Steps:
- Preheat oven to 350°F Spray a 24-cup mini muffin tin with non-stick spray.
- In a large bowlcombine baking mix, milk, eggs. Separate into 4 equal portions and adddesired mix-ins.
- Add batter to the prepared muffin tin with a heaping Tablespoon or a #10 scoop. Sprinkle with more toppings.
- Bake 15-20 minutes until golden brown. Serve with maple syrup.

- You can add the dry ingredients and whisk together, then add the wet and combine fully.
- I tend to just put everything in a bowl and whisk, these pancakes are really fuss free.
- Heat a pan or griddle on medium-low heat and coat with a small layer of butter.
- Using a tablespoon measure use about 3/4 of a tablespoon of batter (just scoop with the tablespoon measure but don't scrape out the entire amount, a quick pour will leave enough behind).
- Cook the pancakes on both sides until lightly browned, about 45 seconds on each side.
- Enjoy with your favorite toppings or mix-ins.

- Preheat oven to 350 degrees F
- Spray mini muffin tin with non stick spray.
- In a bowl mix together pancake mix according to the package instructions.
- Fill each mini muffin tin 1/2 of the way full of pancake mix. Add in your favorite topping or mix in.
- Bake at 350 degrees for 10 minutes.
- Serve immediately or store in an air tight container in the fridge or freezer until ready to enjoy.
PANCAKE MINI-MUFFINS
Steps:
- Preheat the oven to 425 degrees. (**See note below.)Sift together flour, baking powder, sugar, and salt. Set aside.Stir together the milk and vinegar and let it sit for 1 minute. Whisk in eggs and vanilla.Combine dry ingredients and wet ingredients, then stir in melted butter. If batter is too thick, stir in a little milk. Spray a mini-muffin pan generously with baking spray. Fill cups 2/3 full. If using blueberries, drop 2 to 3 blueberries into each cup.Bake for 8 to 9 minutes, or until golden brown on top. Let sit in the pan for 1 to 2 minutes, then turn them out of the pan. (Use a small knife if any are stubborn.)Serve warm with warm syrup!**425 will result in crisper edges. For a softer muffin, bake at 400 for 11 minutes.
