MINI CANNOLI CREAM PASTRY CUPS
Holy cannoli, these mini dessert cups are cute (if we do say so ourselves). Whip them up fast with a quick filling and Pillsbury pie crust!

Steps:
- In large bowl, beat all filling ingredients with electric mixer on medium speed until creamy. Place filling in 1-gallon resealable food-storage plastic bag; refrigerate while making cups.
- Heat oven to 425°F. On lightly floured work surface, unroll pie crusts. Sprinkle each crust with turbinado sugar and cinnamon. Lightly roll rolling pin over sugar and cinnamon to press into pastry. With 2 1/2- to 3-inch round cutter, cut out pastry rounds. Lightly press each pastry round into ungreased mini muffin cup.
- Bake about 10 minutes or until pastry cups are golden brown. Cool completely in pans, about 15 minutes. Remove from muffin cups to cooling racks.
- Just before serving, remove filling from refrigerator. Cut 1 bottom corner off bag; pipe scant tablespoon filling into cooled pastry cups. Sprinkle with chocolate chips and powdered sugar. Serve immediately. Store any remaining pastry cups at room temperature and filling in refrigerator.

- For cups: preheat oven 425 degrees. unroll pie crust on lightly floured surface and sprinkle the tops with the natural sugar and cinnamon. lightly roll over it with rolling pin so that the sugar and cinnamon are pressed into the dough.
- with a 2.5 or 3" round biscuit cookie cutter, cut circles and press them inside an ungreased mini muffin pan to create the pastry cup.
- bake 10 minutes or until cups are golden.remove from oven and allow to cool. once cool, they can be filled.
- for filling: in a large bowl with an electric mixer combine all ingredients except the choc chips and mix well till creamy. place filling in a 1 gal plastic storage bag and chill while you make the cups.
- remove filling from fridge, cut the bottom of corner of bag and pipe a little less then a tablespoon into the cannoli cups. sprinkle with mini choc chips and dust with powdered sugar.
- tips: for a thicker filling, you can strain the ricotta in cheese cloth place in a bowl and covered overnite.
- filling can be made a day or two ahead of time and kept in fridge.
- a variation in the cannolie cream that works well is 1/4 teaspoon almond or orange extract.
- other toppings that go well are chopped toasted almonds, choc sprinkles, candied orange pieces, chopped candied red cherries as well as a sprinkle of cinnamon.
- (i didnt have natural sugar when making these so i just used combo reg sugar and cinnamon).

- 1. In a large bowl with an electric mixer combine all ingredients for the filling except the chocolate chips and mix well until creamy. Place the filling in a 1-gallon plastic storage bag and chill while you make the cups. Filling may seem thin but will firm up slightly when it's refrigerated. 2. Heat oven to 425°F. Unroll the pie crusts onto a lightly floured surface and sprinkle the top of each crust with the natural sugar and the cinnamon. Lightly roll over it with a rolling pin so that sugar and cinnamon are pressed into the dough. 3. With a 2 1/2-3 inch round biscuit cutter or cookie cutter, cut out circles and lightly press them inside an ungreased mini muffin or mini cupcake pan to create a pastry cup. 4. Bake for about 10 minutes or until cups are golden. Remove from oven and allow cups to cool. Once cups are cool they can be removed from tin and filled. Remove filling from refrigerator, cut one of the bottom corners off the bag and pipe a little less than a tablespoon of filling into the cooled cannoli cups. 5. Sprinkle with mini chocolate chips, dust with powdered sugar and serve. Tips: Cups should be filled shortly before they are eaten so the don't get soggy. If you wish to make them ahead of time, you can make the cups and the cream and keep them separate. Once you are ready to eat, you can fill, decorate and serve.

- Preheat the oven to 425 degrees F (220 degrees C).
- Roll pie dough out to desired thickness. Mix sugar and cinnamon together in a small bowl. Sprinkle mixture over one side and firmly press into the dough. Cannolis are one of my favorite Italian dessert recipes! My homemade cannolis start with a scratch made shell filled with the best creamy filling!

- Using a stand mixer with the whisk attachment, whip heavy cream using whisk attachment until peaks form. This takes just a few minutes. Transfer to a separate bowl. Add mascarpone cheese to stand mixer bowl and blend until light and fluffy, just for a minute or two. Transfer mascarpone to the bowl with the whipped cream.
- Add ricotta to the stand mixer bowl and blend ricotta cheese until smooth. Mix in powdered sugar, vanilla, and zest. Fold in previously whipped heavy cream and mascarpone cheese along with pistachio flavor (if using).
- Cover and chill several hours or chill overnight.
- Whisk together flour, salt, sugar, and cinnamon. Cut in the butter. Make a well in the center and add the egg and and the egg yolk, wine, vinegar, and water. Mix with a fork to combine or use your hands to mix, if needed. Knead by hand or with a dough hook in your stand mixer for about 10 minutes. Form into a ball, wrap dough with plastic wrap, and refrigerate for about an hour.
- Roll out a rounded tablespoon of dough, press flat into a disk shape, and coat both sides with flour. You can try to roll it by hand, but I find it ideal to run through my pasta roller. The goal is to create flat ovals that are about 4-6 inches long, and the thinner and more uniform, the better they will cook.
- Using an Atlas pasta roller, I processed the dough starting at setting 1.
- Then I continued to increase the setting through to level 6.
- Lightly oil the outside of a tube (oil spray works great).
- Lay the tube on one end of the disc and roll the tube.
- When you reach the end dab egg white on the flap and finish rolling.
- Lightly press the the end with the egg white to seal.
- Heat oil to 350 degrees F. Fry 2-3 at a time (while still wrapped around cannoli form) until golden, about a minute. Remove with tongs and place on paper towels to drain. As soon as they are cool enough to handle, gently slip the form out of the shell. Cool completely before filling. Note: this process is SOOOO much easier if you have one person rolling the cannoli shells and the other person is cooking them.
- Remove ricotta filling from refrigerator. If it appears too liquid to stuff into the shells, whip with a whisk attachment on a stand mixer for about a minute on high speed. That should thicken it up. If you want chocolate chips mixed in with the filling, add about half to the filling and stir.
- Add ricotta filling to piping bag with a wide tube fitting and pipe into each shell. Insert at each end, start filling at the middle of the cannoli and work your way out. To serve, dust with powdered sugar and garnish ends with mini chocolate chips and crushed pistachios.

MINI CANNOLI CHEESECAKES

- Crust: Crush the waffle cones in the food processor. Stir in the melted butter and vanilla. Mix very well. Press the crushed waffle cones into the muffin pan cups, evenly, all over the bottom and a little bit up the side. Set aside.
- Cheesecake:
- Start beating the cream cheese with a mixer until smooth, about 2 minutes.
- Add the vanilla extract and sour cream into the cream cheese mixture. Add the eggs, one at the time, beating after each addition.
- Lower the speed to low and add orange zest, sugar, corn starch and salt. Make sure that all ingredients are well combined.
- Pour the cheesecake batter into the muffin pan with crust, about 3/4 full. (You can use aluminum foil cupcake liners, that are lightly greased inside, to make the cheesecakes. That might make it easier to take out of the pan.)
- Bake at 325, for about 18-20 minutes. Touch the centers with your finger to make sure it's done (It should still jiggle but not be gooey.)
- Cannoli filling:
- Beat the heavy cream and 2 tbs of sugar in a bowl with an electric mixer, until soft peaks appear.
- In a separate bowl, beat ricotta, sugar, vanilla (Amaretto if using) and orange zest for a couple of minutes.
- Slowly, fold the ricotta mixture into the whipped heavy cream until all incorporated.
- Make sure the cheesecakes are completely cooled before covering with cannoli filling.
- Add the chocolate chips to a shallow bowl and spread it out. Cover the sides of the mini cheesecakes with the filling and carefully roll it in the mini chips. Press them in lightly. Using a spatula, spread more filling on the top of the cheesecake.
- Refrigerate until ready to serve.
- Note: to take out the cheesecakes from the pan: Let the cheesecakes cool in the pan. Once they are at room temperature, run a lightly greased butter knife between the cheesecake and the cup to separate it from the pan. Then gently take them out using a small rubber spatula. Or, you can bake the cheesecakes in the aluminum foil cupcake cups just make sure to grease inside the aluminum cups so it will be easier to peel off.
