Mini Quiche With Romaine Lettuce Salad image

Ready, Set, Cook! Special Edition Contest Entry - These mini quiches look like you slaved all day to make them, but they are easy enough because they take advantage of Simply Potatoes Shredded Hash Browns for the base and a bottled salad dressing (I recommend Cardini's). There is also a red "brava" dressing based on that used for a Spanish dish, Patas Bravas.

1 tablespoon butter
1 1/2 cups Simply Potatoes® Shredded Hash Browns
kosher salt (to taste)
taco seasoning (or to taste)
6 eggs
3/4 cup green onion, finely chopped
3/4 cup red bell pepper, finely chopped
3 slices bacon, cooked and crumbled
3/4 cup Baby Spinach
6 tablespoons milk
3 cups romaine lettuce, chopped into bite sized pieces
caesar salad dressing, bottled
2 tablespoons olive oil
1 tablespoon white wine vinegar
1/4 teaspoon smoked paprika
1 teaspoon chili powder

Steps:

  • Preheat oven to 400 degrees F; grease 6 muffin tins with butter (if you prefer to cut the recipe down to serve 2 or 4 simply put a bit of water in the unused muffin tins).
  • Lightly press 1/4 cup (not packed) of the hash browns into each cup; season with salt and taco seasoning.
  • Place in oven for about 10 minutes (potatoes may start to brown a bit on the edges).
  • Meanwhile, whisk together the eggs, onions, peppers, and bacon; season with additional salt and taco seasoning.
  • Divide spinach among cups; top with egg mixture; spoon a tablespoon of milk in each cup.
  • Place in oven for about 20-25 minutes; you will know they are done when the center is set and they are puffy (they will deflate when they start to cool).
  • While the quiches are cooking, in a small bowl, whisk together 2 tablespoons olive oil, the vinegar, paprika, and chili powder.
  • To serve: Divide lettuce among serving dishes. Place a mini quiche on each plate, then drizzle lettuce with a fair amount of bottled Caesar dressing, just a little for the quiche. Drizzle with the red "brava" dressing.

A delicious, crust-free mini quiche perfect to use when you have a little leftover bacon and fresh spinach. Choose good quality cheeses freshly grated (I used Beecher's Marco Polo in place of mozzarella and Parmesano-Reggiano) and these will be even better. Prep time is if you are using leftover bacon.

3 slices bacon, crisply cooked and crumbled
1 tablespoon bacon grease or 1 tablespoon olive oil
1/4 cup onion, diced
5 ounces fresh spinach, chopped
1/8 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon nutmeg
15 ounces ricotta cheese
8 ounces mozzarella cheese, shredded
1 cup parmesan cheese, grated
3 eggs

Steps:

  • In a skillet over medium heat cook the onions in bacon grease OR olive oil until tender.
  • Add spinach and seasonings and stir. Turn heat up to medium high to cook off spinach moisture. This will take only a couple of minutes; you want spinach just wilted and still bright green.
  • Remove from heat and stir in bacon. Allow to cool for at least 10 minutes.
  • Combine cheeses in a large bowl.
  • Add eggs and stir until well blended.
  • Add cooled spinach mixture. Stir to combine.
  • Divide mixture evenly among 10 lightly greased muffin cups. Fill other two empty cups 1/2 full of water (to allow for even cooking).
  • Bake at 350 for 40 minutes until filling is set.
  • Let stand for 10 minutes, then run a thin knife around edges to release.
  • Serve warm.

2 lbs small curd cottage cheese
1/2 lb ricotta cheese
6 tablespoons sour cream (Heaping)
1 cup baking mix, such as bisquick
6 eggs, beaten
1/2 lb butter, melted
1 lb swiss cheese, shredded (can choose to use other cheeses as well)

Steps:

  • Heat oven to 350 degrees F.
  • Spray mini muffin tins with cooking spray.
  • In very large bowl, mix all ingredients together.
  • You may also divide ingredients EVENLY and mix in two seperate large bowls.
  • Using a pastry bag, fill mini muffin tins (recipes makes approx. 96 mini quiches; recipe halves very easy) almost full with quiche mixture.
  • Bake for approximately 30 minutes.
  • You may serve these at once, or freeze for later use.
  • If frozen, they can easily be reheated in a microwave for 1-2 mins, serving immediately.

This is a take on a very simple and delicious salad I had at a Greek restaurant in NYC. It's so easy and the end result is super satisfying. Of course you can add your favorite herbs and toppings. But we find the lightly dressed salad is amazing and a great accompaniment to meat. Sprinkle with the salt right before serving; that pop of flavor and crunch is so good. Finishing salt is a must for this salad.

2 heads romaine lettuce, washed and dried
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon rice vinegar
freshly ground black pepper to taste
2 pinches flaky sea salt (such as Maldon®)

Steps:

  • Chop off the root end of the lettuce and slice leaves into thin ribbons, about 1/8 inch thick, discarding any pieces of the core. Place in a large bowl. Toss gently to separate lettuce ribbons.
