CHEESY POTATO GRATIN STACKS (MUFFIN TIN)

Cheesy Potato Gratin Stacks (Muffin Tin) image

Recipe video above. When you combine potatoes, cream, cheese, garlic and butter, you just can't go wrong. These individual size portions made in a muffin tin are great as a side, for breakfast with eggs (and bacon!) OR as finger food for a party!

Provided by Nagi | RecipeTin Eats

Categories     Finger Food     Side

Time 1h

Number Of Ingredients 10

Oil spray
1.2 kg / 2.4 lb starchy potatoes (, large long ones (Note 1))
30g /2 tbsp butter (, unsalted)
2 garlic cloves (, finely minced)
1/2 cup heavy / thickened cream
1 tsp fresh thyme leaves ((or 3/4 tsp dried))
1/2 tsp salt
Black pepper
75g / 2.5 oz gruyere cheese (sliced into 12 squares to fit into muffin tin (or other melting cheese, Note 2))
3/4 cup gruyere cheese ((or other melting cheese), shredded)

Steps:

  • Preheat oven to 350°F/180°C (all oven types).
  • Brush muffin tin with butter: Melt butter in a saucepan over medium heat then use what you need to lightly brush the muffin tin holes with butter. (Remaining butter is for the cream sauce)
  • Cream sauce: Into the remaining butter, add garlic and cook for 20 seconds. Add cream and salt then bring to a simmer. Simmer for 30 seconds, then remove from stove and keep warm.
  • Slice potato: Peel potatoes. Trim base so it stands upright. Then cut into cylinder shapes that fit tge muffi tin. Cut into 2mm/ 1/10" slices using a mandolin or sharp knife.
  • Assemble stacks: Place potato slices into the muffin tin so they go halfway up the muffin tin holes. Try to match by size to make them into neat stacks.
  • Cream: Drizzle each potato stack with 1 tsp of cream mixture - use 1/2 of the mixture.
  • Cheese slice: Top with cheese slice.
  • Top with potato, cream then thyme: Top each stack with remaining potato slices so the height is about 1cm / 1/3" above the rim of the muffin tin (they sink once baked). Drizzle with remaining cream mixture and sprinkle with most of the thyme (reserve some for topping).
  • Baked 40 minutes: Cover loosely with foil and bake for 40 minutes or until potato is cooked through. A small sharp knife should go through without any resistance.
  • Top with cheese, bake 10 minutes: Remove from oven, sprinkle with shredded cheese and bake without foil for 10 minutes or until golden.
  • Garnish with thyme: Sprinkle with remaining thyme.
  • Stand 5 minutes then remove to serve. Use a tablespoon or butter knife to help scope them out. (Note 3)
  • To Serve: Dinner - serve as a side. Finger food - serve warm as is. Breakfast - serve with eggs and bacon.

MINI TWICE BAKED POTATO APPETIZERS

MIni Twice Baked Potato Appetizers image

Categories     appetizers

Yield Yield: 16 appetizers

Number Of Ingredients 10

1 1/2 pounds baby Yukon Gold or red potatoes, about 16 potatoes
2 tablespoons olive oil
2 teaspoons chopped fresh thyme
Kosher salt
Freshly ground black pepper
2 1/2 ounces cooked and crumbled crispy bacon
3 tablespoons sliced chives, plus more for sprinkling
1 teaspoon dried chopped onions
1/3 cup (plus more if necessary) sour cream
1/3 cup freshly grated Parmesan cheese (not canned)

Steps:

  • Heat the oven to 425 degrees F. On a rimmed baking sheet, toss the potatoes in the olive oil, 1/2 of the thyme, salt, and pepper. Pierce the potatoes once with a fork.
  • Bake the potatoes for 20 to 25 minutes, until they feel tender when pierced with a toothpick. Remove them from the oven and allow them to cool enough to handle.
  • With a sharp knife, slice the tops off of the potatoes and scoop out the flesh into a bowl. Discard the tops.
  • With a potato masher or a large fork, mash the potatoes. Add the bacon, chives (reserving some for sprinkling later), salt and pepper to taste, the rest of the thyme, the onions, and the sour cream, and mix until combined.
  • With a small spoon, stuff the mixture in all of the potato shells, mounding the tops. Place the shells on a baking sheet (I used the same one I just used to bake the potatoes) and top each with the Parmesan cheese. At this point, you can refrigerate the potatoes to bake later if you prefer.
  • Heat the oven to 450 degrees F. Bake the potatoes for 10 to 15 minutes, until heated through. Garnish with the rest of the chives.

CLASSIC STUFFED TWICE BAKED POTATOES

Classic Stuffed Twice Baked Potatoes image

This is my perfect basic recipe for twice baked potatoes. These potatoes are great to make ahead of time. Just refrigerate or freeze until you need them, and reheat in the oven. I prefer sharp cheddar cheese, but you can use whatever you like, but it will change the taste of the recipe. Cook time includes baking the potatoes. Bake a few extra potatoes for extra filling if you like.

Provided by IHeartDogs

Categories     Potato

Time 1h27m

Yield 4-8 serving(s)

Number Of Ingredients 7

4 medium baking potatoes
2 tablespoons butter
1/2 teaspoon salt
1/3 cup sour cream
1/3 cup sharp cheddar cheese, shredded
1 tablespoon milk, maybe more
4 slices American cheese or 4 slices other good melting cheese

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Scrub and pierce potatoes.
  • Bake for one hour, or until fully cooked.
  • Remove potatoes from oven and let cool slightly.
  • Cut potatoes in half and scoop out potato, being careful not to tear the skins, and place in a large bowl.
  • Set skins aside.
  • Add butter and salt to potatoes; mash until smooth.
  • Add sour cream; mash until combined.
  • Add cheese; mash until combined.
  • Add one tablespoon of milk; mash.
  • If the mixture needs to be more creamy, add more milk, one tablespoon at a time, until desired consistency.
  • Add additional salt to taste, if needed.
  • Fill empty skins with potato mixture.
  • Top each potato with a half slice of cheese.
  • Return to oven and reheat until hot.
  • *Note*You may also refrigerate them to reheat at a later time, or you can freeze them.
  • If you freeze them, delay placing the cheese slices on top until you are ready to bake them. You might want to add more milk to the mix before filling the potatoes because after freezing they seem to reheat a little less creamy.

TWICE-BAKED GOUDA-STUFFED POTATOES

Twice-Baked Gouda-Stuffed Potatoes image

A twist on twice-baked potatoes using Gouda. Can make early in the day and refrigerate prepared potatoes until ready to bake.

Provided by gailanng

Categories     Potato

Time 1h39m

Yield 4 serving(s)

Number Of Ingredients 11

4 russet potatoes
vegetable oil or vegetable shortening
1 1/2 cups gouda cheese, shredded and divided
2 -3 tablespoons heavy cream
1/2 cup sour cream
2 tablespoons butter
2 tablespoons green onions, thinly sliced
1 tablespoon fresh parsley, minced
4 slices bacon, cooked crisp and crumbled
salt and pepper
minced fresh parsley (to garnish)

Steps:

  • Preheat oven to 400 degrees. Scrub and dry potatoes. Rub surface with a little vegetable oil or vegetable shortening. Prick in several places with fork.
  • Bake in preheated oven for approximately 1 hour or test for doneness by gently squeezing the middle of the potato, using a pot holder. If it gives in easily to your touch, it is done. Remove potatoes to a work surface.
  • Reduce oven temperature to 350 degrees. Cut potatoes in half lengthwise and allow to cool long enough to handle. Scoop out flesh with a spoon, being careful to leave shells intact (about 1/4-inch thick) and place in a bowl. Add 1 cup of the cheese, plus the sour cream, heavy cream, butter, green onion, parsley, salt and pepper to the potato flesh. Mash with potato masher or beat until just smooth with an electric mixer.
  • Fill potato shells with potato mixture; sprinkle with bacon and remaining cheese. Bake at 350 degrees for 20 minutes or until golden. Garnish with minced fresh parsley.

  • In a large bowl put the 2 lbs ground chicken thigh & set aside. Then heat up a medium frying pan with 1 tbsp olive oil. After it has heated about 2 minutes, add in onion & minced garlic. Let it sauce for about 3-4 minutes until it starts to get a little brown. Then add in the carrots, celery & mushrooms-- all chopped finely.
  • Add in 1/4 cup red wine and cook down the veggies until all liquid is absorbed & cooked through about 5-8 minutes. While it is cooking, season with 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp salt, 1/4 tsp paprika, 1/4 tsp pepper and 1/8 tsp cayenne. Season to taste. Once the veggies are soft, cooked & seasoned, even starting to brown, you will pour this mixture on top of the meat in the large bowl.
  • On top of the meat & veggie mixture now, add 1 tsp salt, 1 tsp Italian seasoning, Worcester sauce, sour cream, dijon mustard & crushed bread crumbs. With a spoon, mix all of this mixture until well combined.
  • Next take each slice of gouda & fold it in half. Each half will be in the center of your meatloaves. You will then keep folding up the half until you get a smaller square. Keep repeating until you have 12, set aside on a plate so they are ready when you are ready to stuff each one.

  • Mix gently with your hands until just combined. Don't overwork the meat or your meatloaf will be tough and chewy, just gently mix.
  • Divide the meat in the bowl into four sections. Grab half of one meat and make a patty. Add the cheese in the middle, leaving about an inch of meatloaf on all sides. Top with the remaining meatloaf mixture and press the edges together to seal completely. Any exposed holes and the cheese will leak out while cooking.
