A really savory dish that can be served hot or cold. A crusty loaf of bread or the sweetness of Challah makes this a delicious main dish!

4 cloves or 1 teaspoon of fresh minced garlic
1/2 cup minced shallot
4 ounces butter
2 tablespoons olive oil
1/3 cup chopped scallion
1 cup white wine (your preference dry or sweet)
3 tablespoons chopped fresh basil
1 teaspoon oregano
2 lbs mussels
1/2 lb shrimp
1 lb scallops

Steps:

  • Melt butter and proceed to saute the garlic and shallots in olive oil until lightly browned.
  • Add scallions to the pot and saute for another 5 minutes.
  • Mix in the basil, oregano and wine and allow the mixture to slowly simmer on low flame for 5 mintues.
  • Add in the mussels, scallops and shrimp and cover. Allow the pot to simmer for 10 minutes until the mussels are open.
  • Serve with the bread to soak up the sauce in a deep bowl and enjoy!

½ (16 ounce) package squid ink linguine
2 cups white wine
1 leek, chopped
¼ cup unsalted butter, softened
4 green onions, chopped
1 shallot, chopped
4 cloves garlic, chopped
6 large fresh scallops, or more to taste
12 New Zealand green-lipped mussels, cleaned
salt and freshly ground black pepper to taste
½ lemon, sliced, divided
¼ cup heavy whipping cream
½ baguette, sliced and toasted

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.
  • Combine white wine, leek, butter, green onions, shallot, and garlic in a large pot; bring to a boil. Reduce heat and simmer until leek and shallot soften, 2 to 4 minutes.
  • Stir scallops, mussels, salt, and pepper into the pot. Cover and cook, stirring occasionally, until scallops are opaque and mussels open, 2 to 4 minutes. Squeeze in juice from 2 lemon slices. Remove from heat; stir in heavy cream.
  • Divide linguine between serving bowls. Scoop scallop and mussels on top. Serve with remaining lemon slices and toasted baguette.

12 ounces large shrimp
Kosher salt
2 tablespoons extra-virgin olive oil
1 onion, sliced
3 stalks celery, thinly sliced, plus leaves for topping
1/2 cup dry white wine
1/4 teaspoon red pepper flakes
1 28-ounce can whole plum tomatoes, crushed by hand
12 ounces campanelle pasta (or other short pasta)
1 pound mussels, scrubbed and debearded
1/4 cup chopped fresh parsley

Steps:

  • Butterfly the shrimp: Peel the shrimp, then cut along the curved side with a small sharp knife, about three-quarters of the way through. Devein the shrimp and set aside.
  • Bring a large pot of salted water to a boil. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and celery and cook until softened, about 4 minutes. Add the wine and cook until reduced, 1 to 2 minutes. Season with 1/2 teaspoon salt and the red pepper flakes. Add the tomatoes and bring to a simmer; cook until slightly thickened, 10 to 12 minutes.
  • Meanwhile, add the pasta to the boiling water and cook as the label directs for al dente. Reserve 1/2 cup cooking water, then drain.
  • Add the mussels to the tomato sauce, cover and cook until they just begin to open, 2 to 4 minutes. Add the shrimp, cover and cook until the shrimp is cooked through and the mussels have opened fully, 2 to 4 more minutes. (Discard any unopened mussels.)
  • Add the pasta to the sauce and stir to coat, stirring in enough of the reserved cooking water to loosen the sauce. Divide among bowls; top with the parsley and celery leaves.

8 ounces uncooked thick spaghetti
1 tablespoon vegetable oil
1 pound bay scallops
2 tablespoons butter
3 cloves garlic, minced
2 teaspoons grated lemon zest
1 pinch red pepper flakes
⅓ cup dry sherry
1 cup heavy cream
salt and pepper to taste
1 lemon, juiced
2 tablespoons chopped Italian parsley, divided
Freshly grated Parmigiano-Reggiano cheese, for serving

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until tender yet firm to the bite, about 10 minutes or 1 minute less than directed on the package.
  • Heat oil in a large skillet over high heat. When oil just starts to smoke, add scallops and move them into a single layer. Let sear on high for 60 seconds. Toss to turn. Add butter and stir scallops until butter melts. Stir in garlic. Add lemon zest and red pepper flakes. Stir in sherry and cook and stir until alcohol cooks off, about 1 minute. Pour in cream. When mixture begins to simmer, reduce heat to medium-low. Add salt, pepper, and lemon juice.
  • Drain pasta. Transfer to skillet with scallops; bring to a simmer. Add half the parsley. Cook until pasta is heated through and tender, about 1 minute. Remove from heat. Grate generously with grated cheese. Add the rest of the parsley. Serve in warm bowls.

8 oz penne pasta ((for gluten free version, use gluten free brown rice pasta))
2 tablespoons olive oil
4 oz sun-dried tomatoes (, without oil)
4 garlic cloves (, minced)
1 cup half-and-half
1 cup mozzarella cheese (, shredded (do not use fresh Mozzarella, use pre-shredded Mozzarella))
1 tablespoon dried basil (, if using fresh basil you can add more)
1/4 teaspoon red pepper flakes (, crushed, add more to taste)
1/8 teaspoon paprika
1/2 cup reserved cooked pasta water (or more)
1/4 teaspoon salt
1 pound scallops (, medium size, about 12-14 scallops, thawed completely if frozen)
1/4 teaspoon salt
2 tablespoons olive oil

Steps:

  • If using frozen scallops, make sure the scallops are thawed completely.
  • Blot each scallop with paper towels to remove extra water. Set them aside on a plate while you prepare the pasta and the sauce. You will cook scallops last to make sure they are not over-cooked.
  • Cook pasta according to package instructions. Reserve some cooked pasta water. Drain the pasta.
  • Note: if using sun-dried tomatoes in oil (in a jar), make sure to drain sun-dried tomatoes from oil, before using them.
  • Heat 2 tablespoons olive oil (you can use the reserved olive oil from the sun-dried tomatoes jar, or use regular olive oil) in a large skillet on medium-high heat. Add sun-dried tomatoes (drained from oil and sliced into smaller chunks, if needed) and minced garlic, and saute on medium heat, stirring, for 2 minutes until the garlic is fragrant. The skillet should be hot.
  • Add half and half to the hot skillet with sun-dried tomatoes and bring to boil. Add shredded cheese to the skillet, and stir in while boiling. Immediately reduce to simmer and cook, constantly stirring, until all the cheese melts and the creamy sauce forms. If the sauce is too thick, add a small amount of half and half or reserved cooked pasta water. Add basil, crushed red pepper flakes, paprika. Stir.
  • Add 1/4 teaspoon of salt gradually, stirring on low heat and tasting (you might need slightly less than 1/4 teaspoon).
  • Add cooked pasta to the sauce, and reheat gently on medium heat. Taste, and add more salt, if needed. Add a small amount of half and half or reserved cooked pasta water, if the sauce is too thick. Let everything simmer on low heat for a couple of minutes for flavors to combine.
  • Season with salt by sprinkling each scallop with a dash of salt.
  • Use a large, non-stick skillet (I used stainless steel skillet which works well for me as non-stick). Heat 2 tablespoons olive oil in this non-stick skillet on high heat until hot but not smoking. Oil should not be smoking, just rolling easily around the skillet.
  • Add scallops without overcrowding the pan. Sear on one side for about 3-4 minutes until the bottom is nice golden color. Don't move the scallops around the pan in the beginning.
  • Turn the scallops to the other side and cook for 2 more minutes. Remove from heat and transfer the scallops to the plate immediately. Don't let the scallops sit in the hot skillet, off heat, because they will start to steam, lose their crust and harden up.
  • Add cooked scallops to the pasta and the cream sauce and reheat gently. Serve.
  • Note: Make sure to salt the dish just enough to bring out of the flavors of basil and sun-dried tomatoes.

2 shallots (finely chopped)
0.5 cup white wine
0.25 cup fish stock
5.333 cups mussels (beards removed, open ones discarded)
0.375 cup cream (at least 30% fat)
8 cups whole-grain penne pasta
2 Tbsps parsley (finely chopped)
1 small chili pepper (finely chopped)

Steps:

  • Heat the oil in a pot and fry the shallots. Quench with the white wine and the fish stock and season with salt and ground black pepper.
  • Add the mussels to the broth. Cover and steam for approx. 6 minutes until all the mussels are open. Discard any that remain closed.
  • Remove the mussels from the pot using a draining spoon and place in a bowl, cover and keep warm.
  • Add the cream to the broth, heat gently, season carefully with salt and ground black pepper and froth a little using a hand mixer.
  • In the meantime cook the pasta in salt water and drain. Mix the hot pasta and half the broth with the mussels.
  • Arrange on plates and drizzle with the remaining broth. Garnish with parsley and chilli and serve immediately with white wine.

1 head of garlic, top cut off, drizzled with olive oil and baked, covered for 1 hour in 375 oven.
2 Tablespoons olive oil
1 lb shrimp, shelled and cleaned
1 lb sea scallops, halved
1 cup low sodium chicken broth
6 Tablespoons butter
1/4 teaspoon red pepper flakes
1/2 cup heavy cream
juice of half a lemon
1 1/2 cups finely shredded romano cheese
1 pound penne pasta, cooked and drained.

Steps:

  • When garlic is cool enough to handle, squeeze cloves into a small bowl. Mash lightly with a fork until pasty. Saute shrimp and scallops in olive oil in large skillet over medium heat, until cooked through, about 3 minutes. Remove shellfish from pan and set aside in medium bowl, covered. Deglaze pan with chicken broth and reduce until slightly pasty. Lower heat while adding butter so it stays thick when melted. Add heavy cream, lemon juice, red pepper and mashed garlic. Increase heat and stir until ingredients incorporate. Do not allow to boil. Add remaining cheese and stir about 1 minute more until sauce is thick and smooth. Return shellfish and any juice to pan and cook through for about 1 minute. Pour mixture over cooked penne and toss with remaining cheese.

Steps:

  • Melt 1 1/2 tablespoons butter in large nonstick skillet over medium-high heat. Add breadcrumbs; sauté until golden, about 5 minutes. Mix in 3 tablespoons basil and thyme. Remove from heat.
  • Combine mussels and 1 cup water in large pot. Cover; boil until mussels open, about 7 minutes (discard any mussels that do not open). Using tongs, transfer mussels to bowl. Tent with foil. Strain cooking liquid into small bowl.

Melt 2 tablespoons butter with 2 tablespoons oil in same skillet. Add garlic; sauté 30 seconds. Add shrimp, scallops and 1/2 cup basil and sauté 3 minutes. Add mussel cooking liquid; simmer until shellfish are cook through, about 3 minutes. Add vegetables; stir to heat through.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain.
  • Pour vegetables and shellfish over pasta; toss to coat. Season with salt and pepper. Sprinkle with 1/2 cup basil. Top with mussels and breadcrumbs.
