MINI MEATLOAF
This easy Mini Meatloaf recipe can be made on a sheet pan or in muffin tins for a perfect portion-sized family dinner!

- Preheat the oven to 350 degrees.
- Sauté the vegetables: Melt the butter in a small saucepan over medium heat. Sauté the onions and peppers for 4 minutes. Add the garlic and sauté for 1 more minute. Remove and let cool.
- Combine Wet ingredients: Whisk together the egg, milk, mustard, ketchup, BBQ Sauce, Worcestershire sauce, cheese, salt, and pepper in a large bowl.
- Add remaining ingredients: Stir in the Ritz crackers, then add the cooled onions/peppers/garlic. Add the ground beef and gently mix until just combined. Don't overwork the meat or it will become tough.
- Form into loaves: Divide the meat mixture into 4 equal parts and mold them into 5-inch loaves. Place on a parchment paper lined baking sheet (preferably a sheet that has raised edges to avoid overflow from drippings.) Combine the glaze ingredients and brush half of it over the meatloaf.
- Bake Once/Remove Grease: Bake for 25 minutes and carefully remove it from the oven, there will be grease to remove. To do this, carefully transfer each meatloaf to a new parchment paper lined baking sheet using a spatula. OR, transfer to a plate and replace the original baking sheet with new parchment paper. (See PRO tips in notes section for an alternative method of handling the grease.)
- Bake Twice: Brush remaining glaze on top of the meatloaf. Bake for 15 more minutes, the internal temperature should be 160 degrees.
- Serve: I like to brush a little more ketchup on top prior to serving. Serve with mashed potatoes and roasted green beans or roasted carrots.

- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and place a cooling rack on top. Mist the rack lightly with cooking spray.
- Combine the beef, egg, 1/4 cup ketchup, the onion, breadcrumbs, Worcestershire sauce, parsley, thyme, 1/2 teaspoon each salt and pepper, and the garlic powder in a large bowl. Use your hands to mix everything together.
- Shape tablespoonfuls of the meat into small, thin patties, about 2 inches in diameter. Place on the prepared rack on the baking sheet. Brush the patties with the remaining 1/4 cup ketchup and bake about 20 minutes.
- Meanwhile, spread mayonnaise on one side of each bun. Serve each meatloaf slider on a prepared bun.
MINI BUNDT MEATLOAVES
There are times when having your oven on for a long period of time is not desirable and especially in the summer. The benefit of these Mini Bundt Meatloaves is that you can cook them in a shorter time than making one big meatloaf. These also can be frozen for a quick dinner idea later on. But I have been wondering, what is the history of meatloaf? Apparently, it goes all the way back to medieval Europe in the 5th century where scraps of food were combined for a meal. But meatloaf has been a traditional meal in Germany, Belgium and Scandinavia for a long time. Without a doubt, meatloaf is also very popular and a staple in the United States. Enjoy!

- Preheat oven to 350 degrees F. In a bowl, mix the last three ingredients and set the ketchup sauce aside. In a pan, sauté the peppers, onions and garlic until just translucent. Take off the heat and set aside to cool. In a large mixing bowl, combine all of the first 12 ingredients and mix with your hands to create the meatloaf mixture. Lightly grease a 6 cup Bundt or a 6-cup large muffin pan. You can also use a 12-cup muffin pan as well. Divide the meat mixture into equal portions in the 6 cups. Spoon the ketchup sauce over the 6 meatloaves. Bake for 30-40 minutes or until the internal temperature reaches 160 degrees F. This serves 6 and goes well with mashed potatoes and sautéed slivered Brussel sprouts as one option!

- Preheat oven to 350°F.
- Combine all meatloaf ingredients in a large bowl, mixing lightly but thoroughly.
- Divide mixture evenly into 12 equal portions. Press into the cups of a 12-cup mini bundt pan, leveling tops.
- Bake for 20 minutes, or until internal temperature reaches 160°F.
- Remove bundts from pan and let stand for 5 minutes before serving.
- Note: The bundts will be light brown in color. If you prefer a darker outside (like with a burger) then take the bundts out a few minutes early. Remove bundts from pan and transfer to a rack positioned in a sheet pan. Broil for a few minutes.
- Place a bundt, some lettuce pieces, a tomato slice, and 1 or 2 onion rings inside each slider bun.
- Serve with ketchup or any other toppings to your preference.
