a lightly floured surface and knead for 1 minute, adding more flour as needed.
  • Transfer dough to an ungreased baking sheet and pat out into a circle.
  • Mark an X on top with the tip of a sharp knife, then bake until golden brown, 30 to 35 minutes.
  • Transfer to a rack to cool, then slice and serve.
