Mini Crab and Cream Cheese Flautas Recipe - (4.3/5) image

2 cups vegetable oil
1 pkg. (8 oz) crab meat, drained
1 can (4 oz) fire-roasted diced green chiles, drained
4 oz. cream cheese, softened
6 8" flour soft tortillas
1 cup sour cream
1/2 cup salsa verde

Steps:

  • Heat oil in medium saucepan over medium-high heat to 375 degrees. Line platter with paper towels. Combine crab meat, chiles and cream cheese in medium bowl. Spread about 1/4 cup mixture down middle of tortilla and firmly roll like a cigar. Keep tortilla roll closed with 4 toothpicks. Cut between toothpicks into four equal pieces; set aside. Repeat with remaining filling and tortillas. Place pieces carefully into hot oil. Cook 1 minute or until golden brown, turning once. Remove with slotted spoon. Drain on paper towels. Combine sour cream and salsa verde in small bowl; mix well. Serve with flautuas as dip. TIP: Serve some guacomole dip too, and encourage double dipping!

1/2 cup reduced-fat spreadable garden vegetable cream cheese
1/2 teaspoon seafood seasoning
3/4 cup lump crabmeat, drained
2 packages (1.9 ounces each) frozen miniature phyllo tart shells
5 tablespoons chili sauce

Steps:

  • In a small bowl, mix cream cheese and seafood seasoning; gently stir in crab. Spoon 2 teaspoons crab mixture into each tart shell; top with chili sauce.

1 cup water
1/2 cup butter, cubed
1/4 teaspoon salt
1 cup all-purpose flour
4 large eggs
FILLING:
4 hard-boiled large eggs, finely chopped
1 can (6 ounces) lump crabmeat, drained
4 ounces cream cheese, softened
1/4 cup mayonnaise
2 tablespoons finely chopped onion
2 tablespoons prepared horseradish, drained
Minced fresh parsley, optional

Steps:

  • Preheat oven to 400°. In a large saucepan, bring the water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat; let stand 5 minutes. Add 1 egg at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake 18-22 minutes or until golden brown. Remove to a wire rack. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs. , In a large bowl, combine filling ingredients. Just before serving, spoon 1 teaspoonful filling into each puff; sprinkle with parsley if desired. Replace tops.

  • CRAB MIXTURE: Combine the crab meat, cream cheese, mayonnaise, egg, sour cream garlic powder, smoked paprika, old bay seasoning, lemon juice + zest, chopped chives, and ¼ teaspoon kosher salt, and ¼ teaspoon pepper. Spoon roughly 1 tablespoon of the crab mixture into each mini muffin cup.
  • BAKE: Until the edges begin to turn golden, 14-18 minutes. Allow the crab cakes to cool in the pan for several minutes before attempting to remove them. You can run an offset spatula or a pairing knife along the edges to help pop out the bites. Serve crab bites warm or allow them to cool to room temperature before serving. I like to top them with more chopped chives before serving and serve with lemon wedges and prepared sauce.
