1 package (13 ounces) whole wheat English muffins, split
3/4 cup fat-free refried beans
3/4 cup salsa
1/3 cup sliced ripe olives
2 green onions, chopped
2 tablespoons canned chopped green chilies
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • Spread cut sides of muffins with refried beans; top with salsa, olives, onions, chilies and cheese. Place on baking sheets; broil 4-6 in. from the heat for 2-3 minutes or until cheese is melted.

Mini Mexican Pizzas make a great appetizer.

12 tortillas
2 tablespoons butter
1 tablespoon white onion (finely chopped)
2 tablespoons flour
1 1/2 cups milk
1/4 teaspoon salt
1/8 teaspoon black pepper
1 pound ground beef
1 package taco seasoning
1 cup shredded cheese
toppings of your choice: sliced fresh jalapeno pepper, chopped tomatoes, guacamole, sour cream

Steps:

  • To prepare the mini Mexican pizzas, use a biscuit cutter to cut small rounds of tortillas. You can keep the trimmings and fry to use on your favorite taco salad. Add enough oil to coat the bottom of a saucepan with vegetable oil. Fry the tortillas until golden brown on both sides. T
  • his will take just a moment or two. Drain on a wire rack. Prepare the pizza sauce: Heat the butter and onion in a small saucepan over medium heat. When the onion becomes fragrant and translucent add the flour, and stir for both 60 seconds. Add the milk in two equal portions. Add the second portion of milk once the first has thickened. Season with salt and pepper.
  • Prepare the ground beef in a medium-sized skillet. Drain off excess fat. Add taco seasoning and recommended amount of water according to the package directions. To assemble pizzas. Add about 1 teaspoon of the white sauce to each round, then add a portion of taco meat. Top with cheese, and place in a 350-degree oven until the cheese begins to melt. When you remove the mini Mexican pizzas from the oven place on a serving plate, and be sure to serve with plenty of Fresh Cravings Restaurant Style mild crave salsa.

Number Of Ingredients 6

1 pound ball store-bought pizza dough
Olive oil, for brushing pans
4 tomatoes, thinly sliced
12 ounces Mexican chorizo, casing removed, cooked and crumbled
1 /2 to 2 cups shredded mozzarella or Monterrey Jack cheese
1 teaspoon dried oregano

Steps:

  • Cook the chorizo in a medium-size skillet over medium heat. Drain on paper towels.
  • Preheat the oven to 375 degrees F.
  • Put the dough out onto a well-floured surface. Divide the dough into 4 equal pieces. Roll into 4inch circles, using a rolling pin or stretching it into circles by hand. Arrange the circles on 2 baking sheets lightly brushed with oil.
  • Top each pizza with tomato slices and crumbled cooked chorizo. Top with shredded cheese and sprinkle with dried oregano.
  • Bake until the dough is golden brown and cheese is bubbly, about 20 minutes.

1 (16 ounce) can refried beans
1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
½ avocado, diced
1 tablespoon black olives, sliced

Steps:

  • Heat the refried beans.
  • In a large skillet, brown the ground beef. Stir in the seasoning packet.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
  • Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
  • Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

1 tablespoon olive oil
8 ounces lean ground beef (90% lean)
1/4 cup finely chopped onion
2 garlic cloves, minced
1 can (8 ounces) tomato sauce
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
2 whole wheat pita breads (6 inches), cut in half horizontally
1 medium tomato, seeded and chopped
1/2 cup fresh baby spinach, thinly sliced
12 Greek pitted olives, thinly sliced
1/2 cup shredded part-skim mozzarella cheese
1/4 cup crumbled feta cheese

Steps:

  • Heat oil in a large nonstick skillet; cook the beef, onion and garlic over medium heat until meat is no longer pink, 5-6 minutes; drain. Stir in tomato sauce and rosemary; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 6-9 minutes., Place pita halves, cut side up, on a baking sheet. Top with meat mixture, tomato, spinach and olives. Sprinkle with cheeses. Bake at 400° until cheeses are melted, 4-6 minutes.

I found this recipe in an October issue of Quick & Simple magazine and I thought I would put it here for all to enjoy. I did however change a couple of steps and used taco seasoning instead of chili seasoning since that was the only thing I had. Submitted to "ZAAR" on October 9th,2007

1/2 lb lean ground beef
1 teaspoon taco seasoning (I used Mucho Gusto Taco Seasoning Mix)
2 (12 inch) flour tortillas
6 tablespoons salsa, divided (I used mild)
1 roma tomato, diced
1/2 cup frozen corn, thawed
1/2 small red onion, diced
1 cup shredded Mexican blend cheese

Steps:

  • Preheat oven to 375°F.
  • While oven is heating,add ground beef and taco seasoning to a medium-sized skillet over medium heat.
  • Cook beef until no longer pink,about 8 to 10 minutes,drain if needed.
  • Lightly spray two medium sized cookie sheets with cooking spray.
  • Place two tortillas on each sheet,then lightly spray tortillas with more cooking spray.
  • Bake tortillas until lightly browned, about 6 to 8 minutes.
  • Remove tortillas from oven and evenly spread 1 1/2 tablespoons of salsa on each.
  • Divide ground beef, corn, onions, and tomatoes evenly over each tortilla.
  • Divide cheese evenly over the top of ground beef mixture.
  • Bake for 10 to 12 minutes or until cheese is melted.
