These cookies look just like little hamburgers.

4 drops green food coloring
½ teaspoon water
¼ cup flaked coconut
48 vanilla wafers
24 chocolate covered thin mints
1 tablespoon sesame seeds

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • In a bowl, combine food coloring with a few drops of water. Add coconut and cover the container, shake until coconut is tinted. Set aside.
  • Place 1/2 of the vanilla wafers, flat side up, in an ungreased cookie sheet. Top each wafer with a peppermint patty. Place in the oven about 1 minute or just until chocolate begins to soften.
  • Remove cookies from oven and sprinkle each mint with 1/2 teaspoon coconut (for lettuce). Place another vanilla wafer on top and press gentle. With a clean paint brush, brush the top of each hamburger with just enough water to moisten so that the sesame seeds will stick when sprinkled on top of each cookie. NOTE: You can use canned chocolate frosting in place of peppermint patty, then eliminate the baking.

1 (12 ounce) box vanilla wafers (Nabisco Nilla original size)
1 (10 ounce) package cookies (Keebler Fudge Shoppe Grasshopper, chocolate covered mint cookies)
1 cup sweetened flaked coconut
1 tablespoon toasted sesame seeds
1 egg white, slightly beaten with water
1/4 cup slivered almonds (toasted)
1/2 cup butter (1 stick, softened)
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 1/2 cups powdered sugar
1 pinch salt
2 -3 tablespoons cream or 2 -3 tablespoons milk
food coloring (green, red*, yellow)

Steps:

  • FROSTING: Combine butter, vanilla, sugar, salt, and half-and-half in an electric mixer.
  • Add enough milk to get to a fairly thin consistency for frosting.
  • Divide into 3 separate bowls; one holding ½ of the frosting, the other two containing ~1/4 each.
  • Color ½ of the frosting orange to simulate cheese, using red and yellow food coloring. (Use real items to match colors).
  • Color ¼ of the frosting bright yellow to simulate mustard, and the last, red, to simulate ketchup. (Red will take a LOT of liquid food coloring to get past "pink." You can buy gel-based "super red"at any cake decorating supply store).
  • Place each batch of frosting into a plastic baggie.
  • Remove air, close, and snip a tiny bit off of one of the bottom corners.
  • COOKIES: Preheat oven to 325º. Toast sesame seeds lightly in a small sauté pan. Cool.
  • Brush ½ of the Nilla wafers tops with egg wash.
  • Place on baking sheet.
  • Sprinkle with the toasted sesame seeds.
  • Pop into the oven for ~5 minutes to gently cook the egg white, so that the cookies don't need to be refrigerated.
  • While these are cooking, with a rasp, lightly shave the curved tops of the remaining Nilla wafers, so that they can sit flat on a plate (optional, but makes life easier later).
  • Place ½ of the coconut into a plastic zip-lock bag.
  • Add several drops of green food coloring and squish the bag around until the coconut resembles lettuce.
  • Place the shaved Nilla wafer "bun bottom" with the natural flat side up.
  • Dab 4 drops of frosting "ketchup" around the edge. Dab 4 drops of frosting "mustard" in the remaining spaces on the edge.
  • Sprinkle green "lettuce" coconut.
  • Place the mint cookie "hamburger patty" on top and gently press down slightly.
  • Squeeze a GOOD dollop of orange "cheese" frosting on top of the cookie.
  • Sprinkle remaining white "onion" coconut on top.
  • Place the sesame-coated "top bun" Nilla wafer on top, and gently press down.
  • Serve with toasted slivered almonds, resembling French fries!
  • *It takes a LOT of liquid red food coloring to get past "pink." Try using "super red" gel-based red pigment, found at any local cake decorating supply store.

I made these sweet little cookies for my friend's baby shower (along with the other tasty treats you see in the background!) They were a huge hit with the kids in attendance, and the adults loved them as well!!

1/2 c vanilla frosting
gel food coloring, red & yellow
40 vanilla wafers
20 peppermint patties
1 tsp corn syrup
1 tsp sesame seeds

Steps:

  • 1. Place 1/4 cup frosting in each of two small bowls. Tint one red and the other yellow. Frost the bottoms of 20 vanilla wafers yellow; top with a peppermint patty.
  • 2. Spread with red frosting. Brush tops of the remaining vanilla wafers with corn syrup; sprinkle with sesame seeds. Place over red frosting.
  • 3. Note: I don't always keep corn syrup on hand, so I often substitute honey instead. Works great.

CHEESEBURGER IN PARADISE COOKIES

That's right folks, the Jimmy Buffett fan in me is sharing a "Buffett-inspired" recipe to get into the "swing of things" and gear up for tailgating season. Also lots of fun for kids' snacks or barbecues. I saw this in a little shop in Estes Park, CO and tried out some things to make a "copy" when I got home.

2 (12 ounce) boxes vanilla wafers
1 egg white
1/4 cup sesame seeds
4 cups sifted powdered sugar
4 -5 teaspoons milk
1/2 teaspoon almond extract
green food coloring
yellow food coloring
red food coloring
1 cup shredded sweetened coconut
2 (10 ounce) packages peppermint patties (anything resembling the girl scouts' "thin mints")

Steps:

  • Place whole, perfect vanilla wafers on 2 trays; one with wafers facing up, the other with wafers facing down.
  • Each tray should have the same number of wafers (35-40).
  • Brush wafers (rounded side up) with egg white and sprinkle with sesame seeds.
  • Set aside.
  • To color coconut, place in small container with several drops of green food coloring.
  • shake well and let sit.
  • To make"cheese" frosting, whip powdered sugar and milk together til smooth.
  • add yellow and red food coloring til desired orange tint is achieved.
  • To assemble"cheeseburgers", use dab of frosting to glue peppermint cookies into place on to wafer (flat side up).
  • This is your"burger".
  • Now spread frosting"cheese" on and sprinkle with green coconut"lettuce".
  • Dab with frosting again and top with sesame wafer.
  • Repeat until all"burgers" are made.

1 pouch Betty Crocker™ sugar cookie mix
3 tablespoons all purpose flour
1/3 cup butter or margarine, softened
1 egg
1/2 cup Betty Crocker™ Rich & Creamy vanilla frosting (from 16 oz container)
16 chocolate-covered peppermint patties (1.5 oz), unwrapped
2 tablespoons green tinted flaked coconut*
1 can (6.4-oz) each Betty Crocker™ red and yellow decorating icing
1 teaspoon honey
1 teaspoon water
2 teapoons sesame seeds

Steps:

  • In medium bowl, combine cookie mix, flour, butter, and egg until soft dough forms. Shape dough into 32 (1-inch) balls. On ungreased cookie sheets, place balls 1 inch apart.
  • Bake at 375° F for 10 to 12 minutes or until set and edges are light golden brown. Cool 1 minute; remove to cooling rack. Cool completely.
  • Spread about 1/2 teaspoon vanilla frosting on bottom of each cookie. Top 1 cookie, frosted side up with 1 peppermint pattie and 1/2 teaspoon green coconut. Pipe red and yellow icing on peppermint pattie for mustard and ketchup; top with remaining cookie, frosting side down. Repeat with remaining cookies.
  • In small bowl, combine honey and water. Brush on top of each cookie; sprinkle with sesame seeds.
