Marvellous Mini Meatloaves (With Options!) OAMC image

A perfect addition to your OAMC collection because you can start with the base recipe and then make 1 or all of the variations so that you don't feel like you are eating the same thing for every dinner. This recipe is great for singles too because the mini loaves are individual servings and you can take out as many or as few as you need.

1 1/2 lbs ground beef
1 (120 g) package Stove Top stuffing mix or 1 (120 g) package dry bread cubes, if you prefer
1 cup water
1 teaspoon italian seasoning
1/2 cup pasta sauce
1/2 cup mozzarella cheese, shredded
2 teaspoons chili powder
1/2 cup salsa
1/2 cup monterey jack cheese, shredded
1 teaspoon dried oregano
1/2 cup roasted red pepper
1/2 cup feta cheese, crumbled
1 teaspoon garlic powder
1/2 cup barbecue sauce
1/2 cup cheddar cheese

Steps:

  • Preheat oven to 375 degrees.
  • Mix meat, stuffing mix, or bread cubes,water, and seasoning (choose one: italian seasoning, OR chili powder, OR oregano OR garlic powder) until well blended.
  • Press evenly into 12 greased muffin tins.
  • Make a small indentation in the middle of each with the back of a spoon.
  • Fill the indentation with your choice of filling. (Choose one: pasta sauce OR salsa OR roasted red peppers OR BBQ sauce following the version of your choice.).
  • Bake for 30 minutes or until loaves are cooked through. Top with the cheese specified in the recipe of your choice and bake 5 minutes or until cheese is melted.
  • Let stand 10 minutes before removing from baking pan.
  • For OAMC: Remove from baking pan and let cool. Flash freeze on a cookie sheet until frim. Transfer to a labeled ziploc bag. To serve: Defrost overnight, then reheat in oven or microwave until heated through.

2 lbs frozen bread dough, thawed
8 ounces sweet Italian sausage
1 cup chopped onion
4 garlic cloves, minced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 cup pizza sauce
1 cup grated lowfat mozzarella cheese
4 teaspoons parmesan cheese
2 eggs
4 tablespoons milk

Steps:

  • Divide dough into 16 portions.
  • Preheat oven to 425°F.
  • Grease a baking sheet.
  • Heat a large skillet over medium heat, add sausage.
  • Cook until brown and crumbly, drain fat.
  • Stir onion, garlic, basil, oregano, and pizza sauce into skillet, simmer for 10 minutes.
  • Roll each dough piece into a 5in circle.
  • Spoon sausage mixture onto each circle, sprinkle with cheeses.
  • Moisten edges of dough with water.
  • Fold dough over to enclose filling, press to seal.
  • Place on prepared baking sheet.
  • Beat eggs with milk.
  • Brush over calzones.
  • Bake for about 15 minutes or until golden brown.

1 cup shredded mozzarella cheese
1 cup ricotta cheese
1 egg, beaten
1/2 teaspoon dried parsley flakes
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon pepper
1 loaf frozen bread dough, thawed
1 (15 ounce) can pizza sauce, divided

Steps:

  • Cook sausage links according to package directions; drain, cut into 1/4 -inch slices and set aside.
  • In a large bowl, combine mozzarella, ricotta, egg, parsley and seasonings.
  • On a lightly floured surface, cut dough in half.
  • Roll each into a 12-inch circle.
  • On two parchment-lined baking sheets, carefully place one dough round on each baking sheet.
  • Spoon ½ cup of pizza sauce, half the cheese mixture and half of the sausage slices onto the lower half of each dough round, keep the outer ½ -inch edge of dough free of ingredients.
  • With a pastry brush, moisten the outer ½ -inch of each dough round with water.
  • Fold dough over filling and crimp edges firmly to seal.
  • Bake at 350ºF for 25-30 minutes or until golden brown.
  • Cut each Calzone in half and serve with remaining pizza sauce.

I just make them ahead, freeze them and pop them into my daughter's lunch box frozen, and by the time she is ready to eat lunch they are all thawed out. There are never any left over! 1 (8 ounce) package refrigerated crescent dinner rolls
3/4 cup chopped low-fat pepperoni
8 teaspoons pizza sauce or 8 teaspoons spaghetti sauce
5 teaspoons warmed low-fat cream cheese
2 teaspoons oregano
1 teaspoon chopped garlic
1 1/2 cups shredded lowfat mozzarella cheese
bell peppers or ground beef, etc, to taste

Steps:

  • Preheat oven to 375°F.
  • Unroll dough into 4 long rectangles.
  • Press diagonal perforations firmly to seal.
  • Spread warmed cream cheese evenly on dough.
  • Spread pizza sauce evenly on top of cream cheese.
  • Add oregano and garlic spreading evenly over all.
  • Sprinkle chopped pepperoni over all.
  • Add any extra ingredients you would like.
  • Sprinkle with mozzarella cheese.
  • Roll up each rectangle starting at the shortest side, press and seal firmly.
  • Cut each of the 4 rolls into 5 slices to make 20 slices.
  • Spray cookie sheet or muffin tins with non-stick cooking spray.
  • Place cut side down on sprayed cookie sheet or muffin tins. Careful, they can be sticky!
  • Bake 15-20 minutes or until golden brown.
  • Remove from cookie sheet.
  • Can be served warm or cooled and placed in the freezer.

2 loaves frozen bread dough (Italian, french, or pizza)
6 ounces sliced mozzarella cheese, to taste (we usually use more)
5 cups spaghetti sauce

Steps:

  • Thaw two loaves of bread dough.
  • Divide each loaf into five parts each.
  • One at a time, roll each dough piece on a floured board or stretch with your hands, making 10 7 inch squares.
  • Fold each dough square over half a cheese slice to form a turnover, and pinch edges to seal.
  • (You can also ladle 1/3 cup to 1/2 cup sauce into center of each square before making the turnover, but the sauce tends to seep out). Place each turnover in a small sandwich bag.
  • Put 5 turnovers in a 1 gallon freezer bag.
  • Divide sauce in half, and store in 2 1-quart freezer bags; enclose each bag of sauce in a bag of calzones.
  • Do the same with the remaining 5 turnovers.
  • To prepare for serving, thaw sauce; heat in a medium pan 10-15 minutes until bubbly.
  • At the same time, take frozen turnovers out of bags, and place them about 2 inches apart on a baking sheet sprayed with a nonstick spray.
  • Preheat oven to 350°F.
  • Bake for 15 minutes.
  • Turnovers will be golden brown when done.
  • Ladle sauce on top of turnovers, and serve.

1/2 cup semolina flour or cornmeal
All-purpose flour, for dusting
1 pound store-bought pizza dough, thawed if frozen and at room temperature
1 large egg
1/2 cup shredded Italian cheese blend
1/2 cup ricotta
1/2 cup grated Parmesan
4 scallions, thinly sliced
2 teaspoons garlic powder
Kosher salt and freshly ground black pepper
24 thin slices pepperoni (about 2 ounces)
2 cups roasted garlic tomato sauce, such as Classico® Roasted Garlic Pasta Sauce

Steps:

  • Position a rack in the middle of the oven and preheat to 450 degrees F. Sprinkle a baking sheet with the semolina and set aside.
  • Lightly flour a work surface and roll the dough into a round that is about 12 inches wide and 1/2 inch thick. Cut out 8 rounds with a 3 1/2- to 4-inch biscuit cutter or drinking glass. Dust with flour and cover with a clean kitchen towel or plastic wrap.
  • Beat the egg with 1 tablespoon water in a small bowl. Set aside.
  • Combine the cheese blend, ricotta, 1/4 cup Parmesan, scallions and garlic powder in a medium bowl. Season with salt and pepper to taste.
  • Place 3 slices of the pepperoni on one half of each round of dough, leaving a 1/4-inch border around the edges. Top each round with 2 tablespoons of the cheese mixture.
  • Brush the egg wash around the edges of one dough round using your finger or a pastry brush. Gently fold the dough over the filling to enclose and crimp the edges with a fork to seal. Repeat with the remaining dough rounds.
  • Brush the tops of the calzones with the egg wash and sprinkle with the remaining 1/4 cup Parmesan.
  • Place the calzones on the prepared baking sheet and bake on the middle rack until golden, 14 to 16 minutes, rotating the sheet halfway through for even baking.
  • While the calzones bake, heat the tomato sauce in a medium saucepan over medium heat until bubbling, 1 to 2 minutes. Transfer to a small bowl. Place the calzones on a platter with the sauce and serve immediately.

1/4 teaspoon freshly ground black pepper
1 (13.5-ounce) tube of refrigerated pizza dough
All-purpose flour, for rolling the dough
1 egg, beaten (for egg wash)
1 1/2 cups marinara sauce, store-bought or homemade (page 144)

Steps:

  • Heat the olive oil over medium-high heat in a medium-size, heavy skillet. Add the sausage and cook until crumbled and golden, about 5 minutes. Add the arugula and cook until wilted. Turn off the heat and let cool for about 10 minutes. Add the cream cheese, 1/3 cup of the Parmesan, the salt, and the pepper and stir to combine. Set aside.
  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • Roll out the pizza dough on a lightly floured surface to a thin 20 by 12-inch rectangle. Cut the rectangle in half lengthwise, then cut each half into 8 equal rectangles.
  • Spoon some of the topping onto 1 side of each rectangle. Using a pastry brush, brush the edges of the rectangle with egg wash. Close the rectangle of pizza dough over the topping. Use a fork to seal and crimp the edges. Place the calzones on the prepared baking sheet and brush the top of each with egg wash. Sprinkle with the remaining 1/4 cup of Parmesan. Bake until golden, 15 to 17 minutes.
  • Meanwhile, heat the marinara sauce over low heat in a medium saucepan. Serve the hot calzones with the marinara sauce alongside for dipping.

One 1-pound ball pizza dough
Cornmeal, for dusting
1/2 cup (4 ounces) shredded fontina (see Cook's Note)
1/2 cup (4 ounces) shredded provolone
1 ounce salami, diced into 1/4-inch pieces
1/4 cup diced roasted red pepper (jarred or homemade)
1 tablespoon finely chopped kalamata olives (about 5 olives)
1 egg
Marinara sauce (jarred or homemade), warmed, for dipping

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F.
  • On a lightly floured work surface, roll out the dough ball into a 14-inch circle, about 1/4-inch thick. Using a 4-inch round cutter, cut the dough into 12 circles. Transfer the circles onto two heavy baking sheets dusted with cornmeal.
  • In a medium bowl, combine the fontina, provolone, salami, peppers and olives. In a separate small bowl, beat together the egg and 1 teaspoon water.
