cooking spray
2 tablespoons butter
3 cloves garlic, minced
2 tablespoons all-purpose flour
¾ cup milk
½ cup freshly grated Parmesan cheese
salt and ground black pepper to taste
2 large potatoes, peeled and thinly sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray 12 muffin cups with cooking spray or grease with butter.
  • Heat butter in a saucepan over medium heat. Cook and stir garlic in the melted butter until fragrant, about 1 minute. Add flour to garlic mixture; cook and stir until mixture is smooth and thickened, about 2 minutes.
  • Slowly pour milk into flour-butter mixture while continuously stirring with a whisk until sauce is smooth and thickened, about 5 minutes. Remove saucepan from heat and stir Parmesan cheese into sauce until cheese melts from the heat of the sauce; season with salt and pepper.
  • Divide the potatoes among the 12 prepared muffin cups and spoon cheese sauce over potatoes.
  • Bake in the preheated oven until potatoes are tender, about 25 minutes.

Unsalted butter, softened, for the ramekins
1 1/4 cups grated sharp white cheddar cheese
1/2 cup grated parmesan cheese
1 tablespoon finely chopped fresh chives
1/4 teaspoon all-purpose flour
Large pinch of cayenne pepper
1 1/2 pounds Yukon Gold potatoes (1 1/2 to 2 inches in diameter), unpeeled
Kosher salt and freshly ground black pepper
1 cup plus 2 tablespoons heavy cream

Steps:

  • Preheat the oven to 350 degrees F. Generously brush six 6-to-8-ounce ramekins with butter. Combine the cheddar, parmesan, chives, flour and cayenne in a large bowl. Thinly slice the potatoes a little less than 1/8 inch thick (a mandoline works well) and add to the cheese mixture. Add 1 teaspoon salt and a pinch of black pepper and toss to combine.
  • Divide half of the potato-cheese mixture among the prepared ramekins, filling them about halfway (arrange the potato slices so they go to the edge of the ramekins). Top with half of the cream. Repeat with the remaining potato-cheese mixture and cream.
  • Transfer the ramekins to a baking sheet, cover each with foil and bake until the liquid is bubbly and the potatoes begin to soften but are not completely cooked through, about 40 minutes. Increase the oven temperature to 425 degrees F, uncover the ramekins and bake until the potatoes are tender and golden brown, 15 to 20 minutes. Run a knife around the edges and let stand 10 minutes before serving.

  • Peel potatoes/sweet potatoes and slice thinly, preferable with a mandoline. Layer slices in muffin tin (smaller in diameter slices on the bottom, until half way up the muffin tin. (approx. 4-6 slices). Sprinkle the mozzarella cheese on top of slices. Divide half the chopped rosemary and sprinkle over each stack. Layer remaining potato slices (approx. 4-6 more to each stack) . (I alternated potato/sweet potato/potato/sweet potato, but you can layer however you like)
  • In a microwave safe bowl, heat butter,cream, salt, garlic and pepper for 30 seconds. Pour approx. 1 tablespoon of cream mixture over each potato stack.
  • Cover with aluminum foil, loosely and bake for 30 min. Remove foil and add Gruyere cheese. Bake an additional 5-7 min. uncovered, until cheese is bubbly and begins to brown. If you want cheese to be extra bubbly and brown you could zap under the broiler for 2-3 min. ( I did) Remove from oven and let sit for 5-10 min. before serving. Run a knife around the sides of the stacks to help loosen and make removing from the muffin tin easier. Garnish with remaining rosemary (or thyme).
