MINI MANGO AND PASSIONFRUIT BAKED CHEESECAKES RECIPE
Fluffy, fruit and incredibly moreish - these mini mango and passionfruit baked cheesecakes gluten-free Hobnobs for added convenience.

Steps:
- Preheat the oven to 220C/gas 7. Mix the crushed biscuits with the melted butter and divide into the four cheesecake moulds. Bake for 10 mins and allow to cool slightly. Reduce the heat of the oven to 180C/gas 4.
- Meanwhile, beat the Philadelphia and sugar, stirring down the sides to ensure it's fully incorporated. Mix in the eggs, vanilla paste and all but 1tsp of the fruit compote.
- Divide into the moulds and top with a small dollop of the reserved compote. Use a cocktail stick or the end of a spoon to roughly swirl on top, this is optional. Bake in the oven for 20-25mins, there should be a slight wobble as they'll continue to set when they cool. Remove from the oven and allow to cool completely before removing from the moulds. Serve with extra compote, if liked.

- Blend cream cheese and condensed milk in a bowl with an electric mixer until well combined. Dissolve gelatin in water in a separate bowl.
- Beat dissolved gelatin, passion fruit puree, mango puree, and lime juice into the cream cheese mixture with the electric mixer until fully blended.
- Pour cream cheese mixture over the prepared crust. Let chill until set, 2 to 3 hours.

- Add biscuits to a food processor and process till crumbs form. Add the melted butter and run it again for a few seconds till the mixture becomes clumpy. Line two muffin tins (mine were 6 muffins in each tin) with cupcake liners. Add a tablespoon and a half of the biscuit crumb to each cavity and press it down lightly till the base has an even layer of biscuit crumb. Refrigerate for 20 minutes.
- Add gelatin and water to a bowl and mix well. Let this bloom for five minutes and then microwave for 20 seconds. Set aside.
- In a blender, place cream cheese, cream, mango puree, icing sugar and the gelatin mixture. Blend for 3-4 minutes till thick and creamy.
- Divide this mixture in the muffin tin since its filled to the top. Refrigerate the cheesecakes for 6-8 hours or overnight.

- To make the base: place macadamias, medjool dates and sea salt in a high speed blender/food processor and blend until the nuts are crushed and the mixture holds together. Scoop out crust mixture and press firmly into a 20cm spring-form pan and smooth out with the back of a spoon. Place in the freezer while you make the next step and rinse blender/food processor well.
- To make the mango and passionfruit layers: warm the coconut oil in a small pot on low heat until liquid, add the maple syrup and whisk to combine. Add the warmed maple syrup/coconut oil mixture to the blender/food processor with the macadamiasa and vanilla extract and blend until very smooth. Set aside half of the mixture. Add the mangos to the remaining mixture and blend until smooth. Pour onto the crust and smooth with the back of a spoon or a spatula and place in the freezer to set for 30 minutes. Rinse the blender/food processor.
- To make the passionfruit layer; scoop out passionfruit pulp and add to the blender/food processor with the mixture (that you set aside) and process until smooth. Pour layer over the top of the mango layer and place in the freezer to set (minimum 2 hours).
