MINIATURE GOLDEN FRUITCAKES



Miniature Golden Fruitcakes image

These tiny fruitcakes will bring joy to everyone on your list. We used dried apples, pears, apricots, and golden raisins, but you can also use dried cherries, cranberries, and regular raisins, or a mixture.

Number Of Ingredients 12

6 cups finely diced mixed dried fruit, such as dried apples, pears, apricots, and golden raisins
1 1/2 cups chopped walnuts (5 1/2 ounces)
1 3/4 cups brandy
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup packed light-brown sugar
3 large eggs, lightly beaten
1 1/2 cups all-purpose flour, (spooned and leveled)
1 1/2 teaspoons coarse salt
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/2 cup apricot jam, warmed, for topping

Steps:

  • In a large nonreactive bowl, combine dried fruit, walnuts, and 1 1/4 cups brandy. Cover with plastic wrap and let stand 8 hours (or up to 1 day), stirring occasionally.
  • In a large bowl, using an electric mixer, cream butter and sugar until light and fluffy. Beat in eggs in 2 additions, scraping down bowl in between. In a medium bowl, whisk together flour, salt, and spices. Reduce speed to low and beat in flour mixture in 2 additions, scraping down bowl in between. Fold fruit mixture into batter.
  • Preheat oven to 300 degrees, with racks in upper and lower thirds. Line two minimuffin pans with paper liners. Fill each liner with 1 rounded tablespoon batter. Firmly tap pans on counter to settle batter. Bake until a toothpick inserted in center of a cake comes out clean and edges are light golden brown, 25 to 30 minutes, rotating pans halfway through.
  • Brush cakes with 1/2 cup brandy; transfer cakes to a wire rack to cool completely. (To store, cover and refrigerate, up to 1 month.) Brush with apricot jam before serving or packing.

1/2 cup light molasses
1/4 cup water
1 package (15 ounces) raisins
1 pound candied fruit, chopped
1 teaspoon vanilla extract
1/2 cup butter, softened
2/3 cup sugar
3 large eggs, room temperature
1 cup plus 2 tablespoons all-purpose flour
1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 cup whole milk
1 cup chopped nuts

Steps:

  • In a small saucepan, combine molasses and water; add raisins. Bring to a boil. Reduce heat; simmer for 5 minutes. Remove from heat; stir in candied fruit and vanilla. Cool., Meanwhile, in a large bowl, cream butter and sugar until light and fluffy. Add 1 eggs at a time, beating well after each addition. Combine the flour, baking soda and spices; add to the creamed mixture alternately with milk, beating well after each addition. Add fruit mixture, mixing well. Fold in nuts., Fill paper-lined miniature muffin cups almost full. Bake at 325° for 22-24 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks to cool completely. Store in airtight containers.

LITTLE FRUITCAKE BITES

These little beauties are great to mix between your other Christmas cookies on a platter. They freeze well too. Put them in a tin with a tight fitting lid. Great for gifts. Put a dab of marzipan on top or decorate with a wee holly leaf etc.

Number Of Ingredients 16

1/4 cup golden raisin
1/4 cup dark raisin
1/2 cup dark rum or 1/2 cup brandy
1/4 cup butter, softened
1/2 cup brown sugar, packed
2 eggs, beaten
1 1/2 cups flour
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon allspice
3 tablespoons milk
1/2 cup green glazed cherries, cut in quarters
1/2 cup candied red cherries, cut in quarters
1/2 cup dates, chopped
2 cups chopped pecans

Steps:

  • Pour the rum over the raisins, cover with plastic wrap and marinate them for several hours or overnight Heat oven to 300 degrees F.
  • Cream butter and sugar, add eggs one at a time beat after each addition.
  • In another bowl mix your dry ingredients (Flour, Baking soda, and spices).
  • Stir the dry mixture into the butter& sugar.
  • Stir in raisins/rum and milk.
  • Stir in the fruit& nuts.
  • Line miniature muffin tins with fancy Christmas paper liners or plain ones.
  • Fill 3/4 full with the batter.
  • Bake 10-15 minutes or until the tops spring back when lightly touched.

These are in my published cookbook as 'Victorian Jewels'. They take fruitcake to a tasty new high and are very easy to make. Prep. time does not include the overnight marinating.

1 1/2 cups mixed glace fruit
1/2 cup raisins
1/2 cup currants
1/2 cup golden raisin
1/2 cup brandy
1/3 cup butter
3/4 cup brown sugar
1 egg
1 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1 cup chopped walnuts (optional)

Steps:

  • Mix fruit, raisins, currants and brandy.
  • Let sit overnight.
  • In the morning, cream together the brown sugar, butter and egg.
  • Mix flour, salt, baking soda and spices.
  • Add to egg mixture.
  • Mix well and stir in marinated fruit.
  • Add walnuts if desired. (I do half with, half without nuts.).
  • Fill paper lined muffin cups 1/2 full.
  • Bake at 300F for 30 minutes.
  • While still warm pour 1/4 teaspoons brandy over each.
  • I gnerally mark the plain cakes with a 1/2 glace cherry and the ones with the nuts with a 1/2 walnut.

3 eggs, well beaten
1 (14 ounce) can condensed milk
1 (28 ounce) jar mincemeat
1 cup chopped nuts
2 cups corn flake crumbs
1/2 cup all-purpose flour
1 teaspoon baking soda
36 candied cherries, halved

Steps:

  • Preheat oven to 300 degrees.
  • Place cupcake liners in muffin pans.
  • In a large bowl mix all ingredients together, except candied cherries.
  • Mix thoroughly.
  • Using a spoon fill each liner 2/3 full with batter.
  • Top with a cherry half.
  • Bake for 20-25 minutes.

I do not have a picture to add of these little cupcakes, sorry. These are like little jewels! Everyone knows stories about horrible fruitcakes but I can assure you that everyone will love these. Made with Grand Marnier, fruit and nuts, these jewels are purely fantastic. Try them.

1/2 lb red candies cherries, chopped
1/2 lb green candies cherries, chopped
1 lb candied pineapple, chopped
3 Tbsp grand marnier
4 c chopped pecans
1 lb chopped dates
3 eggs, beaten
3/4 c sugar
3/4 c self-rising flour

Steps:

  • 1. Combine first 3 ingredients in a large bowl. Pour liqueur over fruit, cover and marinate overnight.
  • 2. Add pecans and dates to fruit mixture, stir well. Combine eggs and sugar, stir in flour.
  • 3. Spoon 1 heaping tablespoon of batter into well-greased 1 3/4 inch muffin pans. Bake at 300 degrees for 30 minutes.

1 cup currants
1 cup golden raisins
1/2 cup dried cranberries
1/2 cup brandy
1 orange
1 lemon
1 cup butter, softened
1/4 cup molasses
1 cup packed brown sugar
4 eggs, lightly beaten
1 1/2 cups all-purpose flour
3 tablespoons brandy
4 containers Betty Crocker™ Rich & Creamy creamy white or vanilla frosting

Steps:

  • In large bowl place currants, golden raisins and dried cranberrries. Zest and juice orange; add to bowl. Zest and juice lemon zest; add to bowl. Pour in 1/2 cup brandy, mix well. Cover with plastic wrap and let stand overnight. Drain extra liquid off soaked fruit, if needed.
  • Heat oven to 325°F. Grease and flour a 13 x 9-inch cake pan. To make cake, beat butter, molasses and sugar in large bowl with electric mixer on medium speed, scraping bowl occassionally until blended. Gradually add the eggs and flour, alternating until both are incorporated. Stir in soaked fruit. Spread into pan.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean and surface is deep golden brown. Let cool in pan, about 2 hours. Brush with remaining 3 tablespoons brandy. Remove from pan.
  • To decorate, cut cake into 12 rows by 8 rows. Place 24 squares, leaving space between each, on wire rack.
  • In medium microwave-safe bowl, place frosting from one container. Microwave on High in 30 second intervals, stirring until smooth and pourable. Quickly spoon about 1 tablespoon spoon frosting over each of 24 mini cakes, covering tops and letting frosting drip over sides. Reheat frosting as needed, if necessary. Repeat with remaining frosting and mini cakes. Let stand about 30 minutes or until frosting is set. Decorate with edible fresh flowers and mint, if desired. Store loosely covered.

1/4 tsp cloves, ground
1/4 c whole milk
