Steps:
- Place 1 pie crust onto a lightly floured surface and roll out the dough with a rolling pin. Using a 2-1/4-inch round biscuit or cookie cutter cut the pie crust into 10 circles. Repeat with the second pie crust for a total of 20 pie crust circles.
- Fill about 1/2 of each circle with apple pie filling. Place a second pie crust circle on top, making a mini pie. Do not overfill. Press down the edges of the mini pies, crimping with a fork to seal. Brush tops with beaten egg and sprinkle with cinnamon sugar.
- Preheat the air fryer to 360 degrees F (175 degrees C).
- Lightly spray the air fryer basket with cooking spray. Place a batch of the mini pies in the air fryer basket, leaving space around each for air circulation.
- Bake until golden brown, 5 to 7 minutes. Remove from the basket and bake remaining pies. Serve warm or at room temperature.

- Transfer the dough to a lightly floured work surface. Roll the dough out to 1/8 inch thick and cut rounds with a large cookie cutter (4 inches in diameter).
- In each round, place 1 heaping tablespoon fruit. Moisten edges with cold water, fold in half, and press edge with a fork to seal. Repeat with the remaining pastry and filling.

Steps:
- To make the pastry, mix together the flour, granulated sugar and salt. Cut in 1 cup of the shortening until the mixture resembles coarse crumbs. Add 1 of the eggs and the buttermilk and stir until it just comes together. Add a little more buttermilk if needed. Form it into a ball and refrigerate for at least an hour.
- To make the pies, roll the pastry out into a large square. Trim the edges to make a rectangle. Cut into 8 to 10 long rectangles, using a butter knife.
- Spoon a tablespoon or so of filling into the top half of one of the rectangles.
- Use the remaining beaten eggs to seal the edges by folding the bottom half of the rectangle over the top. Then crimp the edges shut with a fork. Repeat with the other pies, filling half with apple pie filling and half with cherry pie filling.
- Heat shortening in a medium, deep saucepan over medium-high heat to 350 degrees F. Fry the pies until golden brown, 2 to 3 minutes per side. Remove and immediately drain on paper towels.
- Sprinkle with powdered sugar and serve.

Steps:
- Heat a large cast-iron skillet over medium heat. Add the brown sugar, butter and 1 tablespoon water. Cook, stirring, until the sugar is dissolved and the mixture is bubbling. Add the apples, vanilla, salt, cinnamon and lemon juice. Mix together the cornstarch and 1 tablespoon water in a small bowl to create a slurry. Add the cornstarch mixture to the skillet and stir to combine. Cook, stirring occasionally, until the apples are tender, about 5 minutes. Pour into a heatproof bowl and let cool completely. You can make this ahead of time and chill in the fridge a day or so in advance if needed.
- To make the pies, roll each biscuit into about a 5-inch circle that is about 1/8 inch thick. Spoon 2 generous tablespoons of the apple filling on each round of dough, just off center. Use your finger and run a little water around the edges to help them seal completely. Fold one half of each circle over onto the other half and seal in the apple filling, forcing out any air that you can. Press the edges together and crimp with a fork. Continue until they're all assembled.
- Heat the oil in a high-sided skillet over medium heat until it reaches 350 degrees F. Fry the pies 2 or 3 at a time for about 5 minutes, carefully turning them halfway through. Remove them to a paper towel-lined baking sheet to drain.
- When all the pies are fried, sift the confectioners' sugar over top. Serve with Cinnamon-Caramel Sauce or store-bought caramel sauce.
- Mix the brown sugar, half-and-half, butter and a pinch of salt in a saucepan over medium-low heat. Cook, whisking gently, until it thickens, 2 to 3 minutes. Whisk in the vanilla, cinnamon and a second pinch of salt and cook another minute to thicken further. Turn off the heat and allow to cool to room temperature before serving. Chill if not using immediately.

Steps:
- 1. Place filling ingredients in a large bowl and toss until well combined. Cut chilled dough into 2 equal pieces. Roll into equal rectangles about 1/4 inch thick. Onto one of the rectangles, place spoonfuls of filling (about 2 tablespoons each) in rows 1/2 inch apart. Place pies in the refrigerator and chill for 30 minutes.
- 2. To make the egg wash, whisk together egg and heavy cream. Using a pastry brush, carefully brush egg wash onto dough between the rows of filling. Gently lay the second dough rectangle over top and press around each mound of filling. Cut 3-by-1-inch rectangles with a pizza cutter and press the back of a fork along the edges to seal.
- 3. Preheat oil to 375°F. Carefully begin frying pies, a few at a time, for 7 to 8 minutes or until golden brown. Drain pies on paper towels and allow to cool.
- 4. Stir together the icing ingredients in a small bowl until smooth. Drizzle icing over pies and serve.

Steps:
- Place the flour, salt, sugar, and butter in a food processor and pulse 4-5 times until pea-sized butter flakes are still visible. Add one tablespoon of water at a time and pulse 1-2 times after every tablespoon. Stop adding water when the dough starts to clump together.
- Transfer the crust onto a piece of plastic wrap and shape it into a 1-inch (2.5cm) thick disc. Cover tightly with the plastic wrap and refrigerate for at least 2 hours or up to 2 days.
- Place the apples, sugar, flour, cinnamon, and lemon juice in a large mixing bowl and stir to combine. Let sit for 15 minutes so that the apples start to release some juice.
- In the meantime, on a lightly floured surface, cut the dough into 4 equal pieces. Then cut each piece into 2/3 and 1/3 pieces so that you have 4 larger pieces of pie crust for the bottom of the ramekins and 4 smaller ones for the top of the 4 mini apple pies.
- Roughly shape each piece into a round disc and roll out until the bottom pieces are big enough to cover the bottoms and sides of the ramekins with a little overhang and the top pieces also cover the tops of the baking forms with a slight overhang on the sides.
- Fit the bottom pieces into the forms, spoon the apple pie filling into the crust without any excess liquid, and place a few butter pieces on top. Then place the top pie crust pieces on top of the filling and seal and flute the edges. Cut a few slits in the top to allow the steam to escape while baking. Decorate the pie crust to your liking and brush with egg wash and sprinkle with sugar.
- Bake at 350°F (177°C) for 18 minutes. Then reduce the heat to 325°F (163°C) and bake for another 7 minutes. If you notice that it browns too quickly, you can cover the pies loosely with aluminum foil* for the last few minutes if necessary.
- Let cool at room temperature for 2 hours. Then place in the refrigerator and chill for at least 2 hours or up to 4 days. Serve with vanilla ice cream if desired and enjoy!

- Place dates in a medium bowl and cover with boiling water. Let soak for 20 minutes. Drain the dates, reserving 1/4 cup soaking liquid. Place half the dates in a food processor (reserve the rest for the filling). Add pecans, oat flour, butter, salt and the reserved soaking liquid; pulse until combined. Firmly press 2 generous tablespoons of the mixture into the bottoms and up the sides of each muffin cup. Bake until set, but not browned, 10 to 12 minutes. Let cool in the pan on a wire rack for 15 minutes.
- Meanwhile, place cider and the reserved dates in a blender or food processor; blend until mostly smooth. Transfer to a medium saucepan; add apples and cinnamon. Bring to a simmer over medium-high heat; reduce heat to maintain a simmer and cook, stirring often, until the apples are mostly tender, 12 to 15 minutes. Remove from heat; stir in vanilla and cornstarch.
- Using about 2 tablespoons filling for each tart, divide the filling among the crusts. Bake until the crust is browned on the edges and the filling is hot, 12 to 15 minutes. Cool the tarts in the pan on a wire rack for at least 20 minutes. Run a sharp knife around the edges and remove the tarts from the pan.

- To make these delicious fried apple pies, you’ll start first by making the homemade apple pie filling. First, peel, core, and dice 2 large apples into small cubes. I used 1 Granny Smith and 1 Red Delicious for the perfect sweet/sour combo.
- Next, combine the apples, brown sugar, cinnamon, and vanilla in a saucepan and cook over medium heat until juices start to form for about 3 minutes. Next, combine the apple cider (or apple juice) and cornstarch in a small bowl. Pour into the saucepan and turn the heat up to high and cook for an additional 3 minute, stirring constantly, or until the mixture has thickened up. Remove from heat and set aside.
- Next, it’s time to make the homemade pie dough. Start by sifting the flour in a large mixing bowl. Next, cut the cold butter into cubes and using a pastry cutter begin to work the flour until all the butter is tiny lumps. In a separate bowl, combine the egg yolks and salt together. A little at a time, begin to pour in the hot milk to the egg mixture and stir constantly.
- Lastly, pour the milk and egg mixture into the flour mixture and stir until your dough has formed. Next, place the dough onto parchment paper and knead for about 1 minute or until the dough is smooth-looking.

- To make the filling, combine everything together in a pot and place on medium-low heat on the stove. I wanted to dice my apples in nice little squares to allow for smaller pies. You also want to use a tart, sturdy apple in this.
- Start with a 1/2 cup of water as you may like your apples crisper for the end result, you can always add a little more for simmering later on. You are going to cook this mixture until the apples are the right texture for your personal taste. This took around 20 minutes for mine.
