1/2 cup shredded sharp cheddar cheese
1/2 cup chopped ripe olives
3 large eggs, lightly beaten
1 cup half-and-half cream
1/4 cup butter, melted
3 drops hot pepper sauce
1/2 cup biscuit/baking mix
2 tablespoons grated Parmesan cheese
1/2 teaspoon ground mustard

Steps:

  • In a large bowl, combine the ham, cheddar cheese and olives; divide among 12 greased muffin cups. In another bowl, combine the remaining ingredients just until blended. , Pour over ham mixture. Bake at 375° until a knife inserted in the center comes out clean, 20-25 minutes. Let stand for 5 minutes before serving.

1 (11-inch) store-bought pie dough
3 tablespoons butter
1 small onion, finely chopped
1 bunch asparagus, chopped into 1/2-inch pieces
Pinch cayenne
Kosher salt and cracked black pepper
1 tablespoon minced garlic
1/4 cup chopped chives
2 tablespoons Dijon mustard
4 eggs
1 cup heavy cream
1 teaspoon grated nutmeg
1 1/2 cups shredded white Cheddar

Steps:

  • Preheat the oven to 425 degrees F.
  • Roll out pie dough and mold into an 11-inch pie dish, crimping the edges to make ridges. Pierce the dough with a fork several times. Bake in the hot oven until slightly browned, about 6 to 8 minutes. Remove from the oven and let cool. Turn the oven down to 325 degrees F.
  • In a large skillet over medium-high heat, add the butter, onions, asparagus, cayenne and garlic. Sprinkle with a pinch salt and a pinch pepper. Cook for 5 to 6 minutes until the asparagus is soft and mixture is fragrant. Remove from the pan to a bowl and let cool.
  • In a large bowl, add the chives, Dijon mustard, eggs, heavy cream, nutmeg, a large pinch salt and a large pinch black pepper. Whisk together until well combined.
  • Add the asparagus mixture to the pie shell, then pour in the egg mixture. Top with the Cheddar and bake until the eggs are set, about 35 minutes. Remove from the oven, cut into wedges and serve.

1 pound fresh asparagus, trimmed and cut into 1-inch pieces

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack for 10 minutes.   • Heat oven to 375°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie. Do not prick crust. Bake 10 minutes. If necessary, use flat bottom of metal measuring cup to carefully press down on baked pie crust to flatten. Cool 10 minutes.

These delicious mini quiches are a time-saving party dish because they can be made in advance and then simply reheated before serving.

1 bunch pencil asparagus, trimmed
Coarse salt and freshly ground pepper
1/2 cup milk
1/2 cup heavy cream
2 large eggs
1 large egg yolk
Pinch of freshly grated nutmeg
All-purpose flour, for work surface
1/2 recipe Pate Brisee
3 ounces finely shredded Gruyere cheese
2 ounces cooked ham, cut into 1/4-inch pieces

Steps:

  • Preheat oven to 375 degrees. Bring a medium pot of water to a boil. Cut 3 inches from the tip-ends of the asparagus; reserving remaining stalks for another use. Generously add salt to boiling water. Add asparagus and cook until just tender, about 2 minutes; Drain. Cut into 1/2-inch pieces; set aside.
  • In a medium bowl, whisk together milk, heavy cream, eggs, yolk, and nutmeg. Season with salt and pepper. Strain through a sieve into a medium bowl; set aside.
  • On a lightly floured surface, roll out pate brisee to slightly less than 1/8-inch thick. Using a 2 3/4-inch round cutter, cut out 24 rounds. Fit rounds into a 24-cup nonstick mini muffin tin. If the pate brisee becomes too soft to work with, place in refrigerator to chill for 15 minutes. Divide half of the cheese, evenly between the lined cups. Top with ham. Divide milk mixture evenly between cups. Top each with 3 to 4 pieces of asparagus. Sprinkle with remaining cheese.
  • Bake until puffed and golden brown, about 30 minutes. Remove from oven and immediately remove quiches from muffin tin and transfer to a wire rack. Serve warm or at room temperature.

1 partially baked pie shell (10 or 11 inch)
1 tablespoon Dijon mustard
2 tablespoons butter
1 onion, finely chopped
1/4 cup finely chopped fresh dill (or 1 tsp. dried)
1 lb cooked asparagus, coarsely chopped
1 1/2 cups grated old cheddar cheese
4 eggs
1 cup milk
1 teaspoon salt
1/4 teaspoon pepper
nutmeg
cayenne

Steps:

  • Preheat oven to 375 degrees F.
  • Brush the partially baked pie shell with mustard.
  • Reserve.
  • Melt butter.
  • Cook onion until tender but do not brown.
  • Combine onion with dill, asparagus and cheese.

  • Beat eggs.
  • Add milk, salt, pepper, nutmeg and cayenne.
  • Pour the mixture over the asparagus and cheese.
