This sort of inside-out pizza is something I concocted one evening when I had leftover baked ham and needed to fix something quick and simple. My husband loved it-so did all his friends when he took some to work for lunch. -Shelby Marino, Neptune Beach, Florida

2 tubes (13.8 ounces each) refrigerated pizza crust
1 cup ricotta cheese
4 to 6 ounces sliced pepperoni
2 cups diced fully cooked ham
2 cups shredded part-skim mozzarella cheese
Shredded Parmesan cheese, optional
Dried basil, optional
Spaghetti sauce, warmed

Steps:

  • Unroll one pizza crust onto a greased baking sheet; shape into a 14x11-in. rectangle. Spread half of the ricotta cheese lengthwise on half of the dough to within 1 in. of the edges. , Sprinkle with half of the pepperoni, ham and mozzarella cheese. Fold dough over filling; press edges firmly to seal. Repeat with remaining crust and filling ingredients. , Bake at 400° for 20-25 minutes or until golden brown. Sprinkle with Parmesan cheese and basil if desired. Cut into slices. Serve with spaghetti sauce.

Homemade pizza dough is filled with tomato sauce, ham and cheese then folded and baked.

For the dough
1 cup (236ml) warm water
1 package (3/4 ounce) rapid-rise yeast
1 tablespoon honey
1 teaspoon kosher salt
1 tablespoon olive oil
3 cups (450 grams) all-purpose flour
For the filling
1 cup (225 grams) marinara sauce
6 ounces (170 grams) mozzarella cheese, grated
Sliced ham

Steps:

  • For the dough:
  • Add the water to a bowl and stir in the yeast, honey, salt and olive oil.
  • To a large bowl, surface add the flour and make a well in the center.
  • Add a little of the yeast liquid and use your fingers or fork to slowly incorporate flour. Add a little more liquid as it is absorbed by the flour until you get a nice dough ball. You may not use all the liquid, don't let the dough be too sticky. Knead the dough for 5 minutes until smooth.
  • Lightly oil a bowl with a little olive oil and transfer the dough to the bowl. Turn once to coat all sides with the oil. Cover the bowl and put the bowl in a warm area to rise until doubled in volume, about 40 minutes.
  • Lightly flour your surface and turn out the dough. Divide the dough into half, then divide each of those in half balls. Continue this until you get 12 small balls of dough. Cover and allow to rest for 20 minutes.
  • Preheat oven to 325°F/165°C and cover a large baking sheet with parchment paper.
  • On a floured surface, roll out 1 ball to a 4 1/2 inch round, about 1/8 inch thick. Place half a teaspoon of marinara sauce in the center and add 1 teaspoon cheese and a slice of ham, leaving a border around the edge. Fold the dough in half over the filling and press to seal using your fingers or a fork.
  • Place on the parchment lined baking sheet and continue with the rest.
  • Before baking, brush the pastry with milk and brush sauce onto the centers. Bake for 15 minutes until golden brown.

Sliced ham
1/4 cup milk (for brushing)
1/4 cup marinara sauce (for brushing)

Steps:

  • Add the water to a bowl and stir in the yeast, honey, salt, and olive oil.
  • To a clean work surface pile the flour and make a well in the center.
  • Add a little of the yeast liquid and use your fingers to slowly incorporate flour. Add a little more liquid as it is absorbed by the flour until you get a nice dough ball. You may not use all the liquid - don't let the dough get too sticky!
  • Knead the dough for 5 minutes until smooth.
  • Lightly oil a bowl with a little olive oil and transfer the dough to the bowl.

1 (8-ounce) can refrigerated crescent-shaped dinner rolls

Steps:

  • Preheat oven to 375 degrees F.
  • In a medium bowl, combine cheeses, olives, and Italian seasoning. On a floured surface, unroll crescent dough in 1 piece. Roll out to a 16 by 8-inch rectangle. Using a pizza cutter, slice into 8 (4 by 4-inch) squares. Place 2 tablespoons of filling on half of each square. 8 tablespoons ricotta cheese

poppy seed, for topping
1 egg

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Cut pizza dough into 8 sections on a floured surface.
  • With one section, roll out dough until flat and circular.
  • Layer ham, swiss, pineapple, 1 tablespoon ricotta, and ½ tablespoon green onion.
  • Fold one side of dough up and over ingredients, and seal calzone by crimping the edges together.
  • Place on a parchment-lined baking sheet. Apply egg wash to outside of calzone and sprinkle with poppy seeds.

1 can (11 oz.) refrigerated soft breadsticks
12 slices OSCAR MAYER Smoked Ham, cut in half
1/4 cup KRAFT Grated Parmesan Cheese

  • Heat oven to 400°F.

Today calzones are most commonly stuffed with the exact same toppings that go on a pizza which, besides the crust issue, was one of my main problems with it. I mean, why not just fold a pizza in half, and call it a day? So, I decided to do what I hear is a more traditional filling featuring ricotta, fresh mozzarella, and ham. The result was as enjoyable as it was surprising.

24 ounces prepared pizza dough
8 slices prosciutto
2 cups ricotta cheese, drained
½ teaspoon salt
½ teaspoon freshly ground black pepper to taste
½ teaspoon cayenne pepper
1 ½ cups finely diced smoked ham
4 ounces fresh mozzarella cheese, thinly sliced, drained on paper towels
1 teaspoon extra-virgin olive oil
1 tablespoon cornmeal
1 egg
1 teaspoon water
1 tablespoon freshly grated Parmigiano-Reggiano cheese
2 cups marinara sauce for dipping, heated

Steps:

  • Preheat oven to 500 degrees F (260 degrees C). Line a baking sheet with parchment paper.
  • Divide dough into 4 equal portions; shape each into a ball. On a lightly floured surface, flatten each dough ball into a flat circle and roll out into an 8- or 9-inch circle.
  • Place 2 prosciutto slices on one half of each circle of dough, leaving a 1-inch empty border. Spoon ricotta cheese on prosciutto. Season with a pinch of salt, pepper, and cayenne pepper. Top with chopped ham, mozzarella slices, and a drizzle of olive oil.
  • Moisten edge of dough with a bit of water using your fingertip. Fold the empty half of the dough over the filling and lightly seal edges. Crimp the edges up to completely seal the calzone.
  • Sprinkle lined baking sheet with cornmeal. Transfer calzones to baking sheet. Cut several small slits in the top of the crust with the tip of a knife to allow for venting.
  • Beat egg with water to make egg wash. Brush the calzones with egg wash. Dust with grated Parmigiano-Reggiano cheese. Remove excess cornmeal and grated cheese from around calzones to avoid smoke from the hot oven.
  • Bake in preheated oven until browned, about 15 minutes. Let cool 15 minutes before serving. Serve with heated marinara sauce for dipping.

6 (1 ounce) packages mozzarella string cheese
1 (11 ounce) package refrigerated breadstick dough
1 cup jarred marinara sauce or 1 cup pizza sauce, for serving

Steps:

  • Preheat the oven to 400°F.
  • Unwrap the string cheese sticks and cut them in half crosswise. Open or unroll the bread-stick dough and separate it into 12 rectangles. Coil a rectangle of bread-stick dough around a piece of cheese stick as if you were wrapping it with yarn. Completely cover the cheese, tucking the dough ends under and pinching them to seal closed.
