Mini Sour Cream Donut Muffins image

This is the best recipe for mini old-fashioned sour cream donut muffins with vanilla glaze. These muffins are so soft, perfectly spiced, and delicious. They're easy to make, ready in 25 minutes, and perfect for breakfast or dessert!

3/4 cup white sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup full-fat sour cream
1/4 cup vegetable oil
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup powdered sugar
1 tablespoon cream or milk
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Spray mini muffin pan with nonstick cooking spray or lightly grease with oil and set aside.
  • In a large bowl mix together the sugar, baking soda, salt, cinnamon, and nutmeg.
  • Add the sour cream and mix well.
  • Beat in the oil, egg, and vanilla extract.
  • Add the flour and gently mix until fully incorporated. Do not overmix.
  • Scoop the batter into the mini muffin pan filling the cups about three-quarters of the way.
  • Bake for 10 - 11 minutes until toothpick inserted comes out clean.
  • Cool in pan 5 minutes then remove to cool until just warm.
  • In a small bowl mix together the powdered sugar, cream/milk, and vanilla extract until completely smooth.
  • Dip the tops of the muffins into the glaze or spoon it over the tops instead. Enjoy!

1/4 cup unsalted butter (melted)
1/4 tsp ground nutmeg or cloves
1/2 tsp pure vanilla extract
1/2 cup milk
1/2 tsp baking powder
1 cup all-purpose flour
1/4 cup unsalted butter (melted)
1/2 cup granulated sugar (for rolling)
1 tsp ground cinnamon

Steps:

  • Preheat your oven to 375 degrees F. Grease mini muffin tin (cavities and the top). Set aside.
  • In a medium bowl, whisk together flour and baking powder. Set aside.
  • In a large mixing bowl, whisk together melted butter and sugar. Add spices and vanilla, whisk well. Add milk and whisk again. Add dry ingredients and whisk until smooth.
  • Fill the muffin pan. Bake in preheated oven for 15 to 17 minutes, or until toothpick inserted in the center of each muffin comes out clean. Cool in pan for 2 minutes, transfer onto a wire rack.
  • Prepare the coating: melt butter in a small bowl; in another small bowl, mix sugar and cinnamon. When muffins are completely cool, dunk each one in melted butter and then roll in cinnamon sugar. Return onto wire rack and let cool for few minutes.

3 Tablespoons vegetable oil
1 cup sugar, divided
1 large egg
1/2 cup sour cream
1 teaspoon vanilla extract
1 1/2 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 350°F. Grease a nonstick mini muffin pan with cooking spray.
  • In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set the mixture aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter, vegetable oil and 1/2 cup sugar until well combined, about 2 minutes. Add the egg and beat until combined.
  • Add the flour mixture, sour cream and vanilla extract and beat just until combined.
  • Using a small ice cream scoop (or two spoons), scoop out heaping 1-tablespoon portions of the batter into the prepared muffin pan.

1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg

1/3 cup canola oil
1 large egg, room temperature, lightly beaten
3/4 cup 2% milk
10 teaspoons seedless strawberry or other jam
TOPPING:
1/4 cup butter, melted
1/3 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, baking powder, salt, nutmeg and cinnamon.
