3 1/2 ounces/100 g ricotta cheese
1 egg
10 sun-dried tomatoes, chopped
1 cup/250 ml freshly grated Parmigiano cheese
Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 onion, finely chopped
2 pounds/about 800 g tomato puree
Salt and freshly ground black pepper

Steps:

  • For the meatballs: In a mixing bowl, add the ground beef, ricotta cheese, egg, sun-dried tomatoes, Parmigiano cheese, salt, and pepper. Mix well until the ingredients are evenly distributed. With your hands, shape the meatballs into the size of golf balls and then pat them down so they will evenly cook.
  • For the tomato sauce: In a large pot, heat the extra-virgin olive oil and cook the onions until translucent. Add the tomato puree and bring to a boil. Add the salt, and pepper, to taste and lower the heat to medium. Add the uncooked meatballs to the pot and let cook on medium heat for 30 minutes.

28 ounces tomatoes, crushed
6 ounces tomato paste
1/2 cup chicken stock
1/4 cup dry red wine
1 teaspoon sugar
2 tablespoons romano cheese, freshly grated
1/2 teaspoon salt
1/2 teaspoon dried oregano, crumbled
2 slices bread, soaked in broth or milk (with liquid squeezed from it)
1 lb chuck, ground
2 large eggs, lightly beaten
1/2 cup romano cheese, freshly grated
2 cloves garlic, minced
3 tablespoons fresh parsley, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/8 teaspoon black pepper, freshly ground ( to taste)
1/4 cup olive oil

Steps:

  • Make the sauce: in a heavy saucepan cook the onion and the garlic in the oil over low heat, stirring, for 2 minutes; add parsley, basil, tomatoes, tomato paste, stock, wine, sugar, romano, salt, and oregano, and simmer the sauce, stirring occasionally, for 30 minutes.
  • While sauce is cooking, prepare the meatballs: in a large bowl combine bread (with liquid squeezed from it), chuck (it's really good if you grind your own!), eggs, romano, parsley, garlic, the oregano, salt, and pepper; mix well and form into 8 meatballs.
  • In a large skillet brown the meatballs in the oil over high heat, turning them often; make sure to not crowd them in the pan, otherwise they won't brown properly.
  • Transfer the browned meatballs to the sauce with a slotted spoon and simmer the mixture, stirring occasionally, for 30 minutes.
  • You can serve them with your favorite pasta right away, but these improve in flavor if they're cooled and chilled, covered, and refrigerated overnight or up to 2 days before serving.

1 cup fresh bread crumbs

Steps:

  • In a large bowl, combine ground beef, bread crumbs, parsley, Parmesan, 1/4 teaspoon black pepper, garlic powder and beaten egg. Mix well and form into 12 balls. Store, covered, in refrigerator until needed.
  • In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent. Stir in tomatoes, salt, sugar and bay leaf. Cover, reduce heat to low, and simmer 90 minutes. Stir in tomato paste, basil, 1/2 teaspoon pepper and meatballs and simmer 30 minutes more. Serve.

All purpose flour
1/4 cup extra-virgin olive oil

1/2 teaspoon Hungarian sweet paprika
1 cup (or more) low-salt chicken broth

1/4 teaspoon crumbled saffron threads

Steps:

  • Mix pork, veal, 1 tablespoon parsley, half of garlic, egg, bread, 1 1/4 teaspoons salt, and 1/2 teaspoon pepper in medium bowl to blend. Shape meat mixture into 1-inch balls. Dust meatballs with flour. Set aside.
  • Heat oil in heavy large skillet over medium-high heat. Add meatballs and sauté until browned on all sides, about 10 minutes. Using slotted spoon, transfer meatballs to plate. Add onion to skillet; reduce heat to medium and sauté until tender, about 2 minutes. Stir in paprika, then 1 cup broth and wine. Return meatballs with any accumulated juices to skillet. Bring to simmer. Cover and cook until meatballs are tender, about 25 minutes. Uncover; add 2 tablespoons parsley, remaining garlic, and saffron. Simmer until sauce thickens, turning meatballs occasionally, about 10 minutes. Season sauce to taste with salt and pepper. (Can be made 1 day ahead. Cool slightly, then cover and refrigerate. Bring to simmer, thinning with broth if necessary.)
  • Place meatballs with sauce on platter. Top with 1 tablespoon parsley.

1 medium onion, grated
2 eggs
1 bunch flat-leaf parsley, finely chopped
1 red bell pepper, diced
3 cloves garlic, chopped
1 14-oz. can tomatoes, chopped
2 Tbsp olive oil
1 c water
salt and freshly ground black pepper to taste
small bowl of water with a tiny bit of olive oil to shape the meatballs

Steps:

  • 1. Preheat oven to 350 degrees F. In a large bowl, combine the grated onion, eggs and parsley and mix well.
  • 2. Stir in ground meat and season with salt (1-2 tsp.) and ground black pepper to taste. Knead for 3-5 minutes until mixed well. Cover meat and let sit in refrigerator for 30 minutes.
  • 3. Heat olive oil and add onion, bell peppers and garlic. Saute approx. 5 minutes; stirring often. Add the chopped tomatoes and add 1 cup water. Stir, cover and cook on medium-low heat for 10 minutes. Turn off heat.
  • 4. Remove meat from refrigerator. Wet your hands and take a small walnut-sized amount of meat mixture and roll into a ball. Place the meatballs on a baking tray and bake for 25 minutes or until they get a nice golden brown coating.
  • 5. Transfer the baked meatballs to a large baking dish and pour the tomato sauce around them giving a gentile mix. Bake for 15 minutes. During cooking the sauce will thicken and coat the meatballs. Serve hot with plain rice and if desired, a cucumber, mint and yogurt dip.

2 tbsp olive oil
150g/5oz onion, finely chopped
1 clove garlic, crushed
900g/2lb beef mince
2 tbsp freshly chopped herbs, such as marjoram, or 1 tbsp rosemary
1 free-range egg, beaten
3 tbsp olive oil
salt and freshly ground black pepper
3 tbsp olive oil
110g/4oz onion, sliced
1 garlic clove, crushed
150g/5¼oz mozzarella, grated
1 tsp caster sugar
2 x 400g cans tomatoes

Steps:

  • Heat two tablespoons of olive oil in a heavy stainless steel saucepan over a gentle heat and add the onion and garlic. Cover and sweat for four minutes, until soft and a little golden. Allow to cool.
  • In a bowl, mix the minced beef with the cold sweated onion and garlic. Add the herbs and the beaten egg. Season the mixture with salt and pepper.
  • Fry a tiny bit to check the seasoning and adjust if necessary. Divide the mixture into approximately 24 round balls. Cover the meatballs and refrigerate until required.
  • Meanwhile, make the tomato sauce. Heat the oil in a stainless steel saucepan.
  • Add the sliced onion and the crushed garlic, toss until coated, cover, and sweat on a gentle heat until soft and pale golden.
  • Slice the canned tomatoes and add, with all the juice, to the onion mixture.
  • Season the contents with sugar, salt and freshly ground pepper.
  • Cook the tomatoes uncovered for approximately 30 minutes or until the tomato softens (while this is cooking make the meatballs).
  • Heat a frying pan and cook the meatballs for about 10 minutes in about three tablespoons of olive oil.
  • When they are cooked, put them into an ovenproof dish with the tomato sauce and top with the grated mozzarella. Place under a preheated grill until the cheese has melted.
  • Serve with spaghetti.

The trick to these meatballs is to keep them small. Don't actually use a teaspoon, but use about a teaspoon's amount of mince to roll each ball. If there are children around, so much the better; they tend to like making these. But otherwise, they're easy enough, and the slow repetitiveness of the action can be rather calming. To go with these divine meatballs, I like tagliatelle. De Cecco, Spinosi or Cipriani brands are all very good, but making fresh pasta is an experience worth trying. No one's saying you have to make it, but once you try, you'll soon see that it's not difficult. For US cup measures, use the toggle at the top of the ingredients list.

250 grams minced beef

Steps:

  • For the meatballs: Just put everything in a large bowl and then, using your hands, mix to combine before shaping into small balls. Place the meatballs on baking sheets or plates that you have lined with clingfilm, and put each in the fridge as you finish them. For the tomato sauce: Put the onion, garlic and oregano into the processor and blitz to a pulp. Heat the butter and oil in a deep, wide pan, then scrape the onion-garlic mix into it and cook over low to medium heat for about 10 minutes. Don't let the mixture catch, just let it become soft. Add the tomato passata and then half-fill the empty bottle with cold water (approx. 300-350ml / 1 1/4 cups water). Add this to the pan with the pinch of sugar and some salt and pepper, and cook for about 10 minutes. The tomato sauce will appear thin at this stage, but don't worry as it will thicken a little later. Stir in the milk, and then drop the meatballs in one by one. Don't stir the pan until the meatballs have turned from pink to brown as you don't want to break them up. Cook everything for about 20 minutes, with the lid only partially covering it. At the end of cooking time, check the seasoning, as you may want more salt and a grind or two more of pepper.
