- Preheat oven to 425° F.
- Bake all flatbreads for about 10-12 minutes or until cheese is fully melted and crust is golden and reaches desired level of crispiness. Flatbreads tend to continue to crisp out of the oven if left to cool on the hot baking sheet. These can also be grilled in about 10 minutes on medium-high heat with the cover down. Just be sure to oil grill grates with oil.
- Top flatbread with a light layer (1/4 cup) of pizza sauce and top with mozzarella pearls. Garnish with chopped basil just before serving.
- Slice cooked sweet Italian chicken sausage. Top flatbread with a light layer (1/4 cup) of pizza sauce and spinkle with either shredded mozzarella or quatro formaggio cheese as needed. Top with pepper, onion, and sweet italian sausage. Note: sausage must be fully cooked.
- Spread 2-3 tablespoons of fig jam on the flatbread. Top with mozzarella pearls and chunks of prosciutto torn apart with hands. While pizza is cooking, bring a a small saucepan of balsamic vinegar to a simmer. Simmer until reduced by half and thickened, about 5 minutes. Top with fresh arugula drizzle balsamic reduction over pizza just before serving.
- Top flatbread with a light layer (1/4 cup) of pizza sauce and top with quatro formaggio cheese. Top with whole or halved pepperoni slices.
- Top flatbread with 3-4 tablespoons of basil pesto. Top with fresh mozzarella pearls and optional sliced cherry tomatoes.

Steps:
- Preheat oven to 450°F.
- In a frying pan, cook bacon until crispy; drain on paper towels.
- Let bacon cool, then crumble and set aside.
- Brush each flatbread with olive oil.
- Spread 1/4 cup of spaghetti sauce in the bottom of each flatbread.
- Layer over with sliced mushrooms.
- Sprinkle diced red and green peppers over.
- Layer sliced tomatoes and sliced onions over.
- Top with sliced pepperoni and crumbled bacon.
- Sprinkle generously with shredded Mozzarella cheese.
- Then sprinkle with grated Parmesan cheese.
- Place flat bread pizzas directly on the lower rack in the oven.
- Bake in preheated 450 F oven for 10 - 12 minutes or until flat bread is crispy and the cheese has melted.
- Remove from oven and let rest for 5 minutes before serving.

- In a food processor, mix together the self-raising flour, Alpro Simply Plain Big Pot and salt, until it forms a ball. Remove and knead for 1-2 mins to bring it all together. Place in a bowl and set aside for 15 mins – it will only rise a tiny bit.
- While the dough is rising, make the tomato sauce. Heat the oil in a small saucepan, then add the tomatoes, garlic and basil, and bring to boil. Reduce to a simmer for 20 mins or until reduced by half. Season with a pinch of salt to taste. Leave to cool.
- If you are having the truffled mushroom topping, you can make that now, too. In a large frying pan, heat the oil, then add the mushrooms and stir fry for a few mins until they start releasing their juices. Add a few drops of truffle oil and a pinch of salt, and keep stirring until most of the water has evaporated. Take off the heat, season with black pepper, stir through the parsley and leave to cool.
- Alternatively, if you are having the butternut squash topping, heat the oven to 220C/200C fan/gas 7. Roast the squash in a tray with a little oil for 15 mins or until cooked through. Meanwhile, lightly fry a few fresh sage leaves.

- Take out however many flatbreads you need and cut them in half if necessary. Place them on the cookie sheet, and put it in the oven. You're going to bake these for 1 minute.
