Make this quick and easy version of individual pizzas, with medium pitta bread used for the bases. Ingenious!

4 small Whole wheat pita(s)
4 tbsp(s) Store-bought pizza sauce
2 tbsp(s) Canned tomato paste
4 medium Fresh tomato(es) thinly sliced
1 small Uncooked onion(s) red, thinly sliced
2 tsp(s) Italian seasoning
150 gm(s) Green pepper(s) red or yellow, roasted, in brine, drained and rinsed, (5 1/2oz)
75 gm Feta cheese crumbled, (2 3/4oz)
1 tsp(s) Table salt
1 pinch Black pepper freshly ground
12 large Olive(s) in brine, black
4 item(s) Rosemary sprig fresh

Steps:

  • Preheat oven to 200°C, 400°F
  • Put the pita breads onto a baking sheet. Mix the pizza topping and sun-dried tomato paste together and spread over the pitta breads. Arrange the tomato slices and red onion on top and sprinkle with the Italian seasoning.
  • Tear the peppers into strips and scatter them over the pittas, then sprinkle the cheese on top. Season with ground black pepper, then pop 3 olives and a sprig of rosemary on top of each one.
  • Bake in the oven for 10 - 12 minutes, then serve.Chef's tip: Use 4 mini pittas to make a tasty snack, halving the quantities of the topping ingredients.

As an appetizer or light lunch, these mini pizzas are easy to make and use readily available ingredients. Blue cheese adds a unique flavor, and pita bread is the perfect crust.

6 pita breads
1 (6.5 ounce) can tomato sauce
1 (4 ounce) can sliced black olives, drained
1 ounce diced pimento peppers, drained
2 small tomatoes, thinly sliced
4 ounces shredded mozzarella cheese
4 ounces blue cheese, crumbled
1 pinch dried basil
1 pinch dried oregano
1 pinch crushed coriander seed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Warm pitas in the preheated oven or in a microwave for 1 minute, or until soft. Spread lightly with tomato sauce, pressing to flatten while spreading. Sprinkle with black olives, pimento peppers, tomatoes, mozzarella cheese, blue cheese, basil, oregano and coriander.
  • Spread the pitas on a large baking sheet and place in the preheated oven 8 minutes, or until the pita bread has reached desired crispness. Serve whole, or cut into slices.
