MINI CHRISTMAS CONFETTI SUGAR COOKIES
Round out your holiday treat tray with homemade bite-size cookies covered in sprinkles.

Steps:
- In medium bowl, stir cookie mix, melted butter, egg and flour until soft dough forms.
- Divide dough into eight even sections. Shape each into a roll, 8 inches long and 1/2 inch in diameter. Roll in candy sprinkles. Wrap and refrigerate at least 2 hours until firm.
- Heat oven to 350°F. Cut each roll into 24 (1/4-inch) slices. Place 1/2 inch apart on ungreased cookie sheets.
- Bake 5 to 7 minutes or until light brown. Cool 1 minute; remove from cookie sheets to cooling rack.

CHRISTMAS CUTOUT SUGAR COOKIES
Steps:
- Preheat oven to 350 degrees F.
- In a bowl, stir together flour and baking powder. In another bowl, beat butter with sugar until fluffy and light. Beat in eggs and vanilla. Stir in flour mixture, a third at a time to make a stiff dough. Divide dough into 4 pieces. Roll out a portion of cookie dough to 1/4 inch thick. Cut out shapes using cookie cutters. Place on lightly greased or nonstick cookie sheets. Bake until lightly golden, about 10 minute, rotating baking sheet halfway through cooking time. Cool completely on pans about 5 minutes, transfer to cooling racks and cool completely before decorating.
- In a small bowl, mix sugar and water to form a thick, smooth icing. Stir in food coloring to reach desired shade. Drop icing onto cookies using a small teaspoon and smooth with the back of the spoon. Make additional bowls for additional colors.
- Additional multi-colored sprinkles can be added on top of icing before it dries for more decorative cookies, if desired.
WHITE CHOCOLATE CONFETTI CHRISTMAS COOKIES

- Position oven racks in the top and bottom thirds of the oven and preheat to 375 degrees F. Line 2 baking sheets with parchment.
- Whisk together the flour, baking soda, salt and baking powder in a medium bowl. In a stand mixer or large bowl using a hand mixer, cream the butter for 1 minute. Add the sugar and cream for an additional 3 minutes. Beat in the vanilla and egg. Gradually beat in the dry ingredients until uniform, then add enough of the half-and-half (about 2 tablespoons) to moisten the dough and make it soft (but not wet). Fold in the sprinkles and 2/3 cup of the white chocolate chips.
- Roll rounded teaspoons of dough into 24 balls and put on the prepared baking sheets. Chill the remaining dough in the refrigerator. Dip your fingertips into the remaining half-and-half and use them to slightly flatten the top of each cookie.
- Bake until the cookies are set on top and light golden brown around the edges, about 15 minutes. Transfer the cookies to a wire rack to cool completely. Allow the baking sheets to cool, then line them with new parchment and repeat the forming and baking process with the remaining dough.
- Once the cookies are all baked and cooled, put the remaining 1 cup white chocolate chips in a small heatsafe bowl and microwave on high, stirring halfway through, until just melted, about 1 minute. Use a spoon to drizzle the chocolate over the cookies. Allow the chocolate to set before serving, about 30 minutes. Store in an airtight container at room temperature for up to 1 week.
CONFETTI CHRISTMAS CUTOUT COOKIES

- Heat oven to 375°F. In medium bowl, stir cookie mix, butter, flour and egg until dough forms. Sprinkle candy sprinkles over dough; gently kneed into dough.
- Roll dough on floured surface until about 1/4 inch thick. Cut with cookie cutters. Place 1 inch apart on ungreased cookie sheet.
- Bake 7 to 9 minutes or light golden brown around edges. Cool 1 minute before removing from cookie sheet; cool completely, about 20 minutes.

- In a large bowl, beat butter, eggs and vanilla until combined. Beat in cake mix. Refrigerate, covered, 2 hours or until firm enough to roll. , Preheat oven to 350°. On a well-floured surface, roll dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake 8-10 minutes or until set. Remove from pans to wire racks to cool completely. Decorate as desired. Freeze option: Transfer dough to a resealable plastic freezer bag; freeze. - In a large bowl (stand mixer w/ paddle attachment or use a hand-held mixer,) cream the butter for 1 minute on medium speed. Once smooth, add the sugar on medium speed until fluffy and light in color. Mix in egg and vanilla. Scrape down the sides as needed. Set aside.
- In a medium-size bowl, whisk together the flour, salt, baking powder, baking soda, and cream of tartar. Slowly add the dry ingredients to the wet ingredients. Once combined, gently fold in the 1/3 cup sprinkles.
- Scoop about 2 Tablespoons of dough each and roll into balls. (Make sure the balls are taller rather than wider.) Add a few more sprinkles on top of each ball of dough.
- Chill the balls of dough on the cookie sheet for at least 2 hours and up to 48 hours in the refrigerator. (This helps it not to spread in the oven.)

- In the bowl of a stand mixer, with the paddle attachment attached, beat the butter and sugar together on medium speed until it becomes pale in color and is the consistency of paste, about 2 minutes. You don’t want the butter to be fluffy or the cookies will spread during baking. Add Emulsion or vanilla extract and mix to combine. Add the egg and milk and mix until incorporated, about 1 minute. With the mixer speed on the lowest speed, gradually add the flour mixture, beating until just combined. Add in the Christmas sprinkles and mix in by hand until combined. Remove the dough from the freezer and using a 3-inch round pastry cutter, cut out dough rounds. Place the rounds on the prepared baking sheets about 1 ½ inches apart from each other. Freeze for 15 minutes.
